EASY CHOCOLATE CAKE

EASY CHOCOLATE CAKE
225g Plain flour
350g Castor Sugar
85g cocoa powder
1.5 tsp baking powder
1.5 tsp bicarbonate of soda
2 eggs
250ml milk
125ml veg oil
2 tsp vanilla extract
250ml boiling water
1. Preheat oven to 180C. Grease and line two 20cm sandwich tins.
2. For the cake, place all of the cake ingredients except the boiling water into a large mixing bowl. Using a wooden spoon or electric whisk beat the mixture until smooth and well combined.
3. Add the boiling water to the mixture, a little at a time, until smooth.(mixture will be very liquidy)
4. Divide the cake batter between the tins and bake in the oven for 25-35 minutes or untill the top is firm to the touch and a skewer inserted into the centre of the cake comes out clean.
5. Remove the cakes from the oven and allow to cool completely, still in their tins before icing.
Ek het sommer n koffie buttercream aan mekaar geslaan vir tussen en bo op, met n salted caramel centre.
Buttercream- Perfect for piping roses, borders ext:
250g Unsalted butter( room temp.)
4 cups icing sugar
1-2 table spoons of Milk
2tsp of extract of your choice.
Whisk the butter in a mixing bowl(I used my kenwood chef and Lurpack butter) till the butter is almost white and fluffy.(almost like cream). It takes me about 5-7minutes.
Now sift the icing sugar, then add half of the icing sugar and the extract of your choice and start on a slow speed till combined then put on high speed for about 2minutes, now add the other half of the icing sugar and 1 table spoon of milk and on low speed whisk till just combined then whisk on full speed for atleast 5-10minutes, the longer you mix, the fluffier the buttercream will be, if its too thick you can add the other tbs of milk.
Note: I used coffee extract and not real coffee. But can mix a 1-2 tbs of instant strong coffee in 2tbs of boiling water then cool down, and use instead of the Milk.
I know roughly when my buttercream is ready. It must have a drop consistency.
