SAGOJELLIE
Die nagereg wat julle soek is baie gewild op basaars.
Kook en geniet se Sago jelly, ons maak dit baie jy kan die met enige kleur jellie maak, ons doen met rooi jellie.
2 ½ koppie water (625 ml)
1 pakkie jellie poeier
1 eetlepel sago (15 ml)
1 tot 2 eetlepels suiker (ongeveer 15-30 ml)
geklitste room en vars vrugte (opsioneel)

Voeg ½ koppie (125 ml) van die water by jellie en laat 5 min week.

Verhit dit dan oor kookwater en roer aanhoudend tot gesmelt, hou warm.
Kook res van water en voeg sago daar by, kook tot sago gaar en deurskynend is.
Versoet met suiker.
Haal nou jellie van stoof af en voeg sago daarby, laat effens afkoel.
Klits mengsel nou tot verdubbel in grote sowat 5-10 min.
Skep dit dan in vorm wat met koue water uitgespoel is en laat stol.
Gooi uit en versier met vars room en vars vrugte.

JELLY CAKE


JELLY CAKE
5 colour jellies made with only half the water.
Leave to set.
Cube all jellies and place into a silicone ring.
Sprinkle 24 g of gelatine over 250 ml of water and leave for 1 min.
Meanwhile place 300 ml of condensed milk, 300 ml of heavy cream and 1 teaspoon of vanilla in a blender. Stir in 250 ml of hot water to gelatine. Stir until dissolved the add to blender.
Gently pour creamy mix over cubed jelly.
Place into fridge to set completely.

STERI STUMPIE CHOCOLATE MOUSSE
200 g dark chocolate, chopped
1 cup cream
1 cup chocolate Steri Stumpie
1 cup (100 g) chopped white marshmallows
chocolate for garnish
Mini marshmallows for garnish
½ cup whipped cream for garnish

Heat chocolate, the Steri Stumpie and the marshmallows in a dry, heatproof bowl over a pot of simmering water, stirring until melted and smooth (about 10 minutes). Remove from heat and allow to cool to room temperature.
Beat the cream to soft peaks and fold through chocolate mixture. Pour into glasses or bowls and refrigerate for at least 6 hours or overnight before serving.
Top with a blob of whipped cream and sprinkle with chocolate shavings and mini marshmallows before serving.
I amended the recipe as follows:
Used two X 85 g Aero Choc slabs + a handful of choc discs
Used pink and white large marshmallows, cut them into small pieces instead of the mini marshmallows.
Used 1 x Caramelfie steri stumpie 350 ml
I added chopped marshmallows and bits of Aero for the topping.
Note:  I would think it would yield between 6 portions depending on the serving size.

MEESTERLIKE BAKLAVA


MEESTERLIKE BAKLAVA
1 pak fillo deeg met 12 velle wat ons halveer het (24 stukke enkel velle) wat ontdooi is soos voorgeskryf. Trim die velle om jou bak of bakplaat te pas.
Hou velle wat nie in gebruik is nie met ‘n klam handdoekpapier toe om uitdroging te voorkom.
Smeer die sye en bodem van die bakpan met botter.
Begin dan met die sous wat moet afkoel terwyl die baklava voorberei word.
Voeg in ‘n medium souspan:
1 koppie suiker
½ koppie heuning
2 eetlepels suurlemoensap
¾ koppie water

Bring mengsel tot kookpunt op medium hitte terwyl geroer word en tot diesuiker opgelos is.
Verminder hitte tot laag en kook vir ‘n verder 4 minute sonder om te roer.
Verwyder van hitte en laat staan om af te koel.
Voorverhit oond tot 160°C.
Maak 4 pakkies van 100 g elk se walnuts fyn in voedselverwerker of sommer met ‘n roller en meng dit met ‘n teelepel kaneel (4 koppies).

Pak 6 gebotterde lagies filo deeg op bodem van bak.
Strooi omtrent ‘n koppie neute oor die velle deeg en herhaal nog drie keer.
Pak die laaste laag weer 6 velle heel bo-op.
Bak vir omtrent 40 min tot effens bruin.
Gooi stroop oor en laat heeltemal afkoel.
Sny in blokke en geniet saam met roomys.

GRANADILLA EN SJOKOLADE KOEKSTRUIF
1 sponskoek
1 blik (380 g) karamel kondensmelk
12 ryp granadillas se pulp of jy kan die granadilla pulp in die blikkies ook gebruik (ongeveer 3 blikkies)
1 L (4 koppies) Griekse jogurt
4 (32 g elk) Flake-sjokoladestafies, gekrummel

Sny die sponskoek in stukke en pak die helfte daarvan in ’n groot, diep glasbak.
Skep die helfte van die karamel bo-op die koek, gevolg deur die granadillapulp.
Skep die helfte van die jogurt bo-oor en sprinkel van die Flake bo-op die jogurt.
Herhaal met die res van die bestanddele en eindig met sjokolade en granadillapulp.
Laat staan ’n uur of oornag in die yskas.

