Choc Mousse: (my recipe)
250g dark chocolate
2 large eggs
250ml fresh cream
5ml vanilla essence
Melt dark chocolate in microwave, cool down slightly. Separate yolk & whites. Whisk whites until stiff peak stage & in a separate bowl whisk cream until stiff peak stage. With an electric beater, add beaten yolks, egg whites & vanilla essence to the melted chocolate, gently fold in cream (I do all of this with my electric beater). Mousse is light & fluffy.
Coconut & Brandy Truffles: (my recipe)
I baked chocolate muffins using a premix. My hubby made the truffles
by adding brandy & store-bought barone icing to a couple of crumbled muffins, rolling into bite size balls & coating in coconut. Refrigerate in an air tight container until needed.

Upside down cheese cake:
I followed the recipe to a point (1L bulgarian yoghurt, 1 tin condensed milk mixed with 125ml lemon juice until thick, mix with yoghurt, microwave for 5 min, WITHOUT THE BISCUIT BASE), put the mixture into a sealed container for later use. I assembled the cheese cake in little vessels & realised I forgot the biscuit base, so sprinkled the crushed biscuits on top of the cheesecake mix (hence the name), top with granadilla pulp
Peanut butter & pretzel truffles: (source – eatingwell.com)
½ cup crunchy natural peanut butter
¼ cup finely chopped salted pretzels
½ cup milk chocolate chips, melted
Combine peanut butter and pretzels in a small bowl. Chill in the freezer until firm, about 15 minutes. Roll the peanut butter mixture into 15 balls(about 1 teaspoon each). Place on a baking sheet lined with parchment or wax paper and freeze until very firm, about 1 hour. Roll the frozen balls in melted chocolate. Refrigerate until the chocolate is set, about 30 minutes.

Mini milktart: (source – rainbowcooking.co.nz)
1 can (397 gram) condensed milk
3 1/4 cups (800 ml) fresh milk (you can also the empty condensed milk cans as measure: you need 3 cans full of milk)
1/4 cup plus 1 tablespoon (75 ml) cornflour
1/4 teaspoon (1 ml) salt
2 eggs
1 teaspoon (5 ml) vanilla essence, or vanilla seeds scraped from a vanilla pod
2 tablespoons (30 ml) butter
1 packet South African Tennis biscuits, or if not available, any other square or rectangular biscuit.
Pour condensed milk and 2 1/2 tins of fresh milk into a saucepan and bring to simmer.
Use 1/2 cup cold milk to prepare a paste with the corn flour, and add to the boiling milk. Stir continuously until the mixture thickens. Remove from heat.
Beat the eggs in a separate container and add spoonfuls of the thickened milk-mixture to slowly raise the temperature of the egg mixture until warm.
Add egg mixture to the thickened mixture while stirring continuously. Return to heat and cook slowly for a few minutes. It must be a very thick custard. Remove from heat.
Add butter and vanilla essence.
Pour into lined biscuits dish while mixture is still hot.
Dust with cinnamon. Allow it to set in the fridge, for 3 to 4 hours.
(Followed the same way as per the mini cheesecake by putting the mixture I.to a sealed container without the base for later use)
Strawberry shooters: (source – whitelightsonwednesday.com)
2 cups coarsely chopped meringue (used store bought)
250ml fresh cream
1 cup strawberries, finely chopped
Whip cream until stiff, combine all ingredients & fill shooter glasses, decorate with cut strawberries

FUNNEL CAKE
This was a really tasty dessert, I added more milk every now and then as the batter thickened the longer it stood which made pouring through the funnel difficult.
Funnel cake
2 eggs
1 cup 2% milk
1 cup water
½ teaspoon vanilla extract
3 cups all-purpose flour
¼ cup sugar
3 teaspoons baking powder
¼ teaspoon salt
oil for deep-fat frying
confectioners’ sugar

In a large bowl, beat eggs. Add milk, water and vanilla until well blended.
In another bowl, whisk flour, sugar, baking powder and salt; beat into egg mixture until smooth.
In an electric skillet or deep-fat fryer, heat oil to 375°F.
Cover the bottom of a funnel spout with your finger; ladle ½ cup batter into the funnel.
Holding the funnel several inches above the oil, release your finger and move the funnel in a spiral motion until all the batter is released, scraping with a rubber spatula if needed.
Fry 2 minutes on each side or until golden brown.
Drain on paper towels. Dust with confectioners’ sugar; serve warm.
Yield: 8 cakes.

