KITI SE SWISS MERINGUE

Ek maak net die swiss meringue. Dis nou die een waar jy die suiker in die eierwit smelt oor kook water, en dan klits dat die blits wit sit. Dan is jou meringue klaar gaar, en hy “weep” ook nie. Resep is by my red velvet resep, maar hier is hy weer: (Jy kan dit ook in oond verbruin) Swiss Meringue
5 eierwitte (200ml)
2 koppies (500ml) strooisuiker (ek blits sommer witsuiker in voedselverwerker)
3ml sout (dit maak dit minder soet)
Knippie kremetart
Meng al die bestanddele in jou staan klitser. Sit bak oor water wat net net simmer (nie harduit KOOK nie, anders word dit gaar). Roer met handklitser (whisk) sodat die suiker kan oplos. As jy ‘n voedsel termometer het, hou die temp onder 40grade C. Die mengsel moet geroer word totdat jy niks meer suikerkorrels tussen jou vingers voel nie. Kry jou vingers daarin! Dit vat so 3-5 minute. Sit bak terug by menger en klits op hoogste spoed tot dit dik, glanserig en afgekoel is. Die bak self moet net onder kamertemperatuur wees. Resep se 8 minute, ek het 15 geklits voor ek tevrede was. Jy kannie overmix nie, die sout en kremetart keer. Die punte moet opstaan en net net omval as jy klaar is.
Smeer ‘n lekker dik laag oor die koek, maar moenie bekommer oor mooi lyk nie. Dit kom nog. Los die helfte van die mengsel oor. Vat nou ‘n blob in jou hand en druk dit teen die koek. Trek jou hand weg en lig op sodat ‘n punt vorm. Dis morsig, maar lekker, jy sal vinnig die hang van dit kry.
Nadat jou koek reg is, kry jou blaasvlammetjie (google se vlam fakkel vir flame torch haha) en rooster jou meringue. Hou jou vlammetjie ook tussen jou puntjies. Die puntjies sal dalk aan die brand slaan, blaas maar dood. Die kontras sal fantasties lyk en proe, dit karameliseer die suiker.

Die rose is gemaak van wat ek noem ‘sjokolade klei’.

BESTANDELE
54 gram sjokolade stukkies & 1 e Heuning.

METODE
Smelt sjokolade in bak oor pot met kokende water onder-in. Wanneer begin smelt verwyder van hitte en hou aan roer totdat alles gesmelt is. Gooi heuning by en sit weer op hitte. Hou aan roer totdat heuning mooi ingemeng is met sjokolade.
Verwyder van hitte en hou aan met deur roer, soos dit afkoel gaan dit begin stywer word.
Wanneer koud genoeg is om met hande te hanteer, sit in jou hand en begin dit brei soos klei. Party sjokolade het ‘n hoë olie inhoud, soos jy brei sal oortollige olie uitkom. Vee hande gereeld aan papier handdoek droog.
As daar nie meer olie uitkom nie, draai toe in plastiek wrap en sit in yskas vir so 1-2 ure.
Rol klein balletjies (afhangende hoe groot rose gaan wees) myne was so 1cm in deursnee.
Maak ‘n klein vorm wat amper soos roomys horinkie lyk-dis jou basis waarom blare kom.
Druk nou jou balletjies plat, die bokant dunner as onder en draai om jou horinkie.
Hoop jy verstaan wat ek verduidelik. Gelukkig kan jy blaartjie weer in balletjie rol as dit nie reg is nie. Let wel sjokolade raak gou weer sag met die hitte van jou hande. Dis nogal lekker speel & leer smile emoticon
Blare – pluk moerbei boom blare of Hibiscus blare (enige eetbare plant). Was dit mooi om seker te maak dis skoon en gogga vry smile emoticon
Smelt skoon sjokolade, voeg niks by nie.
Smeer dit nou aan die blaar se agterkant maar moenie dat sjokolade onder blaar kom nie anders trek blaar nie van sjokolade af nie. Sit op wax papier en plaas in yskas vir so 2-3 ure. Trek dan die blare baie versigtig van die sjokolade af.

