CHICKEN SAMOOSA FILLING

Ingredients
500g chicken mince
3 large onions, chopped finely
1 teaspoon ground jeera
1 teaspoon ground dhania powder
2-3 teaspoons crushed chillies
2bunches dhania
salt to taste
Lemon juice

Liquidise :
onions,
chillies,
dhania,
jeero
& lemon juice.

Add to pan together with the mince.
Add spices and mix well.
Braise mince until dry & all moisture evaporates

Cool completely.

Chop fresh Cilantro & spring onions.

Fill approx 30 samoosas

CHOCOLATE MIRROR GLAZE

15g gelatine sheets
45g dark chocolate
110g water
65g double cream
65g Cocoa
210g sugar

– Soak the gelatine sheets in cold water for about 10mins
– Add to saucepan the water, sugar, cream and cocoa and mix well
– Bring to the boil
– Remove from heat and add chocolate until melted
– Remove excess water from gelatine by squeezing it with your hand and add to the glaze. Stir until melted
– Sieve to remove any lumps and air bubbles. Do this 2 or 3 times
– Pour over your prepared cake

Note:

You can successfully substitute sheet gelatin for powdered gelatin in any recipe by using the following scaling.

1 (0.25 oz.) envelope granulated gelatin = 1 tablespoon powdered gelatin = 3 sheets leaf gelatin.

8 Mini Croissante
½ koppie suiker
½ koppie koekmeel
2 groot eiers
2 koppies melk
1 hoogvol eetlepel botter
Knippie sout
Amandel geursel
Kaneel
Versiersuiker

Meng die meel en suiker, voeg die eiers by en klits tot gemeng en glad. Voeg melk geleidelik by en klits deurgaans. Geur met ’n knippie sout. Sit melkmengsel in ’n dikboom kastrol op ’n medium-lae hitte. Snipper die botter in. Roer aanhoudend tot die mengsel dik is en meel goed uitgekook is (dit vat so tien minute). Voeg ’n paar druppels amandel geursel by (wees versigtig en proe liefs voor jy te veel bygooi.) Verwyder van die hitte en laat afkoel tot kamertemperatuur.
Bak die mini croissante volgens die instruksies op die pakkie. Sny hulle oop en smeer mildelik met die melktert vulsel. Sif kaneel oor die croissante (ek hou van baie) en net ’n titsel versiersuiker vir die mooi.

SWISS BUTTERCREAM FROSTING
Hierdie is die heel beste botterroom versiersel wat ek nog gemaak het, en ek het al baie gemaak. Dit behou vorm en crust nie soos gewone icing nie. Maklik genoeg, solank jy ‘n staan menger het. Hand elektriese klitser kan ook werk maar jy klits en klits en klits (seker 10 minute) .

Swiss Buttercream
180 g fresh large egg whites  (6 Large)
300 g castor sugar  (1 + ½ cups) (normal sugar can be used)
240 g icing sugar  (2cups)
170 g solid vegetable shortening  (3/4 cup) room temperature
454 g unsalted butter (2 cups) room temperature
1 tablespoon vanilla extract or vanilla paste
Salt – pinch *( a dash of salt can heighten all these flavors – add at the end with the vanilla)

Cut butter and shortening in inch by inch blocks, leave out overnight to become room temperature.
Over a double boiler, in a large metal bowl whisk together the castor (or normal) sugar and the egg whites stirring constantly until the mixture reaches approximately 46 deg C (115 degrees F) or the sugar grains have dissolved and are no longer gritty between your fingers.
Pour this mixture into the metal bowl of the stand mixer with the WHISK attachment and whip on high speed until it is thick, glossy and white in color. The peaks should be as firm as firm can be.
In the meantime you can sift your icing sugar, and once you have achieved STIFF peaks meringue, add the icing sugar all at once with the mixer on very low speed to avoid having a snow shower of sugar all over your kitchen!
Once all of the sugar has been incorporated you can turn the mixer speed to med-high until it is all nicely mixed in. Switch to the paddle attachment and blend on low speed until smooth. Meringue bowl must be cool to the touch before adding butter, otherwise you will just make butter soup.
Be sure your butter and shortening are at room temperature and they are the same consistency. Add it in fairly fast, one block at a time. Meringue will deflate a bit at first and look as if it curdles, just keep going until all the butter and shortening is in and emulsified.
Add vanilla extract and salt.
Notes
– This recipe can be stored for 4 days room temperature, 2 weeks refrigerator, 2 months freezer
– If unsure about anything, watch the video (link at source)
After refrigeration or freezing:
– Take it out several hours or a day before you need it, and let it get to room temperature.
– Place entire recipe back on the mixer and with the PADDLE attachment on low- medium and let it mix.
– It will look as if it is curdled, don’t be alarmed this is normal, it will come back together eventually after beating.