Today I would like to share with you a dessert fit for a king. It needs a bit of work, but it is easy, and so tasty that you won’t regret the time you spent on it. I have already made chocolate whip with aquafaba. Today I added a bit of whisked sweet cream, due to which it is more creamy but it isn’t suitable for vegetarians.
You may use any fruit. In my opinion, bilberries, blueberries or raspberries are best. Cherries would also be excellent, but you may use your favourite fruit.
crumble topping:
50 g of butter
50 g of flour
50 g of sugar
1 tablespoon of sesame seeds
whip:
200 ml of aquafaba (from one tin of chickpeas)
150 g of white chocolate
150 ml of 30% sweet cream
30 g of caster sugarother ingredients
fruit
caster sugar
Heat the oven up to 180ºC. Cover a baking sheet with baking paper.
Make the crumble topping. Make a smooth dough with the ingredients. Make a ball with it, roll it out flat and put it on the baking paper. Bake for 10-15 minutes until it is golden. Cool it down and crumble it.
Melt the chocolate in a bain-marie and leave it to cool down a little. Whip the aquafaba and sweet cream with caster sugar in a separate bowl. Mix them together. Add the white chocolate and stir thoroughly but gently. Put the chocolate whip into some small bowls and leave in the fridge for 2 hours.
Put the crumble topping onto the chocolate whip. Decorate with the fruit and peppermint leaves.
Enjoy your meal!

There wouldn’t be anything special in this dessert if it wasn’t for its main ingredient. It was aquafaba – i.e. the liquid which is left after straining chickpeas from a tin. Up to now I have poured it away. From today I will never make this mistake. Joël Roessel, a French chef, was the discoverer of aquafaba. He wanted an alternative to eggs when preparing meringues.
Protein and starch are the only ingredients of aquafaba. It doesn’t have any other additives. Cold aquafaba can be whisked like an egg white. Next time I will try to prepare some meringues with aquafaba, but now I would like to share with you the recipe for an extremely simple chocolate whip. I served it with the sub acid from an apricot mousse. My children were delighted, and so were we.
Ingredients (for 4 people)200 ml of aquafaba (from one tin of chickpeas)
2 teaspoons of caster sugar
150 g of dark chocolate
6 apricots
2 tablespoons of lemon juice
2 tablespoons of brown sugar
Melt the chocolate in a bain-marie and leave it to cool down a little. Whip the aquafaba in a very clean glass bowl. Add the sugar spoon by spoon and whip constantly until the foam is stiff and glossy. Add the chocolate and stir thoroughly but gently. Put the chocolate whip into some small bowls and leave in the fridge for 3-4 hours. Wash the apricots and remove the stones. Put them into a pan with the lemon juice and sugar. Boil until the apricots are soft and the juice has evaporated a bit. Blend the fruit. Leave to cool down. Put the apricots onto the chocolate whip and decorate with some peppermint leaves.

Sorg dat jou roomys basis so hard gevries is as wat jy dit kan kry – berei verkieslik die vorige dag voor.
Sit jou oond op sy warmste stelling.
Gekoopte Madeira spons koek in 2 cm skywe gesny. Druk sirkels uit die grootte van die houers waarin jy die Alaskas gaan maak. Ek het Stainless Steel glase gebruik.
Sny roomys van jou keuse ook in 2 cm skywe en druk ook sirkels uit.
Vrugte coulis van jou keuse(vrugte pulp gemeng met suiker en gekook tot effens verdik) Ek het swart kersies gebruik.
Opsioneel: neute, vrugte stukke, koek krummels
Pak die roomys eerste in die houer, gevolg deur coulis, die opsionele items indien gebruik en heel laaste die skyf Madeira koek. Vries kliphard
Net voor jy die poeding wil voorsit, maak die meringue.
Meringue
2 eier witte,
150 g strooi suiker

Gooi strooisuiker in plat bord, verhit in warm oond tot baie warm maar nie gesmelt. Klits eier witte styf, gooi die warm strooisuiker lepels gewys in terwyl jy klits. Wanneer die mengsel ‘n blink skynsel het, is dit gereed.
Doop die gevriesde houers in kookwater vir paar sekondes en gly die inhoud uit op oondvaste bakplaat. Sorg dat daar minstens 1 cm tussen elke poeding is. Bedek elkeen met ‘n laag meringue (omtrent 1 cm dik), sorg dat daar geen stukkie is wat nie bedek is nie. Maak punte met ‘n platlem mes sodat die oppervlak ongelyk is.
Sit dadelik in die baie warm oond vir 3 – 4 minute tot die meringue net begin verbruin. Sit dadelik voor met nog coulis.

