

MASCARPONE BUTTERCREAM FOR TIRAMISU CAKE
Good morning all from the UK! It’s been a very long time since I posted on this group but thought I’d share this Tiramisu cake I made!
Any sponge cakes recipe can be used, I baked 2 pans (17-18cm pans) Cool completely then sliced each cake in half to make 4.
Boil:
1/2 cup sugar
1/2 cup water
2 tablespoons espresso powder
Let it cool, then add 1/4 cup coffee liqueur, this makes a sugar syrup. Brush the syrup on each cooled layer.
To make the mascarpone buttercream you need:
1 1/2 cups butter, room temperature
2 cups mascarpone, room temperature
4 cups icing sugar
2 teaspoons vanilla extract (essence).
Beat the butter, vanilla and mascarpone together (2 min) add the icing sugar one cup at a time, beating 3 min.
Layer each slice, then coat the top and sides, (I use a side scraper) but you can create a rustic look and decorate to your liking.
This cake was a total hit with all my friends and family, delicious!
