3 kg kwepers
2½ kg suiker
15 ml sout
5 liter water

Was die kwepers. Skil en ontpit en hou die pitte en skille eenkant. Los die sout in die water op. Snipper die kwepers en laat lê in die soutoplossing om verkleuring te voorkom. Bedek die skille en pitte met genoeg water, sodat jy twee liter vloeistof daaruit kan kry en kook tot lymerig. Syg deur ‘n sif. Voeg die snippers by 2 liter van die water en kook tot sag.

Voeg die suiker by en roer tot op gelos. Laat Kook vinnig vir 45 minute; roer gereeld. Wanneer die konfyt pienk van kleur is, toets of dit jellie-agtig of semi-gestol is.
Om te toets: Haal die konfyt van die stoofplaat af. Skep 5 ml tot 10 ml in ‘n koue piering. Op hierdie manier sal jy gou sien of dit die regte tekstuur het.
Sodra die konfyt reg is, kan dit in gesteriliseerde flessies geskep word. Laat afkoel, bedek met ronde stukkies waspapier wat in brandewyn gedoop is, en verseël.

Wenke:
Konfyt flesse kan ook met aluminiumfoelie of ‘n lagie was verseël word.
Bêre die res van die vloeistof waarin vrugte soos perskes, appels, appelkose en kwepers gekook is, in die yskas. Gebruik dit as bedruipsous saam met braaigeregte.
Die sukses van ingelegde vrugte of konfyt lê in die gebruik van vars en gesonde vrugte.
Pak die vrugte netjies dog stewig in die bottels en sorg dat die bottels goed verseël is.

 




WENNERS WENKE OOR PEKEL VAN VLEIS

WENNERS WENKE OOR PEKEL VAN VLEIS:
NATPEKEL:
1 liter kookwater
500 g growwe sout
40 g salpeter
14 g swartpeperkorrels
310 ml bruinsuiker
1.5 tot 3 kg vleis
Ekstra sout vir invryf voor die tyd.
Giet die water oor die sout, salpeter, peper en bruin suiker en laat afkoel.
Vryf die vleis goed in met die ekstra sout en plaas dit dan in die koue pekel oplossing sodat dit heeltemal bedek is.
Sit ‘n bord op die vleis met ‘n gewig bo-op sodat dit die vleis heeltyd onder die pekel oplossing kan hou.
Laat die vleis 3 – 4 dae in die pekel lê en draai die vleis net elke dag om.
Jy kan dit ook in ‘n hout vaatjie doen.

DROOG PEKEL: ( is ietwat verouderde proses en het heelwat massaverlies tot gevolg.)
90 ml sout
30 ml bruinsuiker
15 ml salpeter
10 ml koljander
3 kg vleis
Meng alles goed en vryf die vleis goed in met die mengsel.
Laat dit drie dae(bedek met doekie)lê, en draai net elke dag om.
Was na die 3 – 4 dae die vleis deeglik af en as dit lank in die pekel oplossing gelê het, week dit vir 1 uur in vars koue water.
Sit die vleis in ‘n diep kastrol, bedek met koue water sodat oortollige sout onttrek kan word.
(Gooi water af of kook daarin, afhangende hoe sout jy dit verkies)
Verhit stadig tot kookpunt en prut stadig tot vleis sag is.
35 – 40 minute vir elke 500 g vleis.

Vir HAM, gebruik die volgende Pekel resep :
30 ml salpeter
250 ml bruinsuiker
28 g koeksoda
9 tot 12 liter koue water
1 vars rou eier
Sowat 2 kg fyn sout
Roer salpeter, bruinsuiker en koeksoda in koue water tot opgelos.
Gebruik hout of erde vaatjie, maar nie metaal houer nie.
Sit die heel, ongebreekte eier in die dop, in die oplossing.
Voeg die sout bietjies-bietjies by en roer elke keer tot opgelos.
Hou aan om sout by te voeg en goed te roer tot die eier bo op dryf.
(Jy doen dit om ‘n versadigde oplossing te bereik, die eier is ‘n uitstekende aanwyser daartoe, daarom moet dit ‘n vars eier wees,
‘n ouer eier sal nie in die versadigde sout oplossing dryf nie… sien ek’s amper Wetenskap onnie ook!)
Verwyder dan die eier, en plaas jou varkboud of ham in die pekel oplossing, hou onder die pekel vloeistof vir 3-5 WEKE.
Draai daagliks.

