

HALEEM
Overnight soak 1 n half cups pearl barley and half cup wholewheat
Next morning boil in a pressure cooker with 1 slices onion
1 tsp green chilli paste and 2 tsp garlic n ginger paste and salt boil till cooked
Leave to cool then grind into a paste
In a seperate pot add 2 curry spoons oil and 1 tsp whole jeera
Then asd 750 grams meat
2 tblspoons garlic n ginger paste
1 tsp green chilli paste
1 tsp dhania/jeera mix
1 tsp garam.masala pwder
1 tsp turmeric
Fry the masala with the meat well
Add 2 star anise
1 whole black elachi
3 pieces of whole tuj
Fry well
Then add the barley /whole wheat mix and stir well continuously for bout 1 hour to cook the barley mixture and release the flavours of the masala
Add choppd mint and fresh dhania (mint ahould b more)
Stir well
The add water to ur pot according to the consistency u want ur haleem
Cook till done takes a few hours but keep stirring as iften as possible
To make sure barley mixture dnt stick to bottom of pot and to release the flavour of the masala..
Once fully cooked, heat 4 pieces of charcoal on the stove plate till red then add to ur pot ontop of onion akins or u can make little foil bowls and add the burning charcoal ontop drizzle ghee ontop of the charcoal it will start smoking close the lid tightly – .let haleem smoke a bit ..lovely taste and aroma.
