BERRY AND WHITE CHOCOLATE SELF SAUCING PUDDING
BERRY AND WHITE CHOCOLATE SELF SAUCING PUDDING
60 gr butter
2/3 cup milk
1/2 teaspoon vanilla extract
1 1/2 cup self-raising flour
1/2 cup castor sugar
400 grams mixed berries
1 cup white chocolate pieces/ buttons
Sauce
1 cup white chocolate pieces/ buttons
1 1/2 cups milk
2 1/2 teaspoons cornflour
1/4 cup castor sugar
Preheat oven to 180ºC
Place butter and milk in microwave-safe jug. Microwave on high for 1 minute, stirring halfway through or until butter has melted. Stir in vanilla.
Place flour and sugar in a bowl. Add milk mixture to flour mixture. Stir to combine.
Stir in berries and chocolate
Spoon mixture in 8 cup capacity baking dish.
Sauce
Place white chocolate and milk in microwave-safe jug. Microwave till chocolate has melted.
Place cornflour and sugar in another jug. Gradually add milk mixture, stirring until smooth and combined.
Pour sauce over the back of a large metal spoon to cover pudding batter.
Place in oven and bake for 35 to 40 minutes, or until a skewer inserted into the edge of pudding comes out clean.
Serve with cream or ice cream.
