My raad is om vir die onderste deel van die deeg ‘n broskors deeg te gebruik en vir bo ‘n skilferkors deeg (vir my pasteitjies gebruik ek sommer die kookwater broskors deeg en dit kom perfek uit). Ek gebruik dit vir klein en groot pasteie. Hierdie ronde kleintjies sommer in muffin pannetjies gebak (sirkel deeg met piering gemeet en ingedruk, toe koue vulsel wildsvleis ingesit, net bymekaar saamgebring bo en met eier gesmeer en gebak).

Watter soort bak gebruik jy?? Dis raadsaam om ‘n bak te gebruik wat vinnig hitte gelei… Gebruik ‘n oondpan wat jy vooraf verhit en plaas dan pasteibak op die warm pan voor jy dit in die oond sit. Hierdie stap help baie om rou onderlaag te verhoed. Jy kan ook die onderste deel van die kors met geklitste eier verf en laat droog voor jy die vulsel insit – dit help ook om ‘nat boude’ te voorkom. Laastens kan jy ook daaroor dink om die oond temperatuur effens laer te stel en dan die pastei bietjie langer bak. Sukses!!

The biggest name in British baking, Mary Berry shares her top 10 tips for cake success with BBC Good Food…

1. Weigh the ingredients carefully.
You wouldn’t believe how much can go wrong just because ingredients have been weighed incorrectly. If you’re just a little bit out it can have a catastrophic effect on flavour and consistency, yet it’s one of the easiest things to get right. Just concentrate at the start because any errors will only be amplified going forward!

2. Take the recipe as a pretty full guide, but not an absolute blueprint.
Sure, in terms of measuring out ingredients it should be uniform, but the way you knead cake dough, the instruments you use and particularly the strength of your oven will all have slightly differing effects on what you make. With that in mind, make your own comments on recipes so that you’ll know for next time how your process and equipment affects the final product.

3. Embrace any equipment that makes baking easier.
It sounds so obvious, but some people turn their noses up at the use of a gadget. Why? If a processor creates a better finished product than doing things by hand and saves you time and effort in the process, then I say ‘go for it’! There are enough parts of the process that will require manual skill, so you may as well save time where possible. And when people judge what you’ve made, they’re judging the flavour and texture, not what they see in the washing up bowl.

4. Keep a close eye on how much baking powder you add.
Particularly, when adding too much, you’ll find yourself with something that rises and falls quickly, and will end up drying out the cake. It’s a fantastic ingredient, but it needs to be treated with respect!

5. Don’t rush the process of cake baking.
If you’ve an hour to do a job that should take 70 minutes, don’t attempt it. Do it another day when you have more time. If I’m racing against the clock, I always try to allow 25% extra time to any bake, because you never know when something may need to be redone. Like most things in life, rushing the process only leads to disappointment.

6. Ensure you’re using the right type of tin.
Different cakes require different tins depending on the ingredients and how quickly you want the heat to get to the mix. Don’t assume that just because you’ve got an expensive tin it will be the right one for what you’re baking. Read the recipe properly and don’t start something until you know you have the right equipment.

7. Don’t put yourself under pressure by worrying about onlookers.
If you’re baking in a busy environment, or have friends to stay who are watching over your every move, ask them for a few minutes where you can concentrate on what you’re doing. Baking can be tricky enough as it is, without the need for multitasking!

8. Don’t let the ‘toothpick trick’ be your only guide.
Although I do like this test, if the cake is not a golden colour, it’s not cooked. It would be better to combine this test, with a check of the colour, and even by placing a hand on top of the cake. If it pushes down and springs back, then the cake is ready. If not, you’ll need to put it back in the oven for longer.

9. To create a thick and uninterrupted layer of icing, brush the cake mixture with a jam coating first.
This seals the cake and acts as a base for icing to be added, meaning a constant top level that doesn’t have bits of cake or crumbs lurking within.
10. A high fat content is essential in the butter or margarine you choose to use.
I always aim at over 75%. The problem with lower fat spreads and butters is they have a higher water content. When it evaporates it causes layers bind together in your mix. In the UK we tend to always have high fat content so it’s not usually a problem, but it’s always worth checking your ingredient.

Alle bestanddele vir kaaskoek moet by kamertemperatuur wees as ons begin.
Smeer jou pan se kante botter en “plak” dan ‘n laag bakpapier aan die kante van die pan. Dit help dat die beslag nie aan die kante plak en ‘n kraak veroorsaak.
Meng die eier en suiker met ‘n elektriese klitser. Maak die roomkaas sag met die hand en ‘n houtlepel. Meng dan die eiermengsel in met die hand.
Bak ‘n kaaskoek vir ‘n paar minute by hoë hitte vir kleur. Maak oonddeur oop om die hitte vinnig te laat ontsnap en bak by 100° verder.
Sit oond af EN MOENIE DIE OONDDEUR oopmaak nie. Kaaskoek koel in die oond af.
Te vinnige afkoel kan ook n bars veroorsaak.

