MY QUICK AND EASY CHOCOLATE MOUSSE
Ok…I know you know how to do it…just a teaser for those who don’t…
Ingredients
2 cups fresh cream (double cream preferably)
2 tsp. vanilla extract
1⁄2 tsp. kosher salt
4 egg whites
1⁄2 cup fine sugar (Castor sugar)
6 oz. (170g) bittersweet chocolate, melted and cooled
Chocolate shavings, to garnish
Instructions
In a large bowl, beat cream, vanilla, and salt with a whisk until stiff peaks form; chill. In another large bowl, beat egg whites with a whisk until soft peaks form. While whisking, slowly add sugar, and continue beating until stiff peaks form. Add melted chocolate to egg whites, and fold until almost incorporated; add whipped cream and fold until completely incorporated. Divide among serving cups and chill for 2 – 3 hours. The longer, the better consistency.
Sprinkle with chocolate shavings before serving. (Chocolate mint adds a different taste)
Ps: The salt releases the flavours of the chocolate and adds to a glorious taste!

1 blik kondensmelk,
2 blikke water,
6 eiers,
1/2 kp suiker
Klits alles saam. Smelt half koppie suiker stadig, tot ligbruin , gooi onderin ‘n glasbak, dan eiermengsel bo-op en bak vir 1-2 uur in n koel oond (so 130- 150) tot gestol. Verkoel en keer om op ‘n bord vir bediening.

Jy maak so:
Pak n pakkie sponsvingers onder in bak. Gooi nou een groot blik fruit cocktail met sous bo oor. Maak twee pakkies caramel kitspoeding aan soos op die pakkie en skep bo oor vrugte. Dan klits jy 250ml room en skep dit oor en krummel dan n flake bo oor. Jy kan neute ook insit.
Toe ons dit die eerste keer gemaak het het ons dit net daar opgeeet en weer bestandele gaan koop vir nog een. Hierdie is n treffer!!

Het vanoggend my staatmaker “kos vir die Kenner” deur C.Louis Leipolt geraadpleeg oor my trifle vir more…Op hierdie eenvoudige Trifle resep afgekom…Miskien moet Trifle eenvoudiger gemaak word?

Wit brood in vrugte stroop gedoop en met konfyt gesmeer.
Pak daarop ‘n laag ingelegte vrugte, dan weer
‘n laag met gedoopde brood, met nog ‘n laag vrugte.
Bo oor word warm dik vla gegooi wat dit alles deurweek.
En daarop kom die geklitse room.
Geklitsde room :
voeg by geklitse room, die gerasperde skil van ‘n suurlemoen, vier eetl strooisuiker en ‘n kelkie soetwyn of brandewyn.

1 Roll Puff Pastry
6 Groen Appels geskil en ontkern
Margarien
Donker bruin suiker
Kaneel
All Spice
Sous/vla
1 Blik Kondensmelk
2 Kop Kook Water
100grm Margarien
60ml Vla poeier
Voorverhit oond 200’C
Roll deeg bietjie dunner uit.
Sny in 6 ewe groot blokke
Plaas ‘n appel op elke blok.
Druk margarine in appel holte (nie meer as helfte vol nie)
Druk nou suiker bo op die botter.
Strooi met lekker baie kaneel en ‘n bietjie van die all spice.
Vou die appels toe in die deeg, en plaas in gesmeerde bak.
Bak vir 20min.
Meng intussen die kondensmelk en kookwater en ook die margerien saam tot botter gesmelt is.
Gooi by apples en bak verdere 10min.
Gooi bietjie meer as die helfte van die sous af in ‘n beker.
Klits vlapoeier by die afgegooide sous tot glad.
Gooi als terug by die apples.
Bak laaste 20min tot goudbruin en die vla effens geset is.
Bedien saam room of roomys op…..

1 cup water
2 Tbs sugar
200g good quality dark chocolate, broken into squares
4 egg yolks
2-3 drops mint oil or essence, to taste
1 Tbs brandy (optional)
250ml cream
Mint chocolates to decorate

Boil sugar and water for 3 minutes. Process in food processor with dark chocolate until smooth. Press down on food processor so it doesn’t splash out. Add egg yolks and blend 15 secs. Add mint essence, brandy and cream and blend 10 secs. Pour into a jug then into 8-10 shot glasses and freeze overnight or until firm.

To serve, decorate each parfait with a mint chocolate. In the photo I used a mint chocolate bar which was green in the middle, roughly chopped. Alternatively use a fresh mint leaf. Remove from freezer 20-30 minutes before serving, so they are not rock hard.

Serves 8-10

Note: you can make this without a food processor. Just add chocolate to sugar syrup, stir to dissolve, then mix in remaining ingredients.

CHOCOLATE CAKE
200 g dark chocolate
100 g butter
4 eggs
100 g caster sugar

CHOCOLATE CREAM
250 ml milk
125 ml cream
2 eggs
75 g sugar
75 g chocolate drops

GARNISH
cherry liqueur to taste
1 jar of cherry jam
cherries
2 dl cream
chocolate chips

For the chocolate cake:
Place the butter and chocolate in a steam-oven pan without holes.
Melt the butter and chocolate that has been chopped, in the combi-steam oven. Choose Steam, 100 ° C for 4 minutes.
Beat eggs with sugar until creamy and light with a food processor.
Stir after steaming, well into the melted chocolate.
Pour chocolate mixture in the egg mixture and mix well.
Pour the batter into a porcelain cooking container. Cover with heat-resistant foil and place it in the combi-steam oven. Choose Steam, 100 ° C for 24 minutes.
Remove the heat-resistant foil and allow the chocolate cake to cool.

