OIL SCONES WITH CHILLI’S AND CHEESE
Dry Ingredients
500 grams Self Raising Flour,
½ tsp Salt,
2 cups of Mature Cheddar Cheese,
2 chopped chillies,
1tsp mustard powder,
chopped coriander leaves.
Wet Ingredients
150 mls oil,
3 eggs,
150mls milk (Mix together, I use a shaker)
Method
Preheat the oven to 200C and slightly grease an oven tray with butter.
Combine the wet ingredients with the dry slowly using a knife (Cut it in until it comes together) Don’t knead the dough. Put onto a floured surface and press it down to about 1 and a half inches. Cut with a scone cutter and place on the oven tray. Bake for about 12 minutes until nicely browned. (If you have any wet ingredients left, glaze it on top of the scones before cooking. If you feel the dough is not wet enough, add milk.
