LARGE AMOUNT CURRIED GREEN BEANS
2kg fresh green beans
1kg onions
3 cups white vinegar 750ml
3 cups white sugar 750ml
3 tbsp curry power 45ml
2 tbsp tumeric 30ml
1 tbsp salt 15ml
1\2 cup cornflour/mazena 125ml
Preseve enough bottles for 3.2 liters
Fry onions in olive oil or butter until soft.
Rinse and slice beans finely and add too fried onions.
Cook togather ubtil beans start to soften, becateful not to over cook.
Make the sauce.
Make cornflour into a paste by adding alittle water.
Heat the rest of the ingredients in a pot until sugar has dissolved. Increase temperature until mixture starts to boil, add the cornflour mixture slowly stiring constantly until mixture is nice and thick..
Combined sauce and beans, bring it all to the boil and remove from the stove.
Bottle whilst hot