Meanwhile, make the chocolate cream.
Mix the cream with the milk and bring the mixture to boil on the stove.
Mix the eggs with sugar and make a smooth mixture of it.
Slowly add the hot mixture to the egg mixture.
Pour the batter into a deep porcelain cooking container and place it in the combi-steam oven. Choose Steaming, 90 ° C for 40 minutes.
Remove the cream from the combi-steam oven and sprinkle the chocolate pearls in the mixture. Mix the cream with an electric mixer until it becomes a fluffy mass.
Allow the cream to cool.

Break half of the chocolate cake into large pieces. Cover these pieces with the cherry jam.
Put the cake in a large, beautiful glass bowl.
Cover the cake with cherries and liqueur to taste and let it absorb.
Cover the cake with chocolate cream.
Repeat this last step from the break.
Cover the trifle with plastic wrap and let stand in the refrigerator for one night.
Before serving garnish with a generous layer of whipped cream and chocolate shavings.

Ingrediënten
De chocoladecake:
200 g fondantchocolade
100 g boter
4 eieren
100 g fijne suiker
De chocoladecrème:
250 ml melk
125 ml room
2 eieren
75 g suiker
75 g chocoladedruppels
Afwerking:
kersenlikeur naar smaak
1 pot kersenconfituur
opgelegde kersen
2dl slagroom
chocoladeschilfers
Bereiding
Maak de chocoladecake.
Leg de boter en de chocolade in een stoomovenpan zonder gaatjes.
Smelt de boter en de chocolade, in stukjes, in de combi-stoomoven. Kies Stomen, 100°C gedurende 4 minuten.
Klop de eieren met de suiker tot een crèmige, lichte massa met de keukenrobot.
Roer, na het stomen, goed in de gesmolten chocolade.
Giet het chocolademengel bij het eiermengsel en meng goed.
Giet het beslag in een porseleinen stoomovenpan. Dek af met hittebestendige folie en plaats deze in de combi-stoomoven. Kies Stomen, 100°C gedurende 24 minuten.
Verwijder de hittebestendige folie en laat de chocoladecake afkoelen.
Maak ondertussen de chocoladecrème.
Meng de room met de melk en breng het mengsel aan kook op het kookvlak.
Meng de eieren met suiker en maak er een vloeiend mengsel van.
Voeg langzaam het warme mengsel bij het eiermengsel.
Giet het beslag in een diepe porseleinen stoomovenpan en plaats deze in de combi-stoomoven. Kies Stomen, 90°C gedurende 40 minuten.
Haal de crème uit de combi-stoomoven en strooi de chocoladeparels in het mengsel. Mix de crème met een staafmixer tot een luchtige massa.
Laat de crème afkoelen.
Breek een halve chocolade cake in grote stukken. Bestrijk deze stukken met de kersenconfituur.
Leg de cake in een grote, mooie glazen kom.
Overgiet de cake met de likeur naar smaak en kersen en laat dit intrekken.
Bedek de cake met chocoladecrème.
Herhaal deze laatste stappen vanaf het breken.
Bedek de trifle met plastiekfolie en laat 1 nacht in de koelkast staan.
Voor het serveren werkt u af met een rijkelijke laag slagroom en chocoladeschilfers.

Die is my eie weergawe van “basaar poeding”
Ek het 40 botteltjies gemaak.
3 pakkie jellie
1 blik kondensmelk
1 blik Idealmelk

Maak 3 aparte bakke jellie aan soos aangewys op die pakkie en koel 2 af tot kamertemperatuur.
Die ander bak jellie kan sommer dadelik in die bottels geskep word om die onderste laag te vorm, plaas solank in die yskas.
Vir die ander 2 lae:
Sodra die jellies kamertemperatuur is, klits die kondensmelk by die 1 bak jellie en skep bo-op die eerste laag jellie in die bottels.
Plaas weer in die yskas.
Klits die Idealmelk styf, klits die laaste jellie daarby in en skep op die ander 2 lae.
Laat stol die poedings. Versier bottels na eie keuse.

Ingredients
1 qt. strawberries, halved (about 3 cups)
3 cups fresh pineapple chunks
4 kiwi fruit, peeled and sliced
1 cup sugar (Mom used 1/2 cup)
1/2 cup pineapple juice
1/2 cup ginger ale
1/4 cup chopped fresh mint
Directions
1. Place fruit in a shallow serving bowl.
2. Whisk together sugar, juice, and ginger ale until sugar is dissolved.
3. Gently stir in mint, and pour over fruit.
4. Cover and chill 2 hours before serving
Serves 8-10

SWEET PULL APART PUDDING
1 can Pillsbury country biscuits (10 count)
½ cup walnut pieces (use ¼ at a time)
±150 g mascarpone
1ml cinnamon
½ cup demerara sugar (use ¼ at a time)
2 ml vanilla essence
¼ cup chocolate chips

Spray a pan thoroughly with spray and cook or margarine, or whatever you prefer, but make sure it’s well-greased.
Sprinkle ¼ cup of nuts in the bottom of pan
Place 5 of the biscuits on the nuts, but pull them slightly open in order for them to be more oblong than round to fill the base better.
Mix the mascarpone, cinnamon, ¼ cup sugar and vanilla with a fork till well blended.
Divide this mixture and spoon over each biscuit in equal quantities.
Place the other 5 biscuits on top of this mixture, also giving them a slight pull and place in such a way that you cover the gaps of the bottom row.
Top with chocolate chips and remaining nuts and sugar. You may wish to use less sugar, if you do not want to have it overly sweet.

Bake at 180ºC for approximately 20-25 minutes, till biscuits have a nice brown color

Note: You can use any variation of nuts, chocolate as you prefer.
