

MINI TUNA FRITTATAS
½ green pepper, chopped
3 eggs, beaten
60 ml milk
170 g tin shredded Tuna, drained
160 ml Feta cheese, crumbled
125 ml corn kernels (optional)
Preheat oven to 200 ºC.
Grease a standard muffin tray.
Combine all the ingredients. Season.
Divide the mixture evenly.
Bake for about 20 minutes until golden and set.
Variation:
Replace the Feta cheese with Mozzarella to reduce salt.
I added some red pepper for colour and used mini quiche tartlet pans instead of muffin pan.
