SALWAA’S LAMB-MUTTON BREYANI (OLD STYLE)
From My Kitchen To Yours – keeping our heritage alive!
This is my late moms recipe. 3 generations actually.
750 g lamb, mutton pieces
For the marinade:
3 stick cinnamons
5 cardamom pods
2 bay leaves
5 cloves
5 allspices
1 tablespoon grated ginger
1 tablespoon grated garlic
2 – 4 green chillies, deseeded and chopped
2 teaspoons koljana / coriander
½ teaspoon coarsely crushed black pepper
3 teaspoons jeera / cumin
2 teaspoons leave masala / roasted masala
1 – 2 teaspoons chilli powder
2 teaspoons garam masala
2 medium tomatoes
½ cup plain yoghurt
½ bunch fresh dhanya, chopped
2 teaspoons salt
½ – 1 cup brown lentils from Akila foods
4 large potatoes
1 cup vegetable oil
3 large onions
3 – 4 cups long grain or basmati rice Akila Foods
2 bay leaves
2 stick cinnamons
2 teaspoons salt
2 tablespoons butter
Wash and drain the meat or chicken. Using a large dish or bowl add the meat and spices.
Liquidise ginger, garlic, tomato and yoghurt together. Pour this mixture on top of the meat. Add the ¾ of the chopped dhanya. Mix well and cover with cling film. Leave to marinade for at least two hours in the fridge or better still overnight. This will allow all the flavour to develop and the meat to be really flavourful.
Meanwhile boil the lentils, the amount of lentils depends on your taste, my family doesn’t like a lot of lentils in breyani, so I only use half a cup.
Peel, wash and cut the potatoes into round slices. Heat the oil in a saucepan. Fry the potatoes in the oil until lightly browned. Remove and set aside.
Peel and cut the onions into thin slices. Fry the onions in the same oil as you fried the potatoes until brown and crispy. Remove and set aside, reserving the oil.
Add the marinated meat into a large pot and cook until the meat is soft and tender about 35 – 45 minutes, depending on what cut or type of meat you using.
Parboil the rice with the salt, cinnamons and bay leaves. As soon as the water start bubbling remove from the heat our into a colander, rinse and leave to drain.
Mix the parboiled rice and cooked lentils into a bowl.
Now start the layers. Add a layer of potatoes in a large, deep and lightly greased ovenproof dish.
Then a layer of rice and lentils mixture. Add a layer of the cooked meat, including the sauce, followed by some of the fried onions. Continue layering the potatoes, rice, onions (reserve some onions for garnishing) until all the ingredients have been used and finishing with a layer of rice. Garnish with the braised onions, reserved dhanya and the butter, cut in pieces. Add 1 cup of hot water. Cover tightly with foil or the lid of the ovenproof dish. Cook in a preheated oven at 180ºC for 45 – 60 minutes.
Ensure you dish from all the layers by inserting your dishing up spoon right down and lifting it up. This way you can be sure to get from all the elements of the dish.
Serve with dhai (yoghurt sauce), tomato and onion salad or atchar.
I used Akila Foods brown lentils and Basmati rice.

HEERLIKE SKAAPVLEIS  IN TAMATIE
Vandag bietjie gekook. Skaap in tamaties, boontjies en aartappel mash, soetwortels met vars gemmer en heuning, blomkool in kaassous en gebakte aartappels.
Heerlike skaap in tamaties.
1.5 kg skaapvleis
1 blik tamatiepuree
1 blik heel kersie tamaties
750 ml bees aftreksel
250 ml rooiwyn
2.5 ml kolander
2.5 ml komyn
2.5 ml paprika
2.5 ml tiemie
2.5 ml origanum
2 teelepels suiker
sout en peper na smaak
1 eetlepel knoffel
Braai skaapvleis aan beide kante tot geseël. Voeg al die bestanddele by, bedek met deksel of foelie en bak teen 180ºC vir so ongeveer 2.5 ure.

Ek het n bietjie vetvleisies oorgehad van my mince makery en toe vir my kaaiings gemaak
Vet vleis in 20 × 20 mm blokkies gesny
Plaas in n kastrol en kook tot goudbruin roer aanmekaar sodat dit nie aanbrand nie kokery was min of meer n uur
Gooi dan die vet af in bak vir latere gebruik
Gooi dit uit op handoekrol papier
Gooi die kaaiings in n plastiek sak en sprinkel n bietjie sout oor en hou die sak toe terwyl jy dit skud om sodoende orals sout te kry oppie kaaiings
Hmmmmmmmheerlik

Plaas lamsvleis saam met ‘n blikkie tamaties en uie, lamspeserye en ‘n blokkie Knorrox mutton flavour in ‘n baksakkie. Voeg blokkies aartappels daarby saam met 250ml water. Seël die baksakkie en maak ‘n paar gaatjies in die bokant om die stoom te laat ontsnap. Bak vir ‘n uur en 30 minute by 180ºC in die oond.

