CHARLOTTA’S QUICHE TOAST CUPS
1 rasher of bacon, rind removed, diced
¼ onion, finely diced (brown, white or yellow)
1 teaspoon oil
6 slices white sandwich bread (fresh)
2 regular size eggs (or 3 small)
⅔ cup milk
⅓ cup cheese, grated (tasty, gruyere, cheddar)
2 teaspoon parsley, finely chopped
salt and pepper
oil spray
Preheat oven to 180º C
Heat 1 teaspoon oil in small pan over high heat. Add onion and bacon and sauté until bacon is crisp – about 2 minutes. Remove from heat and set aside (you can just leave it in the pan).
Cut bread into rounds or just cut crusts off. I use a tomato can (emptied and washed) – the perfect size to cut rounds to fit into muffin tins out of bread, pastry etc.
Use a rolling pin to flatten the bread.
Lightly spray 6 muffin tin holes with oil spray, then press the bread into the muffin tin.
Place in oven for 3 minutes. Remove from oven and set aside. The toast cups should not be browned, just a bit dry.
Whisk together the egg, milk, parsley and a pinch of salt and pepper.
Divide the bacon mixture between the 6 toast cups, then the cheese.
Pour 2½ tbsp of egg mixture into each cup, then immediately place in the oven. If you take too long between pouring the egg mixture into the toast cups and putting it in the oven, the egg will start soaking into the bread.
Bake for 12 to 15 minutes until the top is lightly golden and the filling is set.
Remove from oven and rest for 5 minutes before serving. The filling will be puffed up but it will deflate while resting.
Serve warm.
NOTES
This recipe does not work with stale bread because you cannot flatten it and when you try to mould it into the muffin tray, it will crumble. Trust me – I tried.
The purpose of popping the toast cups into the oven for a few minutes is to dry the bread out a bit so it doesn’t soak up the egg mixture. The bread should not brown so it doesn’t matter if the oven is not quite up to 180º when you put the toast cups in.

500 g maalvleis
½ klein ui, gekap
250 ml tamatiesous
30 ml aangemaakte mosterd
sout en pepper na smaak
15 ml bruinsuiker
10 ml asyn
knippie kerriepoeier
50 g Cheddar-kaas, gerasper
Breek maalvleis los en plaas in skottel van 1 litrt. Voeg ui by en mikrogolf vir 4 min op vollekrag. Roer vleis los en mikrogolf tot gaar – 1 tot 2 min. Dreineer oortollige vog. Voeg tamatiesous, mosterd, sout en pepper, bruinsuiker, asyn, kerriepoeier en kaas by. Meng goed en bedek en hou in yskas tot benodig. Om voor te sit, skep omtrent 80 ml van mengsel op broodrolletjie en mikrogolf vir half tot 1 min per rolletjie.

BREAKFAST CUPS MADE WITH BREAD
6 white slices bread
3 eggs
grated cheese
6 slices sandwich ham – diced
1/2 punnet of mushrooms sliced and lightly fried
tomato and onion relish

Pre-heat the oven to 180ºC
Cut out rounds on the bread. (I used a 500 ml beer glass).
Line a greased muffin pan with the bread rounds, bake for 3 minutes.
Fill with diced ham, mushrooms, grated cheese, spoon of tomato and onion mix, top with an egg.
Season and bake in a pre-heated oven at until egg is set +- 15 minutes.

Balsamic rosa tomatoes
Lightly fry rosa tomatoes in coconut oil until skins are soft, add a dash or two of balsamic vinegar, cook for a couple of minutes and serve.
Note:
Next time I make it, I’ll flatten the bread with a rolling pin first as well.

