RENEE’S OLD FASHION CHOCOLATE CAKE
Cake Ingredients:
1 1/2 cups (400 grams) granulated white sugar
1 3/4 cups (245 grams) all-purpose flour
3/4 cup (75 grams) unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 large eggs
1 cup (240 ml) warm coffee (Hazelnut flavour) my personal preference or (lukewarm water)
1 cup (240 ml) milk
1/2 cup (120 ml) canola oil
1 1/2 teaspoons pure vanilla extract

Icing Ingredients:
2 1/2 cups of sifted confectioner’s sugar (icing sugar)
1/2 cup cocoa powder
1/2 cup of butter at room temperature
4 – 6 tablespoons of table cream (you may require a bit more if needed) optional (half&half cream or milk)
1/2 teaspoon of pure vanilla extract
1/2 cup chocolate chuncks

Melt the chocolate in a heatproof bowl placed over a saucepan of simmering water.
Remove from heat and let it cool.
With a hand mixer, beat the butter until smooth and creamy.
Add the sugar and beat until it is light and fluffy and add in the vanilla extract.
Then add the chocolate and beat on low speed until it is incorporated.
Increase the speed to medium-high and beat until frosting is smooth, it should look glossy.
Preheat oven to 350 degrees F (180 degrees C) and place the rack in the center of the oven.
Use two non-stick 9 inch (23 cm) cake pans, line the bottoms of the pans with parchment paper.

Method for the cake:
In a large bowl whisk together the sugar, flour, cocoa powder, baking powder, baking soda, and salt.
In another large bowl, whisk together the eggs, coffee (or water), milk, oil, and vanilla extract.
Add the wet ingredients to the dry ingredients and whisk, until combined. (Your batter will be quite thin.)
Evenly divide the batter between the two pans and bake for about 27 – 30 minutes or until a toothpick inserted into the center of the cake comes out clean.
Cool on a cake rack.
On the bottom of your cakes cover with a thin layer of apricot jam or raspberry and frosting.
Cover the entire cake with the remaining frosting and top with Strawberries or Raspberries.
I halved the recipe and baked in a loaf tin for 50 mins.

SJOKOLADE SPONSKOEK MET SJOKOLADE MOUSSE VULSEL EN BOTTER VERSIERSEL
2 koppies koekmeel
4 eiers
2 koppies suiker, teelepel vanilla escense (ek het chocolate essence gebruik)
2 teelepels bakpoeier
¼ koppie kakao
125 ml melk
125 ml water
100 ml kookolie

Versiering
500 g versiersuiker
125 g botter
skeut suurlemoen sap
pakkie chocolate mousse

Maak sjokolade mousse aan en plaas in yskas om te stol. Gebruik so 50 ml minder vloeistof as wat op pakkie aangegee word vir ‘n stywer mousse.
Verhit tot lou warm die melk, water en olie.
Sif meel en kakao saam, in aparte mengbak, klits eiers en suiker tot suiker opgelos en mengsel donsig is.
Meng eier mengsel liggies by meel in.
Strooi bakpoeier bo oor meel en eiermengsel en dan lou warm melk mengsel en roer deur tot net gemeng.
Giet in koekpanne wat met waspapier uitgevoer is en bak teen 180 grade C vir 20-30 minute.
Laat afkoel in pan en keer dan uit.

Versiersel
Meng botter en versiersuiker saam tot romerig voeg skeut suurlemoensap by en meng deur.
Deel in twee en kleur soos verkies. Gebruik van die wit versiersel vir die “dirty icing” en kleur die res indien verkies.
Vir my koek het ek resep dubbel aangemaak en 28 cm koekpanne gebruik.
Ek het ‘n “damwalletjie” gepipe vir die mousse laag tussen koeke, die mousse in dammetjie geskep en gelyk gemaak, daarna plaas boonste laag koek op onderste laag en versier koek met dun laag “dirty icing”
Los koek dan in yskas vir so halfuur vir alles om te set en dan kan jy koek verder versier. As dit baie warm weer is hou koek liewerste in yskas tot jy dit bedien

MELISSA’S SWISS ROLL
3 large eggs, at room temperature
75 g (100 ml) castor sugar
75 g (135 ml) self-raising flour
castor sugar extra
about 60 ml apricot/raspberry jam
Heat the oven to 220°Cel. Grease and line with greased greaseproof paper a swiss roll tin 32,5 cm x 22,5 cm.

