FOOD LOVERS RECIPES
24 – 28 koekies
KORS:
375 ml (1½ koppie) koek­meel
5 ml (1 teelepel) bak­poei­er
100 ml strooi­sui­ker
knip­pie sout
125 ml (½ koppie) botter
2 ei­ers, ge­skei
5 ml (1 teelepel) va­nilla geursel
60 ml (¼ koppie) melk

VULSEL:
2 ei­er­wit­te
80 ml (¹⁄³ koppie) strooi­sui­ker
250 ml (1 koppie) droë klap­per
1 blik (225 g) glad­de ap­pel­koos­kon­fyt

Voor­ver­hit die oond tot 180 °C en be­spuit ’n kol­wyn­tjie­pan met kos­sproei.
Kors-
Sif die meel, bak­poei­er, strooi­sui­ker en sout in ’n meng­bak.
Ras­per die bot­ter by en vryf die meng­sel lig­gies saam tot dit soos brood­krum­mels lyk.
K­lits die 2 ei­er­ge­le, va­niel­je en melk saam, giet dit by die meel­meng­sel en sny dit met ’n bot­ter­mes in.
K­nie lig­gies, vorm in ’n bal, draai in kleef­plas­tiek toe en ver­koel dit 20 mi­nu­te in die ys­kas.
Rol die deeg 3 mm dik op ’n op­per­vlak uit wat lig­gies met meel be­strooi is.
Druk met ’n ron­de koe­kie­sny­er sir­kels uit wat ef­fens gro­ter as kol­wyn­tjie­hol­tes is.
Plaas die deeg­sir­kels in die kol­wyn­tjie­pan en bak 15 mi­nu­te blind (met droë bo­ne in).
Vulsel-
K­lits die 2 ei­er­wit­te tot sty­we pun­te vorm. Voeg die sui­ker ge­lei­de­lik by ter­wyl jy k­lits tot die ei­er­wit­te styf en glan­send is. Vou die klap­per in.
Vul die deeg met ’n tee­le­pel kon­fyt. S­kep die ei­er­wit­meng­sel bo­op en be­dek die kon­fyt heel­te­mal. Bak 8­ tot 10 mi­nu­te tot die me­rin­gue goud­bruin is.
NOTA:   Ek het nie die deeg vooraf gebak nie. Het alles saamgebak tot mooi bruin.
Ongeveer 20-25 minute.

SNOWBALLS ALA LUCILLE
Makes 24 snowballs
125 g butter
2 eggs
1 cup oil
1 tablespoon vanilla essence
1 cup milk
1 tablespoon baking powder
2 cups flour

Whisk butter and eggs till fluffy and oil, milk and vanilla essence, whisk well.
Add baking powder and flour, mix well,  pour into prepared baking trays
Bake on 180ºC for about 20 – 25 mins

Syrup
1 cup apricot jam
2 cups water
3 drops of red gel colouring

Let syrup cool down, dip cake in syrup then coat with coconut

TUISGEMAAKTE RONDE CREAM CRACKERS
2 koppies broodmeel
180 ml room
1 teelepel bakpoeier
2 teelepels suiker
1 teelepel sout
2 eetlepels Italian herbs

Meng die meel, bakpoeier, suiker en sout in ‘n mengbak.
Voeg die room by en meng met ‘n hout lepel terwyl die room stadig bygegooi word.
Druk dan met die hand die stukkies deeg aanmekaar sonder om te knie sodat dit ‘n bal vorm.
Draai dit toe in plastiek wrap en laat rus vir 30 min (want ek dink hys moeg heheheeeee grappie)
Deel dan die bal in 4 dele en werk met een deel op ‘n slag.
Rol dit uit op ‘n meel oppervlak tot 3 millimeter dik.
Druk met ‘n bierglas of koekiedrukke sirkels uit.
Prik met ‘n vurk gaaitjies op die oppervlak en besprinkel met die Italian herbs aan beide kante.
Pak die sirkels op ‘n gespuite bakplaat.
Bak in ‘n voorverhitte oond vir 8 tot 10 minute op 180°C en draai dit dan na 10 minute om en bak die ander kant vir nog 5 minute tot mooi bruin.

3 INGREDIENTS PEANUT BUTTER BANANA BARS
4 medium bananas
2 cups oats, dry
6 tablespoon peanut butter, all-natural
Toppings:
½ cup walnuts, chopped
½ cup chocolate chips, dark

Preheat oven to 180ºC and grease a 9×13 inch glass dish. (I just used my fingers to spread unrefined coconut oil all over the bottom and sides and the bars came out beautifully.)
Mash the bananas and mix together with oats and peanut butter.
Spread the dough evenly in the prepared dish, then sprinkle with walnuts and chocolate chips.
Bake for 18-20 minutes or until an inserted toothpick comes out clean. Cut into bars and enjoy!
Because bananas vary in size, you may need to adjust the amount of oats; the batter should be like a wet cookie dough. Store leftover bars in an airtight container in the refrigerator, or freeze them and thaw in the fridge before eating.

YASMEEN’S MINI MILK TARTS


YASMEEN’S MINI MILK TARTS
For the base:-
125 gram butter
½ cup of sugar
1 egg
2 cups of sifted flour
2 teaspoons of baking powder

Cream butter and sugar.
Add egg and cream some more.
Finally add in the sifted flour and baking powder.
Roll out and use a doughnut cutter and cut out round shapes.
Thereafter place each one in a greased muffin pan.
Bake at 180ºC for 10 minutes.