LEMON ASPEN CURD


LEMON ASPEN CURD
40 g butter, cubed
3 egg yolks
⅓ cup lemon aspen juice
75 g caster sugar

Quandong Jam:
100 g quandongs, chopped
100 g caster sugar
100 g water

Brik Pastry:
100 g flour
125 ml water
½ tsp vinegar
½ tsp grapeseed oil
pinch salt
50 g butter, melted

Soft Cheese Mousse:
100 ml thickened cream
50 g caster sugar
100 g fresh soft cheese

Preheat oven to 180ºC.
For the Lemon Aspen Curd, whisk together all ingredients and then place in a medium saucepan over low heat, stirring constantly until the curd thickens and coats the back of a spoon. Strain into a bowl and allow to cool completely. Transfer to a piping bag and set aside in the fridge until needed.

For the Quandong Jam, combine all ingredients in a small saucepan and stir occasionally with a wooden spoon over medium heat until the mixture reduces and becomes a jam consistency, about 10 minutes. Remove from the heat and set aside.

For the Brik Pastry, place a small saucepan of water over medium heat and bring to the boil. Once boiling, sit a crepe pan over the saucepan of boiling water.
Combine flour, water, vinegar, oil and salt in a food processor and blitz to a smooth batter. Transfer the batter to a bowl.
Using a pastry brush, brush the batter, in broad strokes onto the hot crepe pan to form a very thin layer about 12cm in diameter. When the edges of the pastry start to lift, carefully flip the pastry sheet. Remove from pan and set aside on a lined baking tray and continue process with remaining batter to yield a further 7 sheets.
Brush the pastry sheets with melted butter and then bake in the oven until crisp and golden brown, about 12-15 minutes. Remove from the heat and set aside.

For the Soft Cheese Mousse, whip the cream and sugar to stiff peaks in a medium bowl. Fold the fresh soft cheese through and set aside in the fridge.

To serve, spread a small circle of Soft Cheese Mousse in the middle of each serving plate, top with a teaspoon of Quandong Jam, and pipe dots of Lemon Aspen Curd on top. Cover with a sheet of Brik Pastry. Spread another circle of the Soft Cheese Mousse into the middle of the Brik Pastry, spoon another teaspoon of the Quandong Jam and pipe some dots of the Lemon Aspen Curd on top to finish.

4 piesangs
2 kiwi vrugte
2 koejawels (grootes)
2 nektariens
trossie druiwe, in helftes gesny en pitte uitgehaal
10 aarbeie, in skyfies gesny
1 pynappel, in blokkies gesny (het die stronk verwyder)
1 groot pappino, ook blokkies gesny
2 eetlepels suiker
sap van 1 lemoen

Sny alle vrugte op, meng deur en sit ‘n paar mint blaartjies by.

Nota:  Om te verhoed dat jou piesang verkleur in die slaai, sit die hele piesang met skil en al in kookwater vir 1 min, haal uit, laat heel afkoel, en skil dan en sny, of sny die piesang in skyfies en spoel af in lekker koue water voor jy dit in die slaai sit – Rina Kleinhans




DRAGON FRUIT MOUSSE TART( low cal, low fat, no dairy)


DRAGON FRUIT MOUSSE TART (low cal, low fat, no dairy)
400 g Cremora dissolved in 1 cup boiling water and chilled.
1 packet Moirs DRAGON FRUIT jelly dissolved in 125 ml boiling water
2 packets Moirs guava instant pudding
Toppers lemon biscuits crumbs

Use an electric blender to whip Cremora to a mousse like texture. (10 min.)
Add cooled jelly all while blender is running.
Add dry instant pudding a little at a time.
When thoroughly mixed pour onto cookie crumbs in a tart dish.
Put some crumbs on-top if prefered.

Tips:
Use any flavor jelly and instant pudding to make your own combinations.
This keeps very well in the fridge – long fridge life.

TANI’S WIND TORTE


TANI’S WIND TORTE
Frans en Swiss
Met die gewone Franse Meringe het ons nie ‘n issue gehad nie, maar ons droog tyd was langer as die resep.
Serve 12
Prep time 1 – 2 Hours (Eintlik was dit langer)
Cook time 2 hours Plus (Ons het oornag in die oond gedroog teen 50°C om die Meringe spierwit te hou)
Equipment:
piping bag with 1.5 nozzle
piping bag with star nozzle
clean small paintbrush
sugar thermometer
30 cm heat proof to 120 serving plate (Ons het nie een gehad nie en sommer ‘n Corningwear bord onderstebo gedraai vir die toets koek)
French Meringue Shell
8 large egg whites
½ teaspoon cream of tarter
475 g caster sugar
Swiss Meringue Decoration
4 large egg whites
250 g caster suger
(Decoration flowers)

Filling:
600 ml double cream
50 g icing sugar
1 teaspoon orange blossom water
400 g strawberries
200 g rasberries

Line 3 baking trays with baking Parchment.
Draw 5 x 20 cm circles on the wrong side of the paper.
Preheat the oven to 120ºC or 100ºC if fan driven.

