CAROL’S BEAN SOUP
3 tbls olive oil
1 tbls butter
4 pieces Beef shin
2 tomatoes peeled & chopped
1 large onion chopped
1 heaped tablespoon garlic
2 potatoes peeled and chopped
2/3 carrots sliced
2/3 turnips peeled & chopped
3 stalks celery leaves and all
2 thick leeks sliced & rinsed
1 kg speckled sugar beans soaked for min 6 hours( you can boil, microwave etc, but I’ve found the long way is best) the taste is just different…
45ml white grape vinager
Salt and pepper to taste
5ml cayenne pepper
1 tbls sugar
2 beef stock cubes
2 chicken stock cubes
2 lt boiling water for the stock cubes
Method
In a heavy based pot, preferably cast iron flat bottom 5L, heat pot, add olive oil then butter till bubbling.
Add beef shin and brown. Add salt and pepper & sugar
Add tomatoe, onion, garlic, if pot gets to hot move off heat!
Add all veggies, soaked and rinsed beans
Top up pot with stock mixture, add vinegar. And sprinkle cayenne pepper on top, Stir well. Bring to boil. Leave and let simmer for 6 hours minimum, keep stirring, you will be rewarded for your patience! Enjoy!!
