Vir elke 1 kg koejawels (geskil)
250 g suiker
2 koppies water

Kook suiker en water tot blink borrels vorm, so half stroperig.
Voeg vrugte by kook tot pitte begin loskom.
Skep bietjie stroop in bottels.
Pak vrugte oop kant ondertoe, vul op met stroop en seël.

Ipv 250 g suiker het ek 250 ml suiker gebruik per kg koejawels. Ek het 4 kg plus 8 los koejawels gehad. Ek het sommer 2 by elke kg gegooi. Stroop gekook vir so 10 minute, vrugte bygevoeg sodra dit begin kook het. Het ek dit vir ongeveer 7-8 minute gekook. Gebottel en dis heerlik. Daar is geen suurlemoen in nie, Sal dit saak maak?
Rina Kleinhans: Suurlemoen help maar net dat dit nie sandsuiker nie, maar as dit reggekook is sal dit nie nodig wees nie.




PYNAPPEL BLATJANG

PYNAPPEL BLATJANG
2 groot pynappels, geskil en in blokkies gesny, hier het ek 3 pynappels gebruik
2 groot uie, fyn gekap
375 ml suiker
125 ml asyn
10 ml kerriepoeier
20 ml mielieblom

Kook al die bestanddele buiten die mielieblom 40 minute lank saam in ‘n vlekvrye kastrol tot die pynappels sag is. Roer af en toe.
Meng die mielieblom met ‘n bietjie water en roer by die pynappelmengsel.
Bring weer tot kookpunt en laat weer goed kook.
Skep dadelik in gesteriliseerde flesse en verseël.
Lewer sowat 700 ml.

LEMON CHUTNEY

9 lemons, juice and rind of, sliver the peel
3 onions, chopped
1 1/2 cups golden raisins
1 green bell pepper, chopped fine
1 dried hot chili peppers, crushed or 1 1/2 teaspoons red chili pepper flakes
5 large peaches, peeled,pitted and chopped
2 cups sugar
1 1/2 teaspoons ground coriander
1/2 teaspoon fenugreek seeds (optional)
3/4 teaspoon ground cloves
1 teaspoon salt

Directions:

Combine all ingredients in a large stainless or enamel pot and simmer for 45 minutes.

Stir often and mash as you go.

Ladle into clean hot jars leaving 1/2 inch head space-seal.

Process 10 minutes in a boiling water bath at altitudes up to 1000 feet.

LEMON – LIME CHUTNEY

Makes five 250 ml jars.
4 large lemons – washed and wiped
2 limes – washed and wiped
2 onions – chopped
1 teaspoon salt
2½ cups cider vinegar (625 ml)
¾ cup raisins (90 g)
1 tablespoon mustard seeds
1 teaspoon ground ginger
½ teaspoon ground cayenne pepper
2 cups sugar (440 g)

Finely chop the whole lemons and limes, including the skin, and remove any seeds.
In a large bowl, combine the chopped lemons, limes and onions.
Sprinkle the mixture with the salt, then set aside for 12 hours.
Pour the lemon mixture and all the juices into a large, heavy based, non metallic saucepan.
Bring the mixture to a simmer over medium heat, then gently cook, uncovered, until the fruit is soft.
Stir in the vinegar, raisins, mustard seeds, ginger, cayenne pepper and sugar.
Increase the heat and bring the mixture to a boil, reduce the heat and simmer uncovered for about 45 minutes,
until thickened.
Spoon the chutney into five warm, sterilised, wide mouthed, 250 ml jars, leaving a 6 mm space between the top of the chutney and the rim of the jar.
Wipe the rims, cover and process for 10 minutes in boiling water.
Cool, label, date and store the jars in a cool, dark place.
The chutney will be ready to eat in 4 weeks.
Once a jar has been opened, store in the refrigerator

Skil die naartjies en haal die huisies uit, prik met ‘n stopnaald, pak in gesteriseerde bottels
(EK gebruik purity bottels) strooi strooisuiker oor, vul met ‘n wit drank (Vodka, Gin, Caine)
Seël, skud bietjie en bêre in ‘n donker kas omtrent twee weke, lekker saam roomys, of sommer net

Suikerstroop:
1 kg Suiker
1 lt Water
Sap van 1 Suurlemoen
1 Stukkie vars Gemmer
Kook tot ‘n mooi stroop begin vorm so+-10-15 min.
Voeg 1½ kg Nartjies by wat jy gehalveer het.
Kook tot jou skilletjie deurskynend raak en mooi glanserig is
Skep in jou voorbereide bottels en bottel warm.

