Gorgonzola sauce is amazing served with pasta, gnocchi or even grilled steak. This Gorgonzola sauce recipe is made with cream, Gorgonzola cheese, white wine and chicken stock. You could substitute vegetable stock to make it vegetarian.
This Gorgonzola sauce is best made with aged Gorgonzola, which is drier and more crumbly than younger Gorgonzola, which is more moist and not as flavorful.
Ingredients:
2 cups heavy cream
½ cup dry white wine
½ cup chicken stock
4 oz. crumbly Gorgonzola cheese (about 1 cup)
2 Tbsp freshly grated Parmesan cheese
Kosher salt and freshly ground black pepper to taste
Grated nutmeg to taste
Preparation:
In a large sautè pan, heat the cream, wine and stock over medium-high heat until it starts to bubble. Lower heat and simmer gently for 15 to 20 minutes or until the liquid has reduced by about one third.
Add the Gorgonzola and Parmesan and stir until the Gorgonzola has melted and the cheeses are fully blended. Adjust consistency with additional cream if necessary.
Season to taste with Kosher salt, freshly ground black pepper and freshly grated nutmeg. Go easy on the nutmeg, though, as too much can be overpowering. Serve right away.
Makes about 2 cups of Gorgonzola sauce.

RESEP: Charlotte Verwey da Silva
FOOD LOVERS RECIPES
Dis maar my eie konkoksie, maak dit gewoonlik vir funksies….so ek maak dit in groot maat. Werk maar op die volgende:
1 liter Griekse jogurt
500 ml suurroom
375 ml mayonnaise
gekapte knoffel, sout en peper na smaak
Op hierdie mates kan jy ‘n halwe gerasperde komkommer byroer.
Ek het ook al die suurroom vervang met roomkaas. Sous was toe bietjie dikker maar net so lekker!
As jy die sous bietjie suurder wil hê,kan meer mayo of bietjie suurlemoensap bygevoeg word.

Serve this utterly indulgent blue cheese sauce over steak, broccoli, cauliflower, homemade pasta or baked potatoes. Guaranteed to satisfy all your senses!
250ml (1 cup) fresh cream
60ml ( cup) full cream milk
5ml (1 teaspoon) freshly crushed garlic (or use 10ml / 2teaspoons if you really love garlic)
1 wedge (100g-125g) blue cheese
freshly ground black pepper to taste
Add cream, milk and garlic to a medium or large non-stick frying pan. Roughly crumble blue cheese into the cream and milk.
Using a wooden spoon, stir over medium heat until sauce starts to boil (cheese will gradually melt). Keep on stirring and boil for 3-5 minutes (depending on the size of the pan), or until sauce just starts to thicken. (This process is called reducing a sauce.)
Don’t boil sauce for too long, or it will become too thick. Bear in mind that it will thicken even further on cooling. If the sauce has become too thick, it can still be rescued by just adding a little more cream or milk.
Season with a generous grinding of black pepper and serve immediately. No salt necessary.
Makes about 310ml/1 cups of sauce

1 groot ui, fyn gekap, braai dit in ‘n bietjie olie tot deurskynend.
Voeg ‘n 1/2 koppie gekapte droe appelkose by en ‘n 1/2 knoffel huisie.
Voeg ‘n 1/2 koppie water by en nou ‘n 1/2 koppie chutney,
