RAINY DAY FLAPJACKS
Rainy day flapjacks – recipe from my darling mum ( recipe in comments ). We only make flapjacks on rainy days
I like to serve them with maple syrup, or fresh strawberries, sometimes a warm fruit compote, apricot jam, soft butter or my absolute favourite is butterscotch. My husband likes simple maple syrup which is what we used today.
500 ml cake flour
2 eggs
5 tablespoons sugar
1 ½ tablespoons butter, melted
4 teaspoons baking powder
1/3 teaspoon salt
250 ml milk
Beat the eggs and gradually add the sugar. Add half of the milk and the melted butter to the egg mixture. Stir well. Sift the flour, baking powder and salt and add to the egg mixture. Gradually stir in the remaining milk to form a smooth mixture.
If all ingredients are well mixed don’t stir anymore. Drop spoonfuls of batter into a greased frying pan. Turn once the top is full of air bubbles (bottom should be golden brown) and bake on the other side. Serve warm.