OMELETTE WITH COURGETTE AND TOMATO SALSA
This year thanks to my sister I have a lot of fresh chili pepper. Because my children don’t like spicy dishes I add the chili pepper only to meals for adults. I think next spring I will again ask her for some cuttings, because they are quite strong and look so beautiful.
Today I added a bit of chili pepper to tomato-basil salsa. Because it was quite spicy I decided to add it to a mild dish. I prepared an omelette with courgette and goat cheese. The salsa added an excellent piquancy to it. I recommend this dish for a fast and light meal.
Omelette:
3 eggs
150g of courgette
3-4 slices of goat cheese
2 tablespoons of milk
1 tablespoon of flour
1 tablespoon of butter
salt and pepper
Salsa:
2 tomatoes
3 tablespoons of minced basil
quarter of an onion
2 cloves of garlic
half a chili pepper
3 tablespoons of olive oil
2 tablespoons of lemon juice
1 teaspoon of honey
Start by preparing the salsa. Cube the tomato and dice the garlic, onion and chili pepper. Mix the vegetables together. Make a sauce with the olive oil, lemon juice and honey. Add it to the vegetables and mix it in. Leave in the fridge.
Slice the courgette very thin. Whisk the eggs with the milk and add the flour. Spice it up with salt and pepper. Melt the butter in a pan. Pour half the egg mass into it and fry for a while at medium heat. Arrange half of the courgette slices on top along with the slices of goat cheese and the rest of the courgette. Pour the rest of the egg mass onto it and fry it. When the eggs have congealed, turn the omelette upside down and fry for a few seconds. Serve at once with the tomato salsa.

2 MINUTE MICROWAVE OMELETTE IN A MUG
Spray and cook a mug. Beat 2 eggs lightly, add the filling of your choice, microwave on high for 2 minutes.
I used diced tomato, mushrooms and last night’s leftover mince. Warmed it slightly before I added it to the egg mixture.
Tips – use a large mug as the mixture rises out the mug whilst cooking, once it’s cooked it settles down.
I see in the original recipe, it says stir after 1 minute (which I never did), so maybe that’s the reason for the egg popping out the mug.

brood rolletjies
gerasperde kaas van jou keuse (ek het cheddar gebruik)
piesang, gesny
spek stukkies, gebraai
eiers
sout en swartpeper

Sny die top gedeelte van die broodjies af (soos ‘n deksel) en verwyder die binneste om ‘n bakkie te maak. Hou die afgesnyde dele as deksels vir later.
Plaas die bestanddele in lae in die broodjie soos volg: 1ste kaas, gesnyde piesang, kaas, spek stukkies, breek ‘n eier laastens bo-op die lae.
Strooi sout en swartpeper oor en sprinkel bietjie kaas oor die eier.
Sny die korsie gedeelte van die verwyderde stuk brood af en plaas dit terug oor die eier om ‘n deksel te vorm.
Sprinkel kaas bo-oor en plaas die broodjies in ‘n oondbak. Bak die broodjies in die oond op 180°C vir 25 min.

1 medium ui, fyn gekerf
2 blikkies baked beans in tamatie sous
1 eetlepel rajah kerrie
½ teelepel komyn
knypie sout
½ teelepel vars knoffel
Braai ui in bietjie olie tot sag en gaar. Voeg res van bestanddele by en prut vir so 20 – 30 minute. Geniet saam met pangebraaide boeliebeef, gebakte eier en roosterbrood.

En natuurlik my “all time favourite” en baie eenvoudig, maar heerlik:
Meng 1 blik baked beans met 2 of 3 eetlepels Cross en Blackwell mayonnaise. Nie Trim nie, regte mayo. Dit is absoluut heerlik!

Whisk together 2 eggs and 1 teaspoon of tapioca flour until “lump free”.
Add mixture to a hot pan, cook until it has a bit of a tan 30 – 45 seconds, flip and tan other side.
Fill with ingredients of your choice.
These wraps can be used for a light lunch or supper as well, quick, easy and versatile.

I lightly fried:
½ red onion
½ punnet of mushrooms
1 diced tomato
½ packet of julienned baby marrows
Enough filling for 3 wraps, sprinkled with Italian flat leaf parsley.

FOOD LOVERS RECIPES
500 ml koekmeel
15 ml bakpoeier
2 ml sout
knypie rooipeper
360 g oorskiet hoender, fyn gesny
6 snytjies gipsy ham, in blokkies gesny
60 g gerasperde kaas
500 ml melk
2 eiers

Voorverhit die oond 200°C.
Spuit muffin pannetjies met kleefwerende middel.
Sif droë bestanddele saam.
Voeg hoender, ham en kaas by.
Klits melk en eiers saam.
Voeg by meelmengsel en meng tot ‘n slap deeg.
Skep die holtes van die muffinpannetjies twee derdes vol deeg.
Bak vir 20 minute tot goudbruin.
