BANANA PANCAKES


BANANA PANCAKES
Also known as Flapjacks in South-Africa
3 bananas, mashed
1 cup cake flour
2 eggs
5 ml baking powder
5 ml vanilla essence

Mash the three ripe bananas.
Add all the other ingredients and mix well.
Add tablespoons full to a non-stick pan.
When the pancake is making holes on top, turn over and let it get golden brown on both sides.
Serve with some maple syrup and for breakfast!

LEKKER PLAATKOEKIES
1 koppie koekmeel
2 eetlepels suiker
knippie sout
2 teelepels bakpoeier
1 eier
1 teelepel vanilla essense
2 eetlepels olie
1 koppie melk

Voeg alle droë bestanddele in bak en vorm ‘n gat in die middel. Klits eier, melk, olie en vanilla essense in ‘n koppie eenkant en voeg in die bak saam met die droë bestanddele. Roer deur tot dit gemeng is. Maak ‘n pan warm en voeg klein bietjie olie in. Skep lepels mengsel in die pan en bak tot dit bruin is aan albei kante.

PLAATKOEKIES VIR DIE KLEINTJIES
Vanoggend vir my dogtertjie plaatkoekies gebak en vorms uitgesny vir haar. Sy was baie opgewonde toe sy hoor ek maak plaatkoekies vir skool.
Hier is die resep:
1 eier
62 ml strooisuiker
125 ml melk
12,5 ml olie
250 ml koekmeel
10 ml bakpoeier
1 ml sout
heuning
botter

Klits eier met eierklitser in mengbak. Voeg suiker by.
Voeg helfte van melk en al die olie by eiermengsel. Klits weer goed.
Sif koekmeel, bakpoeier en sout saam in ‘n ander mengbak.
Voeg meelmengsel by eiermengsel. Roer met houtlepel totdat daar nie klonte is nie.
Roer orige melk stadig by beslag totdat dit goed gemeng is. Moet dit nie langer roer nie.
Skakel stoofplaat op mattige hitte.
Smeer braaipan met olie en sit op plaat om warm te word.
Gebruik eetlepel en skep 3/4 lepelsvol beslag op ‘n keer in die pan.
Draai elke koekie versigtig om sodra daar lugblasies is.
Bak die ander kant ook tot hulle uitgerys en albei kante ligbruin is.
Bedien met botter en heuning.

COURGETTE – BUCKWHEAT PANCAKES
When I ask my son what I should prepare for dinner, you can be sure as hell he wants pancakes or crepes. He isn’t a typical guy. He doesn’t like meat. He likes groats, rice, potatoes, vegetables and salads, and he leaves the meat to the end. When I was a child I was the opposite. First, I ate what I liked the least so that I could relish my favourite dish.
Today I would like to share with you a recipe inspired by my son’s taste. I recommend courgette-buckwheat pancakes, which I served with horseradish dip on a natural yoghurt base.
The recipe comes from Lidl cookery book.
100 g of buckwheat groats
1 onion
300 g of courgette
2 cloves of garlic
3 tablespoons of minced parsley
150 g of 18% cream
1 teaspoon of baking powder
4 tablespoons of flour
2 eggs
salt and pepper
Wash the courgette, grate it, add salt, stir, leave for 15 minutes and then drain it. Boil the buckwheat groats until they are soft (not al dente). Dice the onion and crush the garlic. Mix the groats, eggs, parsley and onion. Add the drained courgette, cream, garlic and spice up the mixture with salt and pepper. Mix everything together. Fry the small pancakes in heated oil. Serve the hot pancakes with cold horseradish dip.

BAKED PANCAKES WITH MILLET GROATS AND CAULIFLOWER
100 g of millet groats
200 g of cauliflower
4 tablespoons of wholemeal flour
half an onion
a clove of garlic
3 teaspoons of nigella
2 eggs
salt and pepper
Heat the oven up to 180 C. Cover a baking sheet with some baking paper.
Boil the millet groats in salty water. Dice the cauliflower and onion. Crush a clove of garlic. Mix together the groats, eggs, cauliflower, flour, onion, garlic and nigella. Spice it up with salt and pepper. Form small pancakes and put them on the baking paper. Bake for 20 minutes.

