Here’s how to make a great home-made salad dressing:
Ingredients:
½ glass jam jar of cold extraction extra virgin olive oil
2 tablespoons balsamic vinegar
½ cup chopped basil, marjoram, thyme, and parseley
3-5 cloves fresh chopped garlic
5 calamata olives – chopped
5 slices of sundried tomatoes – chopped
1 teaspoon dry mustard powder
1 teaspoon Himalayan salt
Method:
Mix all together in jam jar and shake well. Do not store in the fridge.
This home-made salad dressing is simply wonderful on baked potatoes, chopped mixed
salads, or mixed into a brown basmati rice salad. Don’t be shy to slather it liberally over
your vegetarian pasta dishes. To make a delicious creamy dressing for a potato salad or
coleslaw, mash it up with tahini or avocado.
Tips
Organic products from farmers’ markets, or home-made products are always best if
you can find them and afford them.
Balsamic vinegar: look for brands that do not contain caramel colouring or
preservatives.
If you can’t find fresh herbs, dried will do.
Your home-made salad dressing might settle since the recipe contains no stabilisers.
If you want plain flavoured oil – take from the top, but for a real treat, dig down to the
delicious goodies resting on the bottom!
The salad dressing can be topped up with olive oil and vinegar and with any other of
the basic ingredients to taste
