Idee gekry van n restaurant ete waar dit op spyskaart heerlik geklink het, maar toe kom die steak met n gevriesde blokkie botter met 1 anchovy fillet bo op dit…
1 botteltjie anchovy fillets met olie. Hou n paar uit om opgekap as garnish bo op te kom
250 ml sagte botter.
Suurlemoen sap na smaak (10 ml).
10 ml Oyster sauce (Chinese winkel) opsioneel
Blits met stok blender. Vries die oorblyfsels vir n volgende keer

LAVENDER CHICKEN LIVER PARFAIT


LAVENDER CHICKEN LIVER PARFAIT
(hierdie is sonde!)
Prep: 10 minutes
Cooking: 10 minutes + setting time 2+ hours
400 g chicken liver, cleaned
100 g butter, melted +80 g melted to finish off and a generous tablespoon for sauteing
50 ml double cream
2 – 3 shallots, thinly sliced
1 garlic clove, smashed and roughly diced
50 ml Madeira
50 ml brandy
50 ml port wine
1 tablespoon of lavender buds, pesticide free or culinary grade + a tiny bit more for sealing
1 teaspoon of nutmeg
4 ramekins

Begin by rinsing the liver well in cold water and removing any sinews, then pat dry.
Bruise the lavender buds (excluding the ones for sealing) in a mortar and pestle.
Melt the butter and then add the shallots, sauteing till translucent about 3 – 4 minutes until soft.
Then add the garlic, the bay leaf and the bruised lavender and sautee for another 1 minute, stirring well.
Now, add the brandy, let it reduce about 1 minute, then add the Madeira and port and allow to reduce further about 1 – 2 minutes.
Next, add the chicken livers, nutmeg, salt and pepper and stir well cooking for another 4 – 5 minutes.
Set aside the mixture for about 5 minutes, so it cools slightly. Then transfer to a blender and blitz it till it’s a pate.
Add the melted butter. Oh, how I love butter! It’s the color of the vibrant sun- I don’t get much of that here- great substitute! Blitz it, until the butter is well incorporated
Now, add the mixture to a sieve and using a ladle or a spoon, push the mixture through the sieve. This will take about 5 minutes. It’s quite laborious and is great for building Jeniffer Aniston arms. Alright, who am I kidding!
Discard the sinewy bits that remained in the sieve. Now, take the smooth mixture that has passed through the sieve and add to it the double cream. If you wish to use butter instead of cream that is also fine. Remember it might seem a bit runny at this point, but this will set in the fridge.
Spoon the mixture out into ramekins- leaving a bit of room to seal it with butter.
Sprinkle with freshly ground black pepper and about 4 – 5 lavender buds each- not too much as the taste can be overpowering.
Now, drizzle over the melted butter. It will turn out about a tablespoon and a half per ramekin.
Set it in the fridge for at least two hours or overnight.

Ek het vars roosmaryn en sage in my tuin gepluk.
In die mikrogolf tussen kombuispapier gesit op hoog vir 1 minuut.
Gekyk, nog 30 sekondes, gevoel en nog 30 sekondes tot droog.
Ek het dit met peperkorrels en pienk sout gemeng en in grinder botteltjie gegooi.

Creating Pepper Flakes
Heat the oven to 170 degrees or a low setting. Although the easiest way is to dry the peppers in the oven, you could also sun dry them, especially if you live in an arid climate.
Using a knife, carefully cut the pepper stems off. Then, slice peppers by simply splitting the peppers in half. Don’t remove the seeds.
Line non-greased cookie sheets with peppers. Line peppers side by side and avoid clumping peppers together (otherwise they won’t dry properly).
Bake in oven for approximately six hours. To be sure you give them enough time to dry, set a timer. Once six hours have passed by, turn off the oven and allow the dried peppers to remain in the oven overnight so they will continue to dry and dehydrate.
The next day, place the dried peppers in a food processor or crush them by hand. Only crush peppers by hand if you are wearing gloves and are crushing the peppers while they are inside a plastic bag. Otherwise, stick with the food processor.
Once the dried peppers have been thoroughly crushed, carefully pour them in an airtight container. Serve the crushed peppers.[2]
Tips
Add a label to the bottle to identify the peppers.
Open windows or try to increase ventilation as the peppers cook.
Warnings
Never touch your face or eyes when working with peppers, as residual pepper juice can cause extreme pain upon contact.

A coarse grinder such as a food processor, blender or spice grinder. The more finely you grind your peppers, the hotter/more powerful the flavor.

5 stewige medium grote piesangs, sonder kneusplekke
1 groot blik fyn pynappel
¼ koppie fyn klapper
3 koppies suiker
3 eetlepels suurlemoensap (in bottel)

Sny piesangs fyn en sit saam met ander bestanddele in ‘n pot. Verhit, roer kort-kort. As dit kook stel die hitte laer en prut tot dik. Roer maar aanhoudend, aangesien dit maklik kan aanbrand. Skep in gesteriliseerde botteltjies en seël.
Die konfyt is baie soet maar baie lekker.

Hallo julle…ek moet hierdie met julle deel….ek het vandag my eie coconut butter gemaak…en mense DIT IS HEERLIK….
Baie eenvoudig:
400g medium dessicated coconut
Gooi in die liquidiser en blend..(moet net aanhelp met n spatula)
Vat omtrent so 10 minute….dit is rerig baie baie lekker…..😊😋

Ek gebruik dit in plaas van botter in coconut muffins, koekies en smoothies. Dis lekker in kerrie disse ook. Dis sommer lekker net so…dit het n sterk klappper smaak so n mens kan dit nie in als gebruik nie, maar n mens moet eksperimenteer…

LELANE SE SPEK KAASSMEER
1 liter volroom langlewe melk
1 kg Bergkaas
500 gr Rama
1 pakkie gesnipperde spek
Sit melk en botter in kastrol, roer tot botter gesmelt is, voeg kaas by, roer gereeld tot glad en kaas gesmelt is.
Braai spek tot krakerig en dreineer die olie af.
Sit spek in voedselverwerker tot ‘n poeier vorm. Voeg by kaas mengsel.
Meng goed deur en bottel warm maar laat heeltemal afkoel voordat jy die deksels opsit.
Maak seker die bottels en deksels is goed gesteriliseer.

All purpose Masala:
1 cup ginger and garlic paste,
1/2-1 cup fresh ground chillies,
1 cup cumin and coriander powder,
1/2cup tumeric,
2tsp cardamom powder,
1/2 cup salt,
1tsp cinnamon powder,
1/4 cup oil, blitz together and store in the fridge. Use as needed. ( adjust the chillies accordingly)

30 (Approximately) green cardamoms
4 black cardamoms
4 cms of cinnamon bark
1 tablespoon of cloves
2 teaspoons cumin seed
1 tablespoon of coriander seed
2 star anise stars (pods?)
4 dried bayleaves, crushed
2 teaspoons black peppercorns
A pinch of ground dried ginger (DON’T use fresh ginger – it’ll rot and kill your spice)
