SKAAPSTERTJIES MET WITWYN
Hierdie groot bederf is vinger-aflek-lekker.
30 skaapstertjies
3 heel naeltjies
sout, peper en koljander na smaak
250 ml tamatiesous
100 ml chutney
100 ml worcestersous
250 ml witwyn
1 ui in ringetjies
Sny die ui in ringetjies in n oondvastebak. Pak die skaapstertjies daarop en geur met sout, peper en koljander. Gooi jou 3 heel naeltjies in. Meng die res van die bestandele. Gooi oor die vleis.
Braai toe by 180 grade celsius vir 45 min. Maak dan oop en braai vir nog 90 minute oop. Draai die stertjies tyd tot tyd om.

JAMAICAN LAMB CURRY

JAMAICAN LAMB CURRY
Serves 6
800g diced leg of lamb, mutton or goat
2 heaped tablespoons Caribbean Curry Powder
1 large onion, chopped
2” piece of root ginger, grated
2 cloves of garlic, crushed
1 scotch bonnet pepper, seeded and chopped
Small (approx 2”) piece of cinnamon stick
Salt and black pepper
Oil for marinating and browning
Approx ½ pint of hot water

Place the lamb in a bowl and stir in the onion and curry powder, add a little of the oil as this helps the spice stick to the meat. Cover with cling film and leave to marinate in the fridge for at least 1 hour but preferably overnight.
Heat a glug of oil in a heavy frying pan or wok. Scrape away as much of the onion as possible from the lamb and set to one side.
Brown the meat in batches until well coloured.
Reduce the heat and add the onion, garlic, ginger, scotch bonnet, salt and pepper and fry gently for 5 minutes until the onions begin to soften.
Add the water and cinnamon stick to the pan, give everything a good stir, cover and leave to simmer for 1 hour. Check the pan half way through and add more water if required.
After 1 hour taste check for seasoning and sauce consistency, the gravy should be nice and thick and the meat tender. Boil rapidly to reduce if necessary.

Al baie kerrie geëet maar hierdie een was die beste ooit. Resep hier onder, maar ons het bok gebruik.
Gebruik Mother In Law as jy nie carribean curry kan kry nie. Dit is potent maar baie lekker. 1.5 eetl op die resep was vir ons lekker. Maar miskien te veel vir iemand wat nie van sterk hou nie. Die moeder van alle kerrie. Die het cumin, coriander, turmeric, red or black pepper, cardamom, clove , mustard, ginger, bay leaf, fenugreek in . Sit chilli in as jy wil. Baie carribean.

Het besluit om vir my Pa se verjaarsdag iets te probeer met ‘n skaapboud.
Het die skaapboud ontbeen en in blokkies gesny.
Ek het so ¼ koppie sweetchillie sous
¼ koppie gewone blatjang
so ½ koppie Griekse slaaisous
1 koppie kookolie
so 2 eetlepels sojasous
en so ½ teelepel kaneel en sommer klomp gemengde vars kruie , sout en peper,
en so 2 eetlepels fyn knoffel deurmekaar geroer en bo-oor vleis gesit en alles geroer. Nou moet dit staan tot Donderdag wanneer ek kebabs gaan maak. Sal foto plaas as ek klaar kebabs gebraai het.

STADIG GEKOOKTE SKAAPSKENKELS
1,2kg skaapskenkels (ek het myne gemeng helfte blesbok/lam )
1t sout
1/2 T peper
2 uie (ekt 1 ui gebruik)
2,5ml gekapte knoffel
2,5ml gedroogte tiemie
2k beesvleisaftreksel
4 E sojasous
4 E port (ek het Old Brown Sherry gebruik)
2 E koekmeel
Sampioene (ek het dit gelos en aartappels ingesit)
Geur die vleis met sout en peper! Braai in bietjie olie, skep uit en braai ui,knoffel en tiemie tot sag. Skep vleis terug. Voeg aftreksel by en bring tot kook punt! Meng sojasous, obs en koekmeel tot glad! Voeg by vleis! Verlaag temperatuur en prut (Myne was 1 en n half uur op 3) toe sny ek aartappels in kwart voeg by en stel plaat op 4 vir 30 min!
Ek het myne bedien op stampmielies
HEERLIK! DIS FLIPPEN LEKKER!!!! MENS SE LIPPE BLINK EN IS SOMA SO KREWERIG!!!!