For the topping
1/2 litre of milk for cooking
50 ml milk for making paste of corn flour and flour
1 teaspoon vanilla essence
1 egg beaten
1/4 cup flour
1/3 cup corn flour/ maizena

Make a paste with the 50 ml milk, corn flour and flour and leave aside.
Warm milk and vanilla essence but dont boil.
Add in the beaten egg and mix.
Finally add the flour and corn flour.
Use a tablespoon and top each tart.
Dust with cinnamon powder.
Let cool and refrigerate.

PEANUT BUTTER AND OATS COOKIES


PEANUT BUTTER AND OATS COOKIES – JUNGLE OATS BOX
250 g butter room temperature
500 ml sugar
2 eggs whisked
125 ml black cat peanut butter
10 ml bicarbonate of soda
25 ml milk
5 ml vanilla essence
500 ml flour sifted
500 ml jungle oats instant
500 ml coconut
500 ml cornflakes (crushed)

Preheat oven to 180 ºC.
Cream butter and sugar.
Add whisked egg.
Add peanut butter and mix well.
Dissolve Bicarbonate in milk, add vanilla essence and add to butter mixture and blend well.
Mix the rest of the ingredients and add to the peanut butter mixture.
Form walnut-sized balls. Place on greased tray and flatten slightly with a fork.
Bake 10-15 minutes until golden brown and done.
Turn out on a cooling rack. Allow to cool and store in an airtight container.
Approx. 8 doz cookies.

Hierdie koekies word nie gebak nie. Werk vinnig wanneer jy die hopies uitskep, want dit set nogals gou.
500 ml suiker
125 ml melk
125 ml kakao
125 ml botter
125 ml grondboontjiebotter
5 ml vanieljegeursel
3 – 5 koppies hawermout of muesli of ‘n mengsel van die twee

Plaas die suiker, melk, kakao en botter in ‘n kastrol en bring tot kookpunt terwyl gedurig geroer word. Verlaag die hitte en prut dan sowat 3-5 minute lank.
Verwyder van hitte en roer die grondboontjiebotter en vanieljegeursel by. Voeg net genoeg hawermoutmengsel by totdat die mengsel stewig is.
Skep hopies met twee teelepels op velle waspapier en laat staan tot stewig.
Lewer sowat 46 hopies.
Nota:  Ek het net 3 koppies oats gebruik.

Rock Cookies
These cookies are not baked. Work quickly when you scoop into pans. This set quite quickly.
500 ml sugar
125 ml milk
125 ml cocoa
125 ml butter
125 ml peanut butter
5 ml vanilla essence
3 –  5 cups oatmeal or muesli or a mixture of the two

Place the sugar, milk, cocoa and butter in a saucepan and bring to boil while
constantly stirring.
Lower the heat and simmer for 3-5 minutes.
Remove from heat and stir the peanut butter and vanilla essence into the mixture.
Just add enough oatmeal so that the mixture is firm.
Take two teaspoons ful and place onto sheets of baking paper and leave it to set.
Makes 46 cookies.
Note:  I used only 3 cups of oatmeal.

SOUTKOEKIES
2 koppies koekmeel
1 teelepel sout
2/3 koppie warm water
1 teelepel bakpoeier
1/3 koppie olyfolie
½ teelepel rissievlokkies

In ‘n mengbak meng die meel, water, sout, bakpoeier en olyfolie tot ‘n elastiese deeg
Rol dit uit met ‘n roller tot omtrent 3 mm dik en sny in 50 x 50 mm blokkies ( ek’t sommer my pizza sny roller gebruik )
Smeer die bokante liggies met ‘n bietjie olyfolie en sprinkel die rissievlokkies of jou voorkeur speserye of kruie op.
Plaas op ‘n gespuite bakplaat en bak in ‘n voorverhitte oond 220 ºC vir 12 min of tot effens bruin

YASMEEN’S SCOTTISH SHORTBREAD
(3 ingredients only but the most delicious biscuit)
1 cup of icing sugar
250 gram pure butter not margarine
2 and 3/4 cups cake flour

Leave butter out at least 2 hours before baking so it’s at room temperature. Can’t be too hard or too melted.
Beat butter and sugar until light and fluffy.
Add the sifted cake flour and make into a dough.

Dough is stiff not soft.
Form the dough into 3 large and long rectangles and leave it in the fridge for 1 hour.
Slice and dip in normal sugar
Lay in baking tray
Bake at 180ºC  for 12 minutes.

GIDEON SE DEEG BRILLETJIES
Ek het die paff pastry deeg brilletjies gemaak en is nogals lekker
1 × 400 gram rol paff pastry
2 eetlepel botter gesmelt
1/2 koppies kaneelsuiker
1 eier geklits vir glasering

Rol die deeg uit tot omtrent 2 mm dik probeer dit so vierkantig of reghoekig moontlik hou
Smeer dan die deeg met die botter en strooi die suiker oor
Rol dit dan van altwee kante af op tot in die middel
Sny dit dan met ‘n skerp mes in 4 mm dik mootjies en smeer met die eier
Pak dit dan in ‘n voorbereide oondpan
Bak dit dan in ‘n voorverhitte oond op 180°C vir 12 tot 15 minute of tot goudbruin
Ek het die riglyne van pick en pay se ” fresh living ” gebruik
Dit maak omtrent 30 brilletjies
