COCONUT WAFERS
1¾ cup cake flour
125 g margarine or butter (soft)
1 cup sugar
1 teaspoon vanilla essence
1 egg
¾ cup coconut
½ teaspoon salt
1 ½ teaspoons baking powder
Cream margarine and sugar until light and fluffy.
Beat in egg and vanilla.
Stir in the coconut.
Sieve all the dry ingredients.
Mix well and shape into long rolls on waxed paper. Chill
Cut into slices and bake at 180 ºC for 10 – 12 minutes.
Variation:
Omit the coconut and add choc chips/ cherries
Note:
I normally double the recipe.
I freeze these in the rolls and bake as and when needed. I also chop cherries in to make them look pretty.