Spoel appeltjies af. Ontpit (sny appel vleis van stronkies af – vleis word in konfyt verwerk, stronkies in pektien) – en kook apart in baie water – genoeg om die vrugte vry te laat dryf

Vir fynkonfyt :
Kook oor matige hitte tot vleis stukkend gedruk kan word (soos wanneer aartappels gaar is).
Gebruik ‘n groot kastrol soos met alle konfyt moet die inhoud verkieslik nie te diep wees nie. Weeg appelmoes af en voeg 1.25 kg wit suiker vir elke 1 kg keiappelmoes by. Verhit oor matige hitte en roer tot die suiker opgelos is. Kook tot dit begin jel, skep die skuim af aan die einde en bottel in droë warm gesteriliseerde inmaakflesse.

Vir Keiappeljellie
Kook stronkies tot die water lymerig is. Moenie roer terwyl dit kook nie, dit sal die jellie vertroebel. Syg deur moeselien doek – moenie dit deurpers nie. Weeg die hoeveelheid filtraat af. Weeg ewe veel wit suiker af per gewig. Voeg by en verhit stadig – roer tot suiker opgelos is en syg weer deur sodra die mengsel kookpunt bereik. Kook dit matig vinnig in oop kastrol totdat dit dik van lepel afdrup.

CANDIED KUMQUATS

4 cups of roughly chopped kumquats (roughly 450 – 680 g)
1 cup of water
2 cups of sugar

With a pairing knife roughly chop the kumquats.
Discard any seeds you can that are easy to get too, but they’re edible so don’t fret if some get chopped up or stay in the fruit.
Feel free to leave any small kumquats whole.
Heat the water and sugar over high heat until it comes to a boil.
Simmer for 4 minutes.
Add the kumquats and simmer for 10 minutes.
Drain the kumquats through a sieve set over a bowl.
Return the syrup to the pan and simmer for 5 minutes to reduce the syrup.
Combine the kumquats and ¼ cup of the syrup together.
Serve or jar and refrigerate.
Can be stored for up to two weeks

GEPEKELDE KUMKWATE
Hoe langer die kumkwarte gebere word, hoe lekkerder is dit.
Ek is mal daaroor saam met braaivleis, en enige ander rooi vleis.

2 kg kumkwarte – die helfte gesny en pitte uit
1 koppie methi masala

STROOP 1
1½ koppie suiker
2 koppies wit asyn

STROOP 2
¾ koppie olie
1 eetlepel mosterd saad

Gooi die kumkwarte en masala bymekaar in ‘n bak en roer deur.
Kook die suiker en asyn totdat die suiker gesmelt het.
Laat bietjie afkoel, en gooi by die kumkwarte en roer deur.
Maak die olie net warm – nie baie warm nie, en gooi oor die kumkwarte saam met die mostert saad.
Bottel en laat afkoel.
Bere in yskas.

Methi Masala sal jy by ‘n Indier winkel kan kry.
Dis baie meer geuriger as die gewone masala speserye wat jy bv by Checkers sal kry.
Checkers het gewoontlik ‘n klein afdeling by die speserye waar jy al die briyani, masala, kerrie ens kry.
Die Checkers masala sal ook werk indien jy nie ‘n Indier winkel naby het nie.




KUMQUAT PRESERVE

KUMQUAT PRESERVE
500 g kumquat
500 ml sugar
750 ml brandy

Wash kumquats and pierce each fruit a few times with a sterilized needle, or make a slit crossways at the top of each fruit.
Layer the fruit and sugar in a sterilized preserving jar.
Pour in the brandy until the fruit is completely covered.
Seal and store in a cool dark place.
Invert the jar occasionally.
The fruit will be ready to eat after four months.