Whisk the eggs and sugar together in a large bowl until the mixture is light and creamy and the whisk leaves a trail when lifted out. Sieve the flour and carefully fold it into the mixture with a metal spoon.
Turn the mixture into the tin and give it a gentle shake or smooth with the back of the spoon so that the mixture finds its own level. Make sure that it is spread evenly into the corners.
Bake for about 10 minutes until the sponge is golden brown and begins to shrink from the edges of the tin.
While the cake is baking, cut a piece of greaseproof paper a little bigger than the tin and sprinkle it with castor sugar. Heat the jam until it is of a consistency that is just easy to spread. If it is too hot it will soak into the sponge.
Invert the cake onto the sugared paper. Quickly loosen the paper on the bottom and peel it off. To make rolling easier, trim all four edges of the sponge and make a score mark 2,5 cm in from the rolling edge, being careful not to cut right through.
Spread the cake with the jam, taking it almost to the edges. Fold the narrow strip created by the score mark down onto the jam and begin rolling, using the paper to keep the roll firm.
Leave to settle for a few minutes with the paper still around it. Lift the swiss roll onto a cooling rack and remove the paper. Sprinkle with more sugar and leave to cool.

ALTA SE SWARTWOUD KERSIEKOEK
2 koppies koekmeel
2 koppies strooisuiker
3 teelepels bakpoeier
knippie sout
½ koppie kookolie
7 ekstra groot eiers, geskei
½ koppie kakao
amper ‘n koppie vol kook water (so tusen ¾ koppie en vol koppie)
5 ml vanilla geursel
2 ml kremetart

Meng kakao en kook water goed en laat afkoel.
Sif droë bestandele saam (ek doen dit sommer in my Kenwood se bak).
Giet olie, eiergele en koue kakao mengsel by en klits goed.
Klits eierwitte en kremetart saam en vou in by sjokolade mengsel. Skep uit in 4 laag panne (kan ook koek in 2 groot panne bak en dan sny).
Bak in 180 ºC oond vir +-45 min of tot gaar. Ek toets maar, almal se oonde verskil.
Keer uit op draad rak en laat oornag staan om af te koel (as koek koud genoeg is sit ek dit in ‘n plastiek sak sodat dit nie uit droog nie).

Kersie vulsel:
1 houer swartkersies sonder pitte (in blikkie of bottel).
Hou van die kersies heel een kant en snipper die res op.
Gebruik die sous. Kook dit op lae hitte. Voeg nou ‘n knippie sout by ‘n hoogvol eetlepel vla poeier en ‘n ½ koppie water. As stroop kook, voeg vla mengsel by en kook, haal af van stoof en laat goed koud word. Klits nou so ‘n ½ liter room tot goed styf (ek het bakkies room gebruik). Dit klits mooi en word nie botter nie.

Nou vir die koek:
Deel kersie vulsel in 4 dele.
Gebruik 3 van jou lae koek en sprinkel liggies met kersie likeur. In elke een van die 3 lae smeer van afgekoelde kersie vulsel op koeklaag, nie tot op die kant nie. Spuit ‘n laag room en sit dan volgende laag op en doen dieselfde met elke laag.
Laaste laag spuit eers room in mooi rosette reg rondom koek en sit van die vulsel in die middel, versier met kersies wat gebêre was en versier met sjokolade krulle.
Kan ook in klein koekies bedien word.

BOKS- OF OONDPAN KOEK
500 ml kookwater
150 ml kakao
2 teelepels vanilla geursel
250 ml kookolie
Meng bogenoemde saam en laat staan eenkant.
6 eiers
750 ml suiker
3 ½ koppie koekmeel (vir wit koek 4 koppies koekmeel)
6 teelepels bakpoeier
knypie sout

Klits eiers en suiker vir 5 minute.
Meng Kookwater, kakao en kook olie saam.
Sif meel en bakpoeier saam.
Voeg die meel mengsel by kookwater mengsel en meng goed.
Voeg dit nou by eier en suiker mengsel en meng saam.
Bak 40 minute by 180 ºC.

Versiering:
Dis ‘n gewone sjokolade oondpan koek, versier met karamel, sjokolade “wafers” rondom wat ek vasbind met rooi lint en dan versier met astro’s, chocolate coated peanuts en wit- en donker sjokolade “shavings”. Met hierdie koek is dit nie nodig om enige ander lekkers voor te sit nie, hulle kry sommer al hulle suiker met een slag in!