Brine:
½ koppie suurlemoensap
250 g sout
½ koppie suiker
5 eetlepels gemaalde swartpeper
½ koppie suurlemoensous

Opgelos in water.
Brine oornag.
Smeer sout, swart peper en droëwors speserye in die kop.
Braai in ‘n bak in die weber vir 1 uur.
Braai indirek vir 2.5 ure verder.
Bedrup met sous na 3 ure.
Sous:
3 eetlepels worcestersous
¼ koppie blatjang
¼ koppie suurlemoensous

GIDEON SE OONDGEBAKTE SKAAPKOP
1 skoongemaakte skaapkop
1 groot aartappel, geskil en in blokke gesny
1 groot ui, in die middel deur gesny
sout en peper na smaak

Plaas die kop in ‘n groot kasserol saam met ‘n koppie water.
Bak dit dan in die oond vir 1 uur op 120°C en gooi die water af.
Plaas terug in kassserol saam met ‘n ¾ koppie water.
Geur met sout en peper en bak vir ‘n verdere 6 ure op 120°C.
Plaas dan die aartappels en uie rondom die kop en bak vir ‘n verdere uur.
Haal die deksel af en verbruin vir 20 min op 200°C.
Koel af en geniet.

LEKKER BRUIN GEBRAAIDE KOS
met soet butternut , blomkool met kaassous en rys.
Gebraaide kos
2 kg lamsvleis , baie uie
1 kg aartappels
vars gekapte knoffel
twee oxo hoender blokkies
garlic en herbs en naeltjies
sout en peper

Kap en braai uie tot lekker bruin asook knoffel.
Voeg jou vleis by en braai tot dit wil begin vassit aan boom en bruin is aan eenkant.
Draai vleis om. Sit nou deksel op sonder water en braai in uie sous tot droog.
Voeg naeltjies asook blokkies gekrummel byvoeg en garlic en herbs uit botteltjie asook sout en peper by.
Roer deur en voeg water bietjies by dit moenie op een slag als bykom nie.
Hou dop.
Sodra vleis sag is voeg aartappels by en voeg water by as moet. Hou dop. Roer liggies eenmaal deur om aartappels eweredig bruin te kry.
Sodra aartappels sag is en lekker bruin met lekker sousie sit stoof af.

6 Tbs Honey
8 Tbs reduced-sodium soy sauce
2 tsp freshly grated lemon zest
6 Tbs lemon juice
½ tsp cayenne pepper
1 Tbs olive oil
Salt and ground black pepper to taste
1 kg Pork neck or lamb shoulder chops
Marinate at least 2 hours. Use the marinade to baste during grilling turning the chops twice during the grilling time.

GILLIAN SE FLIPPEN LEKKER SKAAPNEK

Ek braai my skaapnek bruin alkante met olyfolie, haal uit.
Braai uie en of sampioene lekker sag, gooi skaapnek terug in swartpot/stoompot.
Gooi nou 100% appelsap by en bedek al die vleis.
Prut vir ongeveer 1.5 ure in stoompot en vir 2-3ure in swartpot/swaarboompot.
So 30-40 minute voor opdien gooi wortelringe en gesnyde groente by.
Onthou die sout, peper en geurmiddels. Ek gebruik sommer Flippen Lekka Spice, geen ander geurmiddels.
Ek hou daarvan om vleisous te kook totdat dit self verdik, maar jy kan sampioensoppoeier met water of melk aanmaak en by roer tot verdik.

OUMA MAX SE LAMS PASTA
My Ouma was ‘n stoere Hollander vrou met vele talente. Sy het nou nie veel van Italiaanse kos af geweet nie maar lekker lams pasta kon sy beslis maak. As kind het my Ouma by ons in die huis gebly. Sy is nou al 35 jaar oorlede, maar ek maak nog gereeld haar pasta. Ek deel graag die resep met julle. Ek het dit bietjie aangepas om voorsiening te maak vir die nuwerwetse kruie op die mark. Hoop julle geniet dit.
1.5 kg skaap, lam skenkels of nek
500 g macaroni
2 eetlepels braaivleis speserye
1 eetlepel Aromat
2 eetlepels Ina Paarmans Garlic and Herb
2 eetlepels Ina Paarmans Roosmarein en Olyf kruie
2 eetlepels Ina Paarmans Vegetables kruie
1 beef blokkie
Gooi al die bestanddele BEHALWE DIE PASTA in ‘n stoompot.
Bedek met genoeg water sodat die vleis sowat 5 cm onder die water is.
Stoom vir 1 uur as dit lam is en 1 tot twee ure as dit skaap is. Die vleis moet van die bene afval.
Voeg nou die pasta by en laat kook tot sag.
Laat staan vir ten minste ‘n uur. Die pasta absorbeer al daai heerlike sous.
Bedien met ‘n groen slaai of lekker beet slaai as jy wil.
