KERRIEKOOLPIEKELS
1 kg kool fyn gekerf
3 uie geskil en fyngekap
kokende soutwater
45 ml mielieblom
375 ml witasyn
375 ml suiker
30 ml kerriepoeier (medium)
30 ml gouestroop
15 ml sout

Kook kool en uie in kokende soutwater in ‘n groot kastrol vir 15min. Dreineer. Meng mielieblom met bietjie asyn. Verhit res van asyn en ander bestanddele tot kookpunt. Roer mielieblommengsel by om te verdik. Voeg koolmengsel by en verhit net tot kookpunt. Meng goed. Skep in gesteriliseerde inmaakflesse en verseël onmiddelik.

SPESERY BEET INGELê

SPESERY BEET INGELE
4 kg beet
750 ml bruin asyn
750 ml water
750 ml suiker
5 ml sout
5 ml gemmer
5 ml fyngemaalde naeltjies
5 ml kaneel
2 ml swart peper

Kook die beet tot gaar en laat dit afkoel. Skil af rasper of sny dit in skywe soos verkies.
Kook saam met al die bestanddele vir 10 min. Bottel warm. Sorg dat bottels tot bo vol asyn mengsel is.
Nota:
Op die foto – 5 kg beet ingelê vandag. Ek het 100 ml Maizena met 150 ml water gemeng, dit net na dit gekook is by gegooi, deur geroer 1 min laat kook, plaat afgesit en gebottel. Laaste bietjie het ek in bak geskep en ½ ui by gerasper

SJOE SJOE BLATJANG

SJOE SJOE BLATJANG
1 kg Sjoe-Sjoe geskil/grof gerasper
500 g uie fyngekap
1½ koppies asyn
1½ koppie witsuiker
30 ml maizena
15 ml matige kerriepoeier
7,5 ml borrie
7,5 ml sout
‘n paar rissies of peppadew (bell peppers brand ook nie veel nie)

*Kook gerasperde sjoe-sjoe tot sag en deurskynend in bietjie water. Sny of rasper uie fyn, giet kookwater oor en laat week vir 20min. Dreineer en herhaal. Voeg uie by sjoe-sjoe, voeg rissies by. Meng asyn, suiker, maizena, kerrie, borrie, en sout saam. Voeg by sjoe-sjoemengsel en kook alles goed deur. (Roer gereeld). Skep warm in bottels, en seël.
Vervang matige kerrie met “hot” kerrie, voeg ekstra rissies in vir ‘n bietjie byt. Die kleur verander dan na ligbruin.

Ns. Geniet dit saam met enige kos, eiers, hotdogs, hamburgers, vis…..

PAUL SE EIERVRUG KERRIE

500 gram miniatuur eiervrugte
Een groot ui gesny
1 eetlepe suiker
3 knoffelhuisies gekap
25 mm gemmer gerasper
4 klein tamaties gekap
2 eetlepels sterk kerrie
1 teelepel cumin
1 teelepel pickle masala
1 teelepel fennel saad
2 teelepels mosterd saad
1teelepel koljander poeier
Sout na smaak
Takkie kerrie blare
Sny punte van eier vruggies af en kook in water tot sag, laat dit afkoel en trek velletjies af.
In n groot pan verhit so eetlepel en n half olie en braai die eier vruggies tot hulle so goud kleurig raak haal uit en hou eenkant. In die selfde olie braai die uie tot sag voeg knoffel en gemmer by braai nog so minuut maar moet nie knoffel brand nie. Voeg nou kerrie en ander spesserye by en braai so 2 min moet net nie brand nie. Voeg nou tamaties en suiker by roer aanhoudend tot n sousie begin vorm. Voeg nou n bietjie water by sodat dit net lekker nat is en voeg die vruggies by en meng goed deur. Roer nou aanhoudend sodat die mengsel nie brand terwyl jy so klein bietjie water op n slag byvoeg sodat dit net loperig bly. Voeg nou jou kerrie blare by en roerbraai so minuut of twee bottel warm, laat afkoel bere in yskas en gebruik soos nodig.

BRINJAL ACHAR

BRINJAL ACHAR
1 kg brinjal
4 dry red chillis
1 tablespoon cumin seeds
250 ml vinegar
6 cloves garlic
3 green chillis
30 mm fresh root ginger
120 ml plus 4 tablespoons salad oil
2 sprigs curry or bay leaves
½ teaspoon tumeric powder
115 g sugar

Slice brinjals and sprinkle with salt keep aside. In a mortar pound together red chillis, cummin and mustard seeds. Mix with a little vinegar to make a smooth paste. Peel and half garlic cloves, slit green chillis lengthwise and slice ginger finely. Heat a little of the oil in a pan and fry garlic, chillis and ginger 3 min. Remove from oil and keep aside. Drain liquid from brinjals and fry til brown and dry. Drain and remove from pan, in a kleen sausepan fry curry leaves and spice paste in remaining oil, for 3 min. Add vinnegar and when nearly boiling add brinjals, garlic, chillis, ginger and tumeric, cook for 2 minutes add sugar and salt to taste and cook for 10 min. Cool and preserve in air tight bottles