TRACY’S FLAPJACKS

TRACY’S FLAPJACKS
1 ½ cup cake flour
1 teaspoon baking powder
1 pinch salt
2 tablespoons sugar
1 large egg
¾ – 1 cup milk
1 tablespoon butter, melted
Sift the flour, baking powder and salt together into a bowl. Stir in the sugar.
In another bowl or a jug, beat the egg with ¾ cup of the milk and the melted butter.
Make a well in the dry ingredients and add the liquid mixture. Without over-mixing, stir until combined, adding more milk if the mixture is too stiff. The mixture should be able to drop off the end of a spoon.
Heat a lightly buttered non-stick pan on a medium heat. Drop dessert spoonfuls of the mixture into the pan, allowing room to turn the pikelets. When the pikelets bubble, turn and cook the other side. Remove from pan and keep warm in a clean tea towel.
We have it with butter and syrup and cream but I didn’t have cream, but it’s great for a anytime snack and this only makes a couple (ABOUT 6) so if you have a big family you can double it but it’s great for ours just this one batch.

GRANARY PANCAKES WITH BILBERRY MOUSSE
Today I would like to share with you the recipe for “slimmed down” pancakes. Luckily, I don’t have any problems with fruit in my children’s diet; they like all kinds of fruit. But I know that for other parents pancakes could be the best way to sneak some vitamins into their food.
I found the recipe for the pancakes at the Polish “wegepedia.pl”, and it appealed to me instantly because of the easy and basic preparation and the yummy look of the pancakes.
200 g of granary flour
1½ teaspoon baking powder
4 tablespoons of brown sugar
1 flat teaspoon of cinnamon
300 ml of vegetable milk
Other ingredients
100 g of bilberries
30 ml of water
3 dates
Mix the sugar, flour, baking powder and cinnamon in a bowl. Pour the milk in and stir until you make a smooth dough. Put small portions of the dough into a pan (with a non-stick surface) and fry on both sides until the pancakes are golden. If you have another pan, use a bit of oil for frying. Use a handful of bilberries for decoration. Blend the rest of the clean fruit with the dates and water. Leave in the fridge for a while. Decorate the hot pancakes with the fruit mousse and bilberries. Serve at once.

DESIRé SE PIESANG PLAATKOEKIES
1 ¾ koppie koekmeel
10 ml bakpoeier
knypie sout
1 eetlepel suiker
1 ¾ koppie melk
1 eier
1 piesang fyngedruk
Meng droë bestanddele. Klits eier en melk. Voeg droë bestanddele by en klits goed.
Laat staan vir ‘n rukkie. Bak lepelsvol in gesmeerde pan.

DESIRé’S BANANA FLAPJACKS
1 ¾ cup cake flour
10 ml baking powder
1 ¾ cup milk
1 tablespoon sugar
Pinch of salt
1 egg
1 banana mashed up

Mix dry ingredients. Whisk egg and milk. Add dry ingredients en whisk well.
Leave it to stand for abit. Bake spoonfulls in pan.

YUMMY FLAPJACKS
Serves: 25-30 Crumpets
500 ml cake flour
2 eggs
5 tablespoons sugar
1 ½ tablespoons butter, melted
4 teaspoons baking powder
1/3 teaspoon salt
250 ml milk
Beat the eggs and gradually add the sugar.
Add half of the milk and the melted butter to the egg mixture.
Stir well.
Sift the flour, baking powder and salt and add to the egg mixture.
Gradually stir in the remaining milk to form a smooth mixture.
If all ingredients are well mixed then don’t stir anymore.
Drop spoonfuls of dough into a greased heavy bottom frying pan or into a “griddle”.
Turn once the top is full of air bubbles (bottom should be golden brown) and bake on the other side.
Serve with butter and syrup, honey or jam.

BLOUBESSIE PLAATKOEKIES
Liezl het vanoggend vir ons lekker flap jacks gemaak en was djeerlik.
2 koppie hawermout (oats)
1¼ koppie melk
2 piesangs
1 eier
3 eetlepels grondboontjiebotter
1½ teelepels bakpoeier
1 eetlepel stroop (Voeg die stroop laaste by.)
1 pakkie vars blueberries / bloubessies

Meng alles saam behalwe die bloubessies in ‘n voedsel verwerker en laat staan vir ‘n half uur.
In ‘n matige, maar redelik warm pan skep kleinerige porsie waarby drie bloubessies gevoeg is en braai twee min, draai hulle om en braai nog ‘n minuut.
Op die einde het ons ‘n klompie beslag oorgelos en een grootte gemaak, julle weet natuurlik vir wie  het ek gespoil met kaas en stroop.
Pak drie lae op mekaar met bloubessie konfyt, kaas en stroop of wat jou keuse is tussen die lae en siedaar.
Ons het ‘n teflon pan gebruik met net ‘n sprinkel olie in.