As jy dit in ‘n vaatjie of emalje emmer doen, mens kry by die slaghuise sulke “plastiek” nette waarin jy jou vleis kan sit en dan hang jy dit daarmee in die pekel dit vergemaklik die draai en hantering baie, as dit “los” in die pekel hang hoef jy dit nie te draai daagliks nie, sorg net dat dit altyd bedek is.
Hou die pekel dop, as dit skuimerig raak bo-op, haal vleis uit, en maak vars pekel aan, sit vleis weer in nuwe oplossing tot die 3 – 5 weke om is.
As die pekel proses klaar is, haal vleis uit en hang dit oornag op om winddroog te raak.
Pers nou die vleis tussen 2 planke met ‘n swaar gewig daarop tot daar geen water meer uitkom nie.
Verf die oppervlak van jou ham met kommersiële róók geursel of berook dit in ‘n beroker.
Indien die ham lank gebêre moet word, werk dit in moeselien of kaasdoek sakkies toe, en hang op in koel droë plek.
Spekvleis, word ook soos Ham gemaak, maar pekel dit net vir 3 – 4 DAE !
Jy kry ook kommersiële pekel mengsels wat jou hele proses verkort dat jy jou vleis binne 7 ure na inspuiting of 2 – 5 dae se lê al kan gebruik.
Die hele rook geursel of beroking is jou eie keuse en smaak, party hou van gerookte Ham ander nie.
Jy kan by die kamp winkels ‘n CADAC beroker aanskaf as jy nog nie een het nie, en dan volg jy net hul aanwysings en pakkies saagsels.

As jy jou eie beroker wil maak, maak jy so:
Maak ‘n 100 liter drom goed skoon.
Verwyder die boom en deksel. Heg een of meer dwars stawe vas aan die binnekant van die drom sowat 75 mm van bo af om die vleis aan te hang.
‘n ou fietswiel werk ook lekker, plaas die vleis op die speke en laat sak die wiel dan af oor die rook en hang dit met hakke oor die kante van die drom.
Die stawe kan vas gesweis of vas geskroef word, of in gleuwe wat bo in gesny word, rus.
Bou nou ‘n fondament waarop die drom kan staan deur ‘n dubbellaag stene opmekaar te stapel (sonder sement as jy dit nie permanent wil doen nie)
Laat ‘n opening in die boonste laag waardeur die fyn saagsels aan die brand gesteek kan word.
Die lug deurvloei word beheer deur ‘n plank voor die opening.
Pak klam grond rondom , aan die buitekant van die bakstene, om die hele samestel lugdig te maak.
Bedek die boonste opening met ‘n plat plaat.
Dit kan gelig word om rook uit te laat deur twee 5mm plankies tussen die plaat en drom in te skuif.
As die drom dwars gleuwe het waarop die stawe rus behoort daar genoegsaam rook uit te gaan.
Die beste saagsels vir beroking kom van harde nie-harpuisagtige houtsoorte.
Jy kan pakkies saagsels vir beroking in meeste supermarkte of slaghuise koop. BLY WEG van TAMBOTIE, dit is giftig! Bloekom, ook nie goed nie.
Eikehout, wingerd en vrugteboom saagsels is die beste.
Die saagsels moet baie droog wees anders sal dit nie smeul nie.
Maak jou drom bo oop terwyl jy die vuur aansteek. Gooi saagsels onder in, 3,6 kg behoort genoeg te wees.
Frommel koerantpapier op en maak ‘n holte daarvoor in die saagsels. Steek dit aan die brand, wanneer dit uitgebrand het, behoort die saagsels goed te smeul.
Sodra daar geen vlamme is nie en die saagsels smeul, hang jy jou vleis in die rook oor die smeulende saagsels, en maak jou drom toe.
Rook jou vleis tot dit ‘n mooi egalige goudbruin kleur verkry.
Vleis moet afkoel tot kamer temperatuur voor jy dit kan bêre.
Beroking is uiters effektief op koeler dae, aangesien warm buite temperature maklike bederf kan meebring.
Voila!

