KRISTIE’S CHICKEN SOUP
Ingredients:
2 Chicken fillets
5 Small potatoes peeled and chopped
4 Carrots peeled and grated
1 Cup peas
1 Cup corn
1 Cup beans
1 Cup soup mix
1 Litre Chicken stock or Vegetable stock
All access stock from the chicken that was cooked in the oven
Salt and pepper to taste
Method:
1. Put oven on 180Degrees.
2. In a pan put the two chicken fillets in and some oil and salt and pepper.
3. Cover with foil and let it cook in the oven for 30min.
4. After 30min remove the chicken and cut it up into small pieces.
5. In a pressure cooker add the chicken, vegetables and soup mix and the stock, also add the access stock left from the chicken.
6. Put the pressure cooker on 30min and on pressure and let it cook.
7. After it is done cooking let the pressure go till all the steam is out.
8. Serve immediately!
