HOLLANDSE EIERKOEKEN
Makes 4
INGREDIENTS
100 gr cake flour
100 gr white sugar
2 eggs
1 teaspoon baking powder
Lemon zest of quarter lemon
Baking sheet covered with baking paper
Preheat oven on 180c.
METHOD
Mix eggs and sugar for couple of minutes. Stop mixing and add lemon zest, baking powder and flour. Very gently mix the ingredients together (folding) till everything is mixed.
Scoop the mixture out on the baking sheet making 4 heaps. Leave enough space between the heaps.
Bake your eierkoeken for 20 minutes or until golden brown.
They should be light and fluffy on the inside and the sides will be yummy crispy after cooling.