HEERLIKE WITKOEK
220 g botter
110 g margarien
3 koppies suiker
5 eiers teen kamertemperatuur
3 koppies koekmeel
2 teelepels bakpoeier
¼ teelepel sout
½ koppie melk
½ koppie karringmelk
2 teelepels vanilla geursel

Meng botter en margarien tot lig en donsig.
Voeg eiers een een by.
Sif droë bestanddele saam.
Meng melk, vanilla en karringmelk saam.
Meng nou al drie mengsels bietjie, bietjie saam, begin met meel en eindig met meel
Moet nie oor meng nie.
Bak in 3 x 23 cm gesmeerde panne vir 25-30 min.
Hierdie koek is versier met Switserse botterroom versiersel

SWITSERSE BOTTERROOM VERSIERSEL
5 eierwitte
300 g suiker
1 teelepel vanilla geursel
500 g botter
4 koppie versiersuiker

Meng eierwit en suiker saam oor warm water tot suiker gesmelt is.
Klits met ballonklitser tot styf.
Met platklitser aan voeg nou vaniella by en begin om botter stukkie vir stukkie by te meng.
Die mengsel kyk nou pap en stroperig.
Voeg versiersuiker by en meng.
Plaas in yskas vir so 1 uur.
Smeer krummellaag op koek en tussen lae.
Druk sosatie stokkie in middel en plaas koek in yskas vir rukkie (die versiersel word nou harder maar nog steeds werkbaar).
Jy kan nou die res kleur of netso hou.
Versier die koek soos jy verkies Ek het net mooi toegesmeer en bietjie versiering bo-op geplaas.
Hierdie versiermengsel is bietjie stewiger as gewone botterversiersel en kan jy dus mooi patrone uitdruk sonder dat dit sommer smelt soos gewone sagte versiersel

GATEAU OPERA
For almond sponge cake
3 tablespoons cake flour (not self-rising), sifted after measuring, plus additional for dusting pan
2 whole large eggs at room temperature for 30 minutes
1 cup almond flour (3 1/2 oz) or 2/3 cup blanched whole almonds (see cooks’ note, below)
½ cup confectioners sugar, sifted after measuring
2 large egg whites at room temperature for 30 minutes
⅛ teaspoon cream of tartar
⅛ teaspoon salt
1 tablespoon granulated sugar
2 tablespoons unsalted butter, melted, foam discarded, and butter cooled

For coffee syrup:
1 teaspoon instant-espresso powder
½ cup plus 1 tablespoon water
½ cup granulated sugar
¼ cup Cognac or other brandy
For coffee buttercream:
2 teaspoons instant-espresso powder
¼ cup plus 1 tablespoon water
6 tablespoons granulated sugar
2 large egg yolks
1 stick (½ cup) unsalted butter, cut into ½-inch cubes and softened

For chocolate glaze
¾ stick (6 tablespoons) unsalted butter
7 oz fine-quality bittersweet chocolate (not unsweetened; preferably 70 to 71% cacao), coarsely chopped
1 offset metal spatula
1 candy thermometer
1 small sealable plastic bag
Special Equipment
a 15- x 10-inch shallow baking pan; an offset metal spatula; a candy thermometer; a small sealable plastic bag
PREPARATION
Make sponge cake:
Put oven rack in middle position and preheat oven to 425°F. Butter baking pan, then line bottom with a sheet of parchment or wax paper, leaving a 1-inch overhang on short sides, and generously butter paper. Dust pan with cake flour, knocking out excess.
Beat whole eggs in a large bowl with a handheld electric mixer at high speed until eggs have tripled in volume and form a ribbon when beaters are lifted, 2 to 3 minutes. Reduce speed to low, then add almond flour and confectioners sugar and mix until just combined. Resift cake flour over batter and gently fold in.
Beat egg whites in a bowl with cleaned beaters at medium speed until foamy. Add cream of tartar and salt and beat until whites just hold soft peaks. Add granulated sugar, then increase speed to high and beat until whites just hold stiff peaks.
Fold one third of whites into almond mixture to lighten, then fold in remaining whites gently but thoroughly. Fold in butter, then pour batter evenly into baking pan, spreading gently and evenly with offset spatula and being careful not to deflate (batter will be about 1/4 inch thick).
Bake until very pale golden, 8 to 10 minutes, then cool in pan on a rack 10 minutes.
Loosen edges of cake with spatula, then transfer cake (on paper) to a cutting board. Cut cake into strips and squares. Trim outside edges slightly, then carefully peel paper from strips and squares and set back on paper.
Make coffee syrup:
Stir together espresso powder and 1 tablespoon water until powder is dissolved. Bring sugar and remaining 1/2 cup water to a boil in a 1- to 2-quart heavy saucepan, stirring until sugar is dissolved. Reduce heat and simmer syrup, without stirring, 5 minutes. Remove from heat and stir in Cognac and coffee mixture.
Make coffee buttercream:
Stir together espresso powder and 1 tablespoon water until powder is dissolved. Bring sugar and remaining 1/4 cup water to a boil in a very small heavy saucepan, stirring until sugar is dissolved. Boil, without stirring, washing down any sugar crystals on side of pan with a pastry brush dipped in cold water, until syrup registers 238°F on thermometer (soft-ball stage; see cooks’ note, below).
While syrup boils, beat yolks in a large bowl with cleaned beaters at medium speed 1 minute.
Add hot syrup to yolks in a slow stream (try to avoid beaters and side of bowl), beating, then add coffee mixture and beat until completely cool, 3 to 5 minutes. Beat in butter, 1 piece at a time, and beat until thickened and smooth.
Make glaze:
Melt butter and all but 2 tablespoons chopped chocolate in a double boiler or in a metal bowl set over a saucepan of barely simmering water, stirring occasionally, until smooth. Remove top of double boiler and stir in remaining 2 tablespoons chocolate until smooth, then cool glaze until room temperature but still liquid.
Assemble cake:
Put 1 cake square on a plate, then brush generously with one third of coffee syrup. Spread half of buttercream evenly over top with cleaned offset spatula, spreading to edges.
Arrange both cake strips side by side on top of first layer (any seam will be hidden by next layer), then brush with half of remaining coffee syrup. Spread half of glaze evenly over top, spreading just to edges.
Top with remaining cake square and brush with remaining coffee syrup. Spread remaining buttercream evenly over top, spreading just to edges. Chill cake until buttercream is firm, about 30 minutes.
Reheat remaining glaze over barely simmering water just until shiny and spreadable (but not warm to the touch), about 1 minute. Pour all but 1 tablespoon glaze over top layer of cake and spread evenly just to edges. Scrape remaining tablespoon glaze into sealable plastic bag and twist bag so glaze is in 1 corner. Snip a tiny hole in corner and decorate cake (leave a 1/2-inch border around edges). Chill cake until glaze is set, about 30 minutes, then trim edges slightly with a sharp serrated knife.
Cooks’ notes:
If you can’t find almond flour, you can pulse whole almonds with the confectioners sugar in a food processor until powdery (be careful not to grind to a paste). To take the temperature of a shallow amount of syrup, put bulb in saucepan and turn thermometer facedown, resting other end against rim of saucepan. Check temperature frequently. Opéra cake can be made 2 days ahead. Cover sides with strips of plastic wrap and top of cake loosely with plastic wrap (once glaze is set) and chill cake. Remove plastic wrap from top immediately after removing cake from refrigerator and bring cake to room temperature, 30 minutes to 1 hour.

