


MUSHROOM QUICHE
1 punnet of mushrooms
1 onion
1 packet of bacon
6 eggs
1 roll puff pastry
half cup milk
half cup cream
half cup cheese
few spoons of breadcrumbs, mixed with spices of choice
salt and pepper to taste
Fry the onion with the mushrooms. Add the bacon. Mix the eggs with the cream, milk, salt and pepper. Add the onion mixture to the milk mixture. Pour into dish lined with puff pastry. Top with breadcrumbs. Bake at 180°C for 45-50 minute.

MUSHROOM QUICHE 2
1 x pastry of choice
200 g mushrooms, whipped and sliced
1 small onion, chopped
45 ml fresh parsley, chopped
3 eggs
200 ml milk, cream, crème fraiche, yoghurt or evaporated milk
15 ml fresh or 5ml dried rosemary
Salt and freshly ground black pepper to taste
3 ml paprika
100 g cheddar or mozzarella cheese, grated
Makes 1 x 22-26cm Quiche
Place mushrooms and onions in a suitable bowl. Cook on 100% power in microwave for 2-3 minutes, drain off excess liquid.
Spread mushroom mixture over pasty base.
Beat the eggs, milk and seasonings together. Pour over filling.
Sprinkle with grated cheese and a little paprika.
Microwave: Bake on 70% power for 10-13 minutes
Combination: 180˚c + 60% microwave power for 18-22 minutes
Convection: Pre-heat oven to 180˚c and bake for 40-45 minutes until golden brown and filling has set.