Martie Coetzee Breek die sjokolade om te smelt. Breek dit in blokkies en sit in ‘n glas bak
Neem “n pot met klein bietjie water, waar op die bakkie gemaklik raak en plaas dit op die stoof. Die blokkies sal begin smelt roer dit aanhoudend sodat dit nie versuiker nie. Doen liewers klein hoeveelhede op ‘n slag dit werk makliker en kom gladder uit
Ek plaas my bakkie gewoonlik in nog ‘n bak met kook water as dit gesmelt is sodat dit nie te vinnig af koel terwyl ek werk nie
Begin nou speel kies jou kleur of kleure en sit teelepels van die sjokelade op jou skets. Gebruik ‘n skoon lepel en in smeer bewegings vul nou jou skets op moet nie probeer om presies op jou lyne te werk nie die afwerking is baie mooier as dit effens oneengalig is.
Maak nou die plastiek los aan die kante en plaas in yskas om weer hard te word. Neem nou jou werkstukke baie versigtig hulle breek maklik en haal hul saggies van die plastiek af

FOOD LOVERS RECIPES
5 ml vanilla ekstrak
5 ml suurlemoensap
1 blok wit wooden spoon margerine
1 houer roomkaas
500 g versiersuiker

Sif jou versiersuiker 3 x   en los eenkant. Room nou jou kaas en margerine saam en voeg bietjie bietjie versiersuiker by, as alles klaar deur geklits is. Voeg vanilla en suurlemoensap by en meng goed deur. Plaas in yskas tot reg is om te kleur en gebruik.
Wanneer gereed is om te gebruik kan jy nou ook jou geurmiddel of kleur byvoeg.

Die crumb coat is ‘n moet, dan in die yskas en dan die botterversiersel net voordat jy die fondant opsit. Mens kry ‘magic matte’ waarop jy fondant kan uitrol sonder enige ander produk andersins is maizena die beste. Suiker sal hom taai maak. Gooi bietjie maizena in ‘n ou kous en druk dit dan so liggies oor die oppervlak waar jy wil uitrol – as jy dit te dik doen sal die maizena in die fondant gaan vassit (nie ‘n krisis nie) maar ek vind die ‘sokkie’ of selfs ‘n fyn sifter werk beter. As jy jou fondant wil glad afwerk, werk eers met jou hande om die ergste glad te kry, dan ‘n smoother (as jy het) en dan vat jy ‘n bol van die orige fondant en gebruik dit veral om die randte mee af te werk.

Lizanne Jordaan:
1 laat die koek HEELTEMAL afkoel.
2 sny die koek in lae en vul indien nodig met versiersel van jou keuse.
3 sit in yskas om heeltemal te set.
4 smeer laag Botter versiersel.
500g white wooden spoon en 1.2kg icing. Met 10 ml melk.
5 sit in yskas om heeltemal te set.
6. Rol fondant uit op oppervlak wat bestrooi is met mielieblom (maiziena). Moet nie icing gebruik nie dit sweet en raak taai.
Rol uit tot so 5mm. Moet nie te dun uitrol nie anders skeur die fondant as jy dit oorsit.
7. Wanneer die los oor die koek le, begin dit van die bo kant vas druk in die rondte om lug bubbles te vermy.
9. Sny oortollige fondant af en maak gelyk.

2 x 500 g Rama
1.88 kg Icing Sugar (2 & 1/2 bags icing sugar 750 g)
1 cup cocoa for chocolate
10 – 15 ml vanilla essence (butter vanilje Dr Oetker tastes devine!)
approx 4-6 tbsp hot milk

Beat butter with paddle attachment till really soft and almost white. Add essence. Start adding sieved icing sugar and loosen mixture with a tablespoon of hot milk when needed.

Enough to cover approximately 4 bier box cakes

ITALIAN MERINGUE SPONGE
Nes ek dink ek het die perfekte icing resep, kry ek ‘n beter een. Die een is TOPS. Ek het hoeveelhede effens verander.
300g sugar
250ml water
4 egg whites
2.5ml cream of tartar
325g room temp unsalted butter – [250g block plus half of another 250g]
5ml vanilla essence
Half cup passionfruit pulp, seeds removed (about 6 + 1 extra)
Sponge cake of choice (See recipe below)
Boil sugar and water for approx. 10 minutes to soft ball stage, or 120°C on sugar thermometer.
While boiling, prepare egg whites by whisking with cream of tartar until stiff peaks forms. With motor running, add hot syrup in a steady stream, and keep beating until mixture cools. This takes up to 7 minutes or longer. If skimping on this or syrup not hot enough, the mixture may weep.
When the meringue is cooled down (not before) beat the butter until light and fluffy, add the pulp in steady stream and continue beating with the vanilla until smooth and light. Fold in the meringue until mixed well.
Cut the cake into layers and spread half the mix between them. Use the other half to coat the sides and top, and drizzle the 1 reserved passion fruit (pulp and seeds) over the top.
VARIATIONS:
– Use other fruit in season instead of passion fruit.
– Drizzle matching liqueur or juice or melted jam over sponges before spreading with icing mix.

