


BOEREWORS AND BUTTERNUT HOT POT

Serves 6
2 Tbs olive oil
1 coil boerewors
2 onions, sliced
2 Tbs thyme, chopped
2 garlic cloves, crushed
1 tin cherry tomatoes
1 Tbs sugar
1 cup chicken or beef stock
4 Tbs chopped basil
4 Tbs chopped parsley
1 tin cannellini beans, drained
½ butternut, peeled and thinly sliced
Heat olive oil in a pot, then pinch bits of boerewors out of the casing and brown in the oil.
Remove browned sausage from the pot then set aside.
To the same pot, add onions, thyme and garlic, then sauté until onions have softened.
Add the cherry tomatoes, sugar, stock and basil, then bring to the boil.
Remove from the heat, return the boerewors to the pot, then stir in the herbs and cannellini beans.
Transfer to an oven dish, then arrange the sliced butternut on top of the meat mixture.
Cover with foil, then bake in a preheated 180 degree oven for 30 minutes.
Remove the foil then bake for a further 20 minutes to brown the top slightly.
Serve with crusty bread.