EXTRA MOIST DARK CHOCOLATE CUPCAKES
1 cup sugar
1 cup brown sugar
1 and 3/4 cups flour
3/4 cup cocoa
1.5 tsp baking soda
1.5 tsp baking powder
1 tsp salt
2 eggs
1 cup milk
1/5 cup oil
2 tespoon vanilla
1 cup boiling water
Preheat oven to 180ºC
Sift dry ingredients in batter bowl or jug
Add eggs milk oil and vanilla
Beat for 2 minutes
Add boiling water
The batter is very runny. This is normal.
Pour into 24 cupcake liners.
Bake for 20 minutes

PEANUT BUTTER AND CREAM CHEESE ICING
1 container smooth cream cheese
120 ml smooth peanut butter
30 ml milk
5 ml vanilla
Powdered Sugar

The original recipe says 750 ml powdered sugar but I found that to be too sweet and would recommend using only half that amount depending on your taste preference

ITALIAN MERINGUE BUTTERCREAM

Makes 8 cups.

1/2 cup of cold water (120ml)
2 1/4 cups of caster sugar (530ml / 430gr)
1 cup of egg whites (about 6 egg whites) I use pasturized eggwhites only!
1 1/2 pound of soft unsalted butter (680gr)
1 tsp of vanilla extract
Kitchen stand mixer

First set the timer on 7 mins & pour the eggwhites into the kitchen mixer with whisk attachment.

Step 1:
Place sugar & water in a casserole and bring it to the boil and start the timer. Boil it on medium/low temperature. If the syrup starts to darken quickly turn down the temperature a little.

Step 2:
When the sugar syrup has been boiling for 5 mins. Start the kitchen mixer on full speed and whisk the egg whites for the last 2 mins. When the timer is up the sugar syrup is done. With the mixer still going on high speed slowly pour the hot syrup down the side of the mixing bowl. Discard any leftover syrup in the casserole. Be very carefull not to get burned on the hot syrup.

Step 3:
When all sugar syrup has been added it should look thick and fluffy. Stop the mixer and change for the paddle attachment. To avoid meringue splatter all over your kitchen place a clean kitchen towel over the mixer. Set the timer on 10 mins and beat on high speed. This is how long it takes in my mixer for the mixing bowl to be cool to the touch.
After 10 mins. You should now have a lovely thick meringue like on the photo.

Step 4:
Now its time to add the butter. Start the mixer on high speed and with a knife cut pieces of the butter and add it to the meringue. When all butter is added it will not take long for mixture to turn into nice thick smoothe buttercream. When that happend slow down the mixer and add 1 tsp of vanilla extract. Stop the mixer and scrape down the bowl and start again. I do this two times. You should now have a bowl full of lovely Italian meringue buttercream.

Note: If the IMBC wont combine just continue to whip whip whip. It will eventually get smooth. If you are still having problems, place both bowl with paddle attachment into the refrigerator and let it “cool” down a bit and then whip it again.
You can easily freeze any left over IMBC. Just remember to let the cold IMBC come back to room temperature before you placing it in the mixer to get it smooth.

Hierdie resep hou vir 24uur in yskas en 2 dae in vrieskas.

1 blikkie koue kondensmelk
240 g Stork Bake, sag maar nie gesmelt nie
1 teelepel vanilla geursel

Klits die kondensmelk en  Stork Bake tot wit en romerig. Voeg die vanilla geursel by.
Regtig baie lekker veral op sjokolade of wortelkoek.

Heila Van Niekerk: My ma se resepte wat sy as vulsels gebruik het.
Pynappel vulsel:  Kook 1 gerasperde pynappel, as begin kook voeg 1 koppie suiker by. Skei 2 eiers, gebruik geel om vla aantemaak soos dik pap. Laat deurkook tot vla gaar is. Klits witte styf vou in pynappel mengsel in,  as afgekoel skep in flans. Versier met styfgeklopte room. As blikkies pynappel gebruik word verminder suiker anders is dit baie soet.
Martie Du Pisanie: Ek het heerlike vulsel waar kondensmelk inkom…maar die resep so lank laas gemaak ek onthou nie die best nie en ek is nie nou op die plaas nie.

Kook stadig tot dadels sag is. Skep in flans, versier met styfgeklopte room.