Perfect Cheesecake Tips
Use these 10 easy tips to make sure your cheesecake comes out uncracked and perfectly baked.
1. The cream cheese should be at room temperature (and soft) before you begin mixing, or you’ll end up with lumps in your cheesecake.
2. Do not overbeat your cheesecake batter.
3. Cheesecake should be removed from the oven before it looks done, the center will appear jiggly. Cheesecakes become firm only after they’ve cooled and have chilled for several hours.
4. When you remove your cheesecake from the oven, immediately run a thin knife along the edges, pressing the knife against the wall of the pan to loosen the top. This prevents cracking as the cheesecake cools and contracts.
5. If your cheesecake batter has starch in the recipe (flour or cornstarch), you do not need a water bath.
6. If you use a water bath, use this foolproof method:
Wrap aluminum foil around the sides and bottom of the springform pan.
Place the springform pan which has all the cheesecake ingredients in it, into a larger deep baking pan (approximately 3 inches deep) that it will fit into with room to spare.
Place the pans in a preheated oven. Using a teakettle filled with very hot water, pour water into the larger pan about halfway up the sides of the pan.
Bake cheesecake as directed. When the cheesecake is done baking, remove the springform pan from the water bath pan and set aside so you can remove the larger pan with the water in it from oven. Be very careful, as it will be extremely hot.
Remove the aluminim foil from the sides and bottom of the springform pan after the cheescake has chilled completely in the refrigerator.
7. Do not cool your cheesecake in the oven. If the recipe calls for the cheescake to finish baking in a turned-off oven, do so. However, if you are to remove it from the oven, do not leave it in to cool.
8. Do not attempt to remove your cheesecake from the pan until it has chilled overnight, at least 12 hours. This will ensure that it is firm enough to avoid breakage.
9. To remove the cheesecake from the springform pan bottom, make sure the cake has been chilled in the refrigerator overnight. Place the cheesecake in its pan (with sides) over a burner set at low heat and turn it every 10 seconds until the entire bottom is warmed. This softens the butter in the crust, which will help release the cake from the pan.
10. To remove the cheesecake from the springform pan sides, use a very thin knife that has been warmed by dipping in hot water and dried. Go around the edge of the cheesecake to loosen it using a slow up and down motion. Open the springform pan’s ring. The cheesecake will slide easily on to a plate.

Gebruik 1 eierwit vir ‘n kwartkoppie strooisuiker.
Klits jou eierwitte met ‘n knippie sout tot sagte punte en begin dan die strooisuiker lepel vir lepel inklits. Maak seker al die suiker is gesmelt voor jy die volgende lepel suiker inklits. Klits deur en gebruik dan. ‘n knippie kremetart kan ook bygevoeg word as stabliliseerder.
Bak jou meringe by 160 vir 30 min en skakel die oond af. Hou die oonddeur effens oop met ‘n houtlepel en laat die tert in die oond afkoel.
Op reënerige dae klits ek so halwe koppie gesifde maizena by aan die einde van die klits tyd. Dis absorbeer van die vog in die lug. Mens moet net nie rosette spuit nie. Hy gaan kraak. Mens spuit sulke dollops.

HOW TO BAKE IN AN ELECTRIC FRYING PAN
An electric frying pan, also known as an electric skillet, is a versatile countertop appliance capable of more than just frying. You can use an electric frying pan to bake foods such as cakes, biscuits, cornbread and potatoes–all without turning on your oven. You’ll have to make a few adjustments, such as lining the frying pan with aluminum foil or using a baking pan that fits inside the frying pan, but you can still use your favorite recipes and mixes.

Things You’ll Need
Baking pan
Item to be baked
Wire rack or aluminum foil
Baking Pan Method
Place the lid on the electric frying pan and turn the temperature dial to the oven temperature specified in the recipe.

Prepare the food per the recipe directions and place into a baking pan.

Remove the frying pan lid and place a wire rack inside the base. Center the baking pan on the wire rack. Place the lid on the frying pan, slightly ajar.

Bake the food for the recommended time, or until the item is done.

Remove the baked food and turn off the frying pan.

Aluminum Foil Method for Cakes
Line the bottom and sides of the frying pan with aluminum foil. Remove the foil and set aside.

Put the lid on the pan and turn the temperature dial to 275 degrees F.

Prepare the cake per the recipe or package directions.

Remove the frying pan lid and put the aluminum foil liner back in the base. Pour the cake batter into the lined frying pan. Place the lid on the frying pan, slightly ajar.

Bake the cake 45 minutes, or until done. Remove the lid and bake an additional five minutes to dry the top of the cake, if desired.

Turn off the pan and disconnect the cord.

Place a plate or tray over the frying pan and carefully turn the pan over to remove the cake.

Peel away the aluminum foil liner and allow the cake to cool.

Tips & Warnings

Using a wire rack to raise the baking pan off the surface of the frying pan prevents burning and allows the heat to circulate.
Use metal skewers or small crumpled aluminum foil balls if you don’t have a wire rack.

2. Sny die punte van die stingels indien nodig. As die sampioene is groter as 2.5 cm in deursnee, kerf of sny hulle in kwarte.

3. Behandel die sampioene om verkleuring te voorkom. Sampioene wat gestoom word sal ‘n beter kleur behou as hulle eerste kry ‘n anti-verdonkering behandeling kry. Om dit te doen, dmpel die voorbereide sampioene vir 5 minute in ‘n oplossing wat 1 teelepel suurlemoensap of 1 1/2 teelepels sitroensuur gemeng in ‘n glas water.

4 .Stoom die sampioene. Die stoom tyd is soos volg:
Hele sampioene – 5 minute
Knoppies of kwartale – 3 1/2 minute
Gekerfde – 3 minute.

6.Seel in plastiek sakkies of seel bakkies en vries. Gestoomde sampioene sal vries vir tot een jaar