Custard
4 egg yolks
160 gr sugar
70 gr cake flour
500 ml milk
Beat eggs with sugar add flour.
Boil milk until warm not hot and add to egg mix place on medium heat and cook until custard thickens.

Sponge
4 eggs
240 gr butter unsalted
240 gr sugar
240 gr cake flour
berries and fruit of your choice

Cream butter and sugar until light in colour add lightly beaten eggs slowly add the flour. Pour into baking tray bake 160ºC for 40 min.
To decorate remove some of the cake from center and fill with custard place berries or fruit of you choice on top.

VANILLA CAKE IN FRYING PAN
My 1 st attempt of baking a cake in an electric frying pan.
Devine. Here’s the recipe.
3 eggs
125 ml sugar
5 ml vanilla essence
250 ml selfraising flour
60 g melted butter

Beat the egg whites till stiff, beat in sugar, egg yolks and vanilla. Beat until thick. Fold in sifted dry ingredients and melted butter. Fold in well.
Pour mixture into baking cake pan.
Place wire rack in frying pan, place cake pan on wire rack in frying pan, put the lid on and make sure the  “vent” is close,  put the pan on High for 90 mins, then place foil on top of cake and bake for another 30 mins. Cake is done

Butter icing:
125 g margarien
2 cups icing sugar and
5 ml vanilla
Mix the margarien till creamy,  add icing sugar and vanilla and mix well.
If it is dry add little bit of milk, only a drop.  Mix and ice the cake.

SUURLEMOEN BROODJIE KOEK

SUURLEMOEN BROODJIE KOEK
Smeer ‘n brood pan met botter, verhit oond vooraf op 180°C
1 koppie suiker (250 ml)
2 eiers
125 ml botter
Rasper skil van 1 suurlemoen
Halwe koppie melk
Knippie sout
2 kp bruismeel (500 ml)

Sous:
125 ml koppie suiker
2 suurlemoene se sap
Rasper skil van 1 suurlemoen

Klits suiker en botter dan voeg jy die eiers by, meng deur.
Voeg die meel, sout en skil in en klits, voeg melk geleidelik by en klits tot gemeng.
Plaas in voorbereide pan en bak in die oond vir so 45-60 min by 180°C (gewone oond).
Sit die sous se bestanddele in ‘n mikrogolf houer en kook ‘n rukkie in die mikrogolf tot die suiker opgelos is.  Hou die stoop warm.
As die koek klaar gebak het, terwyl nog warm,  steek gaatjies oral in die koek  en gooi die stroop oor die koek dat dit lekker in die koek intrek.  Wanneer afgekoel, gooi uit die pan en bedien.