SPONGE
120g (250ml) flour, sieved 3x
40g (75ml) cornflour sieved with flour
5ml baking powder
1ml salt
2ml cream of tartar
5 eggs, separated
210g (250ml) castor sugar
100ml ice cold water
Preheat oven to 160°C (yes slightly colder than normal). I bake my cakes in a colder oven for slightly longer = flat cake, no rising volcanoes. Line cake tin with baking paper, and use another piece of baking paper long enough to go around sides and overlap, fold in half and line sides with folded side at the bottom. This will stick up over edge of cake pan, making it deeper.
Sieve flour, cornflour, salt and baking powder three times (more air, fluffier cake). Beat egg whites with cream of tartar (more stable foam) and set aside.
Beat egg yolks and sugar until light and fluffy and all sugar dissolved. Add ice-ice cold water a bit at a time. This will increase volume. Too much at once will destabilise your foam. Fold dry mixture into yolk foam with a metal spoon. Carefully fold in whites with metal spoon, so that you preserve as much air as you can.
Spoon into prepared cake dish and bake immediately for approx. 40-45 minutes. Remove from oven when a skewer comes out clean, let cool for 10 minutes and remove from pan. Any longer may make your cake shrink from the sides. Remove paper and cool on a wire rack. Fill with Italian meringue icing.

HOMEMADE MARSHMALLOW FLUFF
Marshmallow fluff is a spreadable marshmallow cream that closely resembles a whipped and sweetened cloud!
3 large egg whites
2/3 cup plus 2 tablespoons sugar
¾ cup light corn syrup or golden syrup
1 teaspoon pure vanilla extract

Yield: About 5 cups

Beat egg whites together until light and frothy using an electric stand mixer with the whisk attachment. With the mixer running, slowly pour in 2 tablespoons sugar; beat until soft peaks form.
In a large saucepan, combine 1/3 cup water, corn syrup, and remaining 2/3 cup sugar. Place over medium heat and cook until boiling. Start cooking over medium heat stirring occasionally but never taking your eyes off it. Raise heat to medium high and continue cooking until mixture reaches the soft-ball stage, about 240 ºF on a candy thermometer, it will take about 10-15 minutes. (The hot syrup may bubble up the sides, turn heat down briefly or remove pan from heat, once the syrup goes back down raise heat and continue cooking.)
Drape an old, clean kitchen towel over the front and side of the mixer, leaving one side open to pour in the syrup. With the mixer on low, slowly add hot syrup to egg-white mixture ( make sure kids and pets are not nearby, this could scar you for life, people(!) and scares the living daylights out of me!). Increase mixer speed to high and continue beating for 6-8 minutes. Add vanilla and continue to beat until mixture looks like marshmallow cream, 2-4 minutes more.
Allow to cool, spoon and store in tightly sealed jars in the refrigerator up to a month.

Ek pipe nooit die koeke nie. Ek is nie baie kunstig nie, maar ek het van die fluff al 2 maande in die yskas gehou dan was hy nog net so styf soos toe ek dit gemaak het.

THE BEST CHOCOLATE FUDGE FROSTING
Yield: enough to frost a 2 layer cake
10 tablespoons butter
1 1/4 cups unsweetened cocoa powder
5 1/4 cups powdered sugar
2/3 cup milk
2 teaspoons vanilla extract

In a saucepan, over low heat, melt butter. Stir in cocoa powder. Mixture will resemble a thick paste.
Transfer chocolate mixture to a large mixing bowl. With mixer on low speed, add in powdered sugar and milk, alternating the two. Reserve a few tablespoons of milk. If frosting is thick, add in remaining milk. Add vanilla extract.
Turn mixer to medium high speed and beat about 5 minutes, until frosting is smooth and creamy.
Frost cake or cupcakes as desired.

DELICIOUS GANACHE

DELICIOUS GANACHE
454 g bittersweet or good milk chocolate
2 tbls unsalted butter
227 g heavy cream
a pinch of salt and
a splash of rum (optional)

Heat cream whisking constantly as soon as it begins to bubble remove from heat and pour over chocolate and butter,whisk the ganache in small circles until it all comes together and smooth and creamy. Stir in salt and rum.It will be soft and liquidy at first this is the stage when it is great for pouring over iced cakes. You can also cool the ganache naturally over night. Before using mix with a rubber spatula or in a mixer with paddle attachment on low speed until creamy at this stage it will be ready for frosting cakes or piping onto cupcakes