Meat tenderiser
BBQ spice

Sout

Gooi Meat tenderiser oor en Marineer vleis in sous vir so uur.
Vee sous met jou hande af en braai vleis in pan met bietjie olie.
Sny die ui, wortels, mushrooms op en sit onder in pan. Meng n eetlepel knoffel met dit.
Gooi die speserye en sout oor vleis.
Meng die sous en wyn met mekaar en gooi oor vleis. Bedek met foelie.
Bak in 180°c oond vir 2 ure

GAIL’S LAMB KNUCKLE POTJIE
1 kg lamb knuckles, washed and trimmed, dust in seasoned flour
2 large onions, sliced
4 sticks celery, chopped
3 large potatoes, cut into cubes
4 carrots, chopped into chunks
1 punnet mushrooms, sliced
1 punnet green beans, trimmed
1 small tin tomato paste
1 punnet baby marrows
mange tout
mini corn
2 sprigs fresh rosemary, leaves pulled off stalk
1 sprigs thyme, chopped
1 chicken stock cube dissolved in 200 ml boiling water
1 cup red wine (optional ) add more stock if not using wine
black pepper and salt last according to taste

Toss knuckles in seasoned flour and dust. Brown in potjie pot in 2 tbsp oil. Once browned, remove. Add onions and celery and cook until tender, add more oil if needed. Add fresh herbs, chicken stock, wine, tomato paste. Add meat back into potjie and cook for 1½ hours. Then add carrots and potatoes and cook a further ½ hour. Add your other vegetables and cook a further 15 mins. Garnish with chopped parsley.

Nou ja ek wou dit toets en so het dit gekom. Julle kan natuurlik die vulsul vir enige iets anders gebruik.
1 grroot ui fyn gensy in blokkies so 3×3 mm
Ek het een pakkie baby Spinasie gekoop en die blare in kwarte gseny.
Een ring Feta kaas in blokkies gesny so omtrent 1 cm
50 gram cheddar kaas in blokkies gensy so 4×4 mm
6 stringe streaky Bacon op gesny.
Alles bymekaar gemeng en ekstra sout en growwe swart peper oor gegooi.
Skaap hart oop gesny en die vulsul binne in gesit.
Toe maak ek die een hart toe met streaky bacon en die ander los ek net so oop. Alles in die oond gebak op 180 grade vir so n uur
Die vulsul was genoeg vir 4 skaap harte.
As jy lewer en niertjies eet kan jy maar die probeer dis beter.

suurlemoen
rooiwyn
1 knoffelhuisie, uitgedruk.
Bak in die oond teen 150 grade, 30 min.
Basting sous:
50 ml sweet chilly sous
perske konfyt
100 ml suurlemoen sap
150 ml soya sous
20 ml worcester sous
1 knoffel huisie gerasper
130 ml stroop
sout en peper

Nadat die rib in die oond gebraai het, braai op kole en smeer met sous.

RED WINE SAUCE
1 750-ml Cabernet Sauvignon or other dry red wine
3 cups unsalted beef stock or canned unsalted broth
1 14 1/2-ounce can low-salt chicken broth
3 large shallots, finely chopped
Combine wine, beef stock, chicken broth and shallots in large saucepan. Boil until liquid is reduced to generous 1 cup, about 45 minutes. (Sauce can be made 1 day ahead. Cover and chill.)

GARLIC SAUCE
1 tablespoon olive oil
24 garlic cloves, peeled, left whole
1 cup dry red wine

2 tablespoons finely chopped parsley (preferably flat-leaf)
To make the garlic sauce, heat the olive oil in a heavy skillet and cook the 24 garlic cloves slowly for about 10 minutes, or until they are soft (don’t let the edges get crisp—or brown). Set aside in a small bowl.

As for your lamb. Season tour lamb with salt and pepper.
Add some garlic cloves to your roasting pan (I use a whole head of garlic because in my opinion lamb loves garlic).
I hardly ever have fresh herbs on hand so I use dried rosemary and thyme in the bottom of the pan with 2 cups of good chicken stock.
Ànd slices of 1 lemon. Brown your roast on top of your stove to give it a beautiful color (just nice for presentation plus it adds a little more flavour).
Preheat your oven on the highest setting while you do this.
Place the browned lamb into your pan with the stock.
Cover with a lid or foil.
Turn your heat down to 160 ºC and cook for 30 minutes.
Turn your heat to 100 ºC and let your lamb cook for five to eight hours.
If you like it cooked welldone then the internal temp should be 77 degrees.