Afternoon tea with finger biscuits.
With my children in mind I prepared an extremely simple dessert using natural yogurt and biscuits as basic ingredients. It was supposed to be for children. By default, though, I prepared a bit more and we were all able to relish it.
Ingredients (for 4 people)
400 g of natural yogurt
200 g of finger biscuit
200 g of raspberries
2 teaspoons of caster sugar
Put aside a few nice raspberries and four finger biscuits. Crush the rest of the raspberries with a fork and mix them with the caster sugar. Crush the finger biscuits and blend them with the natural yogurt. Put the raspberry mousse and then the biscuit mixture into a cup. Decorate the top of the dessert with the raspberries and peppermint leaves.

SMALL STRACCIATELLA CHEESECAKE WITH FRUIT
Today I would like to share with you the recipe for a dessert which I prepared for the beginning of the holiday. The last school tests are behind us, the school reports received, the suitcases almost packed, so now it is time for a reward. My little stracciatella cheesecake isn’t that healthy, but sometimes we can overlook one small culinary peccadillo. After all, it is supposed to be a reward. For sure it was light as air, fluffy and melted in the mouth. And the pieces of the dark chocolate were so nice and crunchy. Try it yourself and like me you will fall in love with this dessert.
Ingredients (17cm cake tin)
100g of oatcakes
50g of butter
250g of mascarpone cheese
200g of 30% sweet cream
100g of white chocolate
100g of dark chocolate
fruit for decoration
Put the cookies in a plastic bag and crush them with a rolling pin, and then put them into a small bowl and mix them with the melted butter. Cover a cake tin with the dough. Leave it in the fridge for an hour. Melt the white chocolate in a bain-marie and leave to cool down. Break the dark chocolate into small pieces. Whisk the cream and then add the mascarpone cheese. Add the white and dark chocolate and stir it gingerly and thoroughly. Put the mixture on the bottom with the oatcakes and leave in the fridge overnight. Decorate with your favourite fruit.

KATARZYNA’S CHEESECAKE MUFFINS
Today, after an especially brave meeting with a nurse, I prepared some cheesecake muffins for my son. I used silicon pastry cases. The muffins look beautiful and the fresh strawberries and peppermint leaves make them even more special, so every gourmand will be delighted with them. I will tell you in secret that it is difficult to eat only one cheesecake.
Ingredients (6 muffins)
1 lemon jelly
10 big strawberries
200 g of vanilla fromage frais
grated skin from half a lemon

Dissolve the jelly in 250 ml of hot water. Leave to cool down (not to set). Wash the strawberries, remove the shanks and blend them. Mix half of the jelly with the strawberries. Put it into the silicon pastry cases. Leave it to set in the fridge. Mix the rest of the jelly with the vanilla fromage frais. Put it on the strawberry jelly. Leave it to set in the fridge. Immerse the silicon pastry case in hot water for a while to get the dessert out of the dish.
Enjoy your meal!

APPEL ROSE

APPEL ROSE
6 klein rooi apples. Ontpit, halveer en sny in dun skywe. (Ek verkies om dit nie te skil nie. Hou van die kontras)Kook dit vir 19 min oor medium hitte. Nie te sag of pap nie net sodat dit ferm maar buigbaar is.
Laat af koel maak intussen skiferkorsdeeg (op die groep se resepte) aan en rol dit lekker dun uit.
Sny repe van 15 cm x 3cm.
Pak jou appelskywe op die rand van die repe sodat die halfmane uitsteek bo die deeg.
Rol die repe dan op en druk die onderste rand aan mekaar vas en plaas in kolwyntjie pan.
Bak by 220 grade C vir 15 min.
Maak sous op stoof met volg.
Knippie sout.
Halwe koppie bruin suiker
5ml k neel.
10ml margarine en
1 koppie water.
Bring tot kookpunt en roer aanhoudend tot al suiker opgelos is. Kook verdere drie min lank.
Sprinkel sous oor die appelrosies sodra dit uit die oond kom.
As jy van kaneel hou kan jy dit ekstra oorstrooi voor jy dit bedien.
Kan net so bedien word of as nagereg met room of roomys.
