BACON AND CELERY CREAM SOUP

FOOD LOVERS RECIPES
Hierdie vir ons vandag gemaak. Ek het die resep uit ‘n baie ou tydskrif gekry 1993 Woman’s Value ‘Food Fair’.
250 g rindless back bacon
15 ml butter or margarine
500 ml chopped table celery with leaves
100 ml chopped onion or spring onion
5 ml chicken stock powder
750 ml boiling water
30 ml cornflour
500 ml milk
30 ml chopped parsley
salt and freshly ground black pepper
grated nutmeg
Cut up the bacon finely and fry in butter or margarine until just cooked.
Add the celery and cook gently for 8 – 10 minutes.
Add the onion and cook 2 minutes more.
Add the stock powder and water and simmer gently for 15 minutes or until the celery is tender to taste.
Mix the cornflour with a little of the milk until smooth and sir into the soup with the rest of the milk.
Bring to boil and simmer a few minutes.
Stir in the parsley and season to taste with salt, pepper and nutmeg.
Serve piping hot with buttered toast or wholewheat bread. Serves 6-8.