Stef Steffen BEREIDING VAN SOUTVLEIS
1 pd. growwe sout
1 ½ ons salpeter
½ ons peperkorrels
2 pinte kookwater
½ pd. bruin suiker
Gooi die water oor al die bestanddele en laat dit afkoel. Vryf die vleis goed in met bykomende sout. Sit dit in die koue pekeloplossing sodat dit heeltemal bedek is. Sit ‘n bord op die vleis met ‘n gewig bo-op om die vleis onder die vloeistof te hou. Laat die vleis 3 – 4 dae in die pekel le en draai dit elke dag om. L.W.: Vermeerder die pekeloplossing na die hoeveelheid vleis.

Ek gebruik die resep om vleis vir tenminste 24 uur te pekel en dan goed droogre word voor rook.

What to do when cupcake liners start to come off?

One thing I stumbled upon when I first embarked on my cupcake-making-journey is that of cupcake liners not sticking to the cupcake. Cupcake liners can really add to the cupcake as a whole. So it’s definitely a problem when you have invested in some pretty cupcake liners and they just start coming off!
I decided that wouldn’t do and started doing some research on the net and trying some things out. Here are my tips on preventing it from happening.

Always immediately turn the cupcakes out of the pan after getting them out of the oven. Don’t pull them out with your hands, but really just turn the pan around and let the cupcakes fall out of the pan onto the counter. (Make sure your cupcakes are entirely done, because if they are still ‘raw’ so to speak, they will splatter. )
Why do this? If you leave them in the pan to cool, condensation will occur between the cupcake and the pan, resulting in the liner getting moist, thus causing it to peel off.

Be sure to fill the liners enough. The liner should be filled between ½ – 2/3 full. Why? If there is not enough batter, it will not stick to the top. If there is too much batter it will spill over. (Although better overfilled than underfilled.) It also matters in what way you fill the liners.
Personally, I use an ice cream scooper and that always works for me, but some people prefer using a piping bag. Anyway, make sure the batter is on the bottom of the liner and to the sides of the liner. So the batter shouldn’t just be a blob in the middle, but spread out so that it can stick to the liner better. Or try tapping the cupcake pan on the counter to let the batter settle in any spaces that aren’t filled yet.

Also make sure the cupcake liner fits the pan! If the cupcake liner is too big for the pan and it kind of wrinkles up when you put it inside the pan, it is more likely that it will peel off later. I have two different pans for that reason. I know, annoying. Liners/pans should be universal. But alas, they’re not.

Look at your recipe to see if it is not too greasy. Cut down on the amount of butter. Butter gets greasy and when the liner gets greasy it won’t stick. You could also switch to oil but that does affect taste, obviously. Or at least cream the butter enough with the sugar, then add the rest of the ingredients so that it is mixed well and you end up with less greasy liners.

It seems baking temperature could also matter, which could depend on your oven specifically. I’ve read someone saying to bake it on 160 ºC (and not higher because then the cupcakes won’t rise too fast (but you would have to keep them in the oven longer). Someone else said, on the contrary, to bake them on 200 ºC but for a shorter time. Personally, I usually bake cupcakes on 180 ºC for 20-25 minutes unless the recipe really tells me otherwise. There doesn’t seem to be a definite answer on this one so if you’re having this problem I would mess around with your heat and baking time a bit.

The way you store them may affect the liner peeling off as well. An airtight container is not recommended. Put them in a cake box or invest in a special cupcake storage box, for example like this one here.

I’ve also heard people say it can depend on the brand of the liner, but I don’t think it can depend entirely on that. Maybe the brand plus other factors such as the above, who knows? Some liners might work better with specific recipes, I don’t know. If you’re interested, the liners I’ve used so far are from Wilton, House of Marie, Dille & Kamille*, Xenos*, Hema*, Albert Heijn* , Culpitt and PME. In my experience, these are all fine as long as you make sure they fit the pan, fill them up correctly, and turn the cupcakes out immediately.

I have a few more tips to share for you though:

If it happens to you anyway, you can try to fix the cupcake by making some sugar glue (water + sugar, confectioners or regular) and ‘gluing’ the cupcake to the liner. If fixing it with sugar glue is not an option, use decorative cupcake wrappers instead of liners.

If you want to make really sure it doesn’t happen, you can try to put TWO liners in the pan. First time I’ve done this, it was on accident, but I found that while the second falls off, the first one tends to stick better. It is quite wasteful though and I wouldn’t recommend doing it with more expensive liners.