Meringue Shells:
Whip cream of tarter and egg whites to stiff peaks.
Add caster sugar 1 tablespoon at a time until glossy Meringue.
Spoon 2/3 into a piping bag with a 1.5 cm plain nozzle.
Pipe a thick ring inside the circle (remember to pipe on the side that the ring is not on – you don’t want the circles to transfer onto your cake)
3 x rings (hoops) and 2 times disks – fill the inside of the rings to form a disk, these will become the lid and base of the cake.
Bake for 45 min and remove from the oven to cool (We found this was not enough time and we had to dry it for longer – so we turned the heat down to 50ºC and let it dry over night.

Next you are going to assemble the parts and cover the sides – because we continued the next morning we made a fresh batch of French Meringue ½ of the original amount.
Place a disk on a heat proof plate 30 cm and place 8 blobs of meringue around the edges – place the first hoop on top.
Place 8 blobs on the first hoop and place the second hoop on top – do the same with the third.
We put the third hoop upside down so it can have a lovely flat surface for the lid to fit onto.
now pipe in between the rings and cover the sides – as in the picture.

Dry on a serving plate at 120 ºC or 100 ºC fan driven for 45 min (As I said before it needed extra drying)
Start the Swiss Meringue for the decoration of the lid and sides as soon as the body of the cake is dry.
The recipe states that you set a large clean mixing bowl over a pot gently simmering water.
Tip eggs and sugar into bowl.
Wisk until sugar is dissolved and the Meringue reaches 70 ºC. (This took very long and ours only got up to 65 ºC)
Remove from the heat and continue whisking until the egg whites are glossy cool and stiff.
Spoon into a bag with a star nozzle.
Pipe the decoration on the lid and around the cake – we found the large nozzle was to big for around the sides, the Meringue was to heavy it wanted to slide off – so we used a smaller nozzle.
It says bake for 30 min at 120 ºC or 100 ºC fan driven but once again we found it took longer – we turned it down to 50 after 30 min and left it longer.
We kept a bit of the Swiss Meringue to use as glue to attach the fondant flowers to the cake.
You can make the cake in stages and store it in an air tight container for a week before filling it.

Filling
Whip cream and icing sugar into a bowl to soft peaks.
Wisk in orange blossom.
Gently fold in fruit.
Spoon into a cold cake shell.
Top with lid.
Once the filling is in – serve.

Terug voer van die bediening –

1. Die koek vertoon lieflik – ons het ‘n waardige verjaarsdag kandidaat gekry (Tannie Anna) die lieflike dame in die foto.

2. Die outjie sny nie perfek soos ‘n gewone koek nie – dis ‘n opgedoliede Pavlova – die Meringue breek. – so sny op ‘n apparte doek of in ‘n skinkbord om die krummels op te vang. Ons het die deksel met bietjie ekstra Meringue afgewerk maar ek dink die deksel kon bietjie dunner gewees het.

3. Ons het die room minder soet gemaak omdat die Meringue soet was – ons kon maar die suiker in die Meringue ook minder gemaak het. Persoonlik was die koek bietjie aan die soet kant vir my, maar van die ander gaste was nie regtig gepla nie. Dit was ‘n uithaler naagereg.

4. Ons het Aarbeie, bloubessies en rooi granaat pitte in die room gehad – dit was lieflik – ons het nie lemoen bloeisel geursel gahad nie – ons het dit met vanilla vervang. Dalk sou ‘n paar stukkies super fyn lemoen skil die ding gedoen het.

Na alles dink ek dis ‘n statement koek en een van daai reseppies wat mens vooraf kan maak en dan net op die dag van bediening kan vul om ‘n indrukwekkende afsluiting van jou ete te gee. Dit lyk ingewikkeld, maar as ek en Ouma dit kan doen kan enige persoon op die forum dit ‘n ‘go’ gee.

SJOKOLADE CRUNCHIE STAFIES


SJOKOLADE CRUNCHIE STAFIES
2 houertjies room (500 ml)
1 blikkie kondensmelk
4 Crunchie sjokolades
coconut tea biscuits of koekies van jou keuse

Klits room styf.
Gooi blikkie kondensmelk by en klits weer tot styf.
Breek 3 van die Crunchies en meng met mengsel.
Pak koekies onder in 2 broodpannetjies.
Skep helfte van die mengsel in een pan en die ander helfte in ander pan.
Breek laaste Crunchie en strooi bo oor die twee pannetjies.
Maak toe met kleefpapier en sit in vrieskas oornag.
Sny in blokke, dit is rerig baie lekker.