FYI, you do NOT ever have to spray or grease the pan when using cupcake liners. They should come out off the pan on their own.

For me personally, just turning the cupcakes out immediately and using well-fitted liners has always worked for me and I didn’t need to mess with recipe/oven, but you will have to find out what works for you specifically

Rol jou deeg lekker dun uit en sit dit in jou voorbereide pan
steek paar gatjies in jou deeg dan sit jy bak papier of foil  bo-op en dan gooi jy die kors vol boontjies of rys en bak hom vir 10-15 min, dan lyk die kors so mooi en kan mens net die vulsel insit van jou keuse. Dit is om te keer dat jou deeg teveel rys en daar geen spasie is vir vulsel nie.

1) If the pastry was frozen, thaw in the fridge for at least 24 hours before attempting to unroll it. If still slightly frozen the pastry will break if you try to unroll it. Do not remove the pastry from the box when thawing it in the fridge.
2) Always keep the unused phylo pastry covered with a damp cloth as it dries out very quickly and it will then be impossible to work with. Thawed pastry can be frozen again, but must be very well covered.
3) Any filling, savoury or sweet is suitable to use with phylo pastry. Just make sure the filling is quite dry and not too saucy or watery. A too saucy filling will cause the pastry to burst open and the filling will run out.
4) Phylo pastry can be sprinkled with nuts, sesame seeds or parmesan cheese between and on top of the layers for extra texture and good presentation.
5) Phylo pastry should be golden brown and crisp when done – this takes anything from 10 – 25 minutes on 200°C, depending on your oven.
6) Stick to the Woolworths, Pieman’s and Pick ‘n Pay Choice brands. Spar sometimes has an imported brand which is a good second choice. If you don’t see it in the frozen food (pastry) fridge, ask the shop manager to get it for you. Remember to check the sell by date!

Golden rules:

• Brush all sheets (one at a time) with a thin layer of melted butter.
• Handle the pastry carefully, but remember that it is not a train smash if it tears or breaks! It will make no difference once it is folded or rolled up and baked.
• Cover up unused pastry to prevent drying out.
• When rolling it up (like a spring roll) or creating a parcel, always do so loosely.
• Phylo pastry is very versatile, enjoy it. Be creative, roll it, fold it, make parcels, triangles or little money bags and have fun!
• Your confidence will increase when you work with phylo pastry more regularly; and like with any baking technique, practice makes perfect!

Indien dit wel saad maak, los dit in die tuin dat die saad natuurlik droog op die plant, meeste saai hulle self.  As dit te veel is vir eie gebruik, deel uit of droog dit, maak olies, soute, botters, souse… Hoop dit help bietjie, ek kan nie sonder vars kruie nie!

Kookolie
Sit bietjie sout in die braaipan by die olie om te keer dat die vetspat.
Sny die onderste deel van ‘n wynbottelhouer af en bêre jou kookoliebottel daarin. Die kartonhouer suig olie wat drup op.

Kastrol
As jy aangebrande kos vinnig uit ‘n kastrol wil verwyder, kan jy dit vul met kookwater waarby twee eetlepels sout gevoeg is.
Strooi koeksoda op die aangebrande deel in ‘n pot. Maak klam met ‘n bietjie water en skrop.
Verwyder die bruin aanpaksel met ‘n droë stukkie staalwol, terwyl die pan nog warm is.

Noedels
Noedels kan goed gevries word en dan in kookwater ontvries word – Dit is ‘n vinnige proses.
Kook macaroni in melk pleks van water. Dit is heerlik, maar pas op dat dit nie aanbrand nie.

Room
Om room styf geklits te kry voeg bietjie kremetart by.
Om vinnig suurroom te maak – neem vars room en voeg ‘n bietjie karringmelk by of suurlemoensap
by. Dit proe die beste indien dit oornag gestaan het.
Voeg ‘n bietjie opgeloste gelatien by indien jy sukkel om room styf te klop.
Voeg ‘n 2ml suurlemoensap by room om dit baie gouer mooi styf te klop.

Roomys
Sit ‘n klein marshmellow onder in ‘n roomyskelkie. Dit sal verhoed dat die kelkie lek.

Rys
Kook rys in melk pleks van water. Dit is heerlik, maar pas op dat dit nie aanbrand nie.
Om rys los en wit te hou wanneer dit gekook word, voeg ‘n bietie suurlemoensap by.