PRESERVED MUSHROOMS


PRESERVED MUSHROOMS
salt
whole lemon, cut into wedges
1 kg whole mushrooms (smaller is preferred)
1 litre white wine vinegar
pinch of sugar
3 blades of mace
1 cinnamon stick, plus extra
2 garlic cloves, plus extra
sage leaves
olive oil
Optional
nutmeg
cloves
coriander seeds
cumin seeds
1 sage sprig
bay leaves
peppercorns
Cook’s notes
Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C. | We use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml. | All herbs are fresh (unless specified) and cups are lightly packed. | All vegetables are medium size and peeled, unless specified. | All eggs are 55-60 g, unless specified.
Instructions
Standing time 10 minutes
Preserving time 2–3 weeks
Makes 2 large jars
In a large pot, add 3 litres of water, 1 tablespoon salt and a squeeze of lemon. Bring to the boil. Add the mushrooms and boil for a further 3 minutes.
Drain the mushrooms and dry on paper towel.
Meanwhile, make up the spiced vinegar: To the white wine vinegar, add 1 teaspoon salt, sugar, mace, cinnamon and garlic. (You can add other spices such as nutmeg, cloves, coriander seeds, cumin seeds to your own taste.) Bring the spiced vinegar to the boil and boil for 2 minutes. Remove from heat and set aside for 10 minutes.
Dry the mushrooms completely, patting any moisture off with paper towel. Transfer into sterilised jars.
Bring the spiced vinegar back to the boil. Pour this over the mushrooms in the jars and add a couple of leaves of sage per jar, the extra garlic cloves and cinnamon sticks. Make sure the mushrooms are completely covered. Top with a little olive oil.
Seal the jars immediately.
Store in a cool, dry place for 2–3 weeks before consuming. Once opened, keep in the fridge.
Preserved mushrooms can be kept for a few months.

SWEET TOMATO AND ONION CHAKALAKA CHUTNEY

SWEET TOMATO AND ONION CHAKALAKA CHUTNEY
10 onions sliced
12 tomatoes chopped
2 cans of Chakalaka with corn
2 cups oil
2 cups brown sugar
1 teaspoon garlic

In a large pot add the onions and the oil and boil down for 20min. till the onions is golden.
Add one cup of brown sugar and the garlic to the onions and boil for few minutes, now add the tomatoes and boil down with the onions till the skin of the tomatoes comes off the tomatoes.
Add the other cup of brown sugar to the tomatoes and let simmer for 30min. – 45min. on low heat.
Now add the 2 cans of chakalaka and mix well let simmer for 20min.
After simmering let it cool down and place in glass jars and close with a lid.
Let it completely cool down and place in the fridge.
Can be used when making mince or any other meat with pasta or rice or as a side like a sauce!
Very delicious and not to sweet just right!

8 medium bete
2 medium uie of 1 groot ui
500 ml bruinasyn
750 ml suiker
15 ml kerriepoeier
5 ml gemengde speserye( mix spice)
5 ml sout
45 ml mielieblom( maizena)
45 ml water
Kook bete tot gaar,verwyder skille en sny in blokkies,hou eenkant
Verhit die asyn en suiker oor lae hitte en roer tot suiker opgelos is. Bring tot kookpunt voeg dan die gaar beet by en die opgekapte uie,laat prut 10 min. Voeg die kerrie,mix spice en sout by,laat prut so 5 min en voeg dan die maizena met water gemeng by,laat prut weer vir so 5 min tot die sous dik is….
Baie ou resep,smaak is heerlik!

1.5kg jong bete
500ml water
500ml asyn
500ml suiker
2ml sout
2ml fyn naeltjies
2ml kaneel
2ml fyn gemmer
1ml swart peper

Sny die beetlowwe af en was die bete. Bedek hulle met kookwater en kook tot sag. Trek die skille af en sny bete in skyfies. (Ek rasper myne).
Verhit water, asyn, suiker, sout, naeltjies, kaneel, gemmer en peper in n vlekvrye staal of emaljekastrol tot kookpunt. Voeg beet by, verlaag die hitte, sit deksel op en prut vir 20min.
Skep die warm beet in gesteriliseerde flesse en verseel.
HOe langer beet staan hoe geuriger

MAGTELD SE PEPPADEWS


MAGTELD SE PEPPADEWS
Eerste peppadews ingele gistrmiddag
2 k asyn
2 k suiker
Kook die stropie vir so 2 min voeg die onpitte peppadews in die warm stroop, laat kook vir so 5 min, nie te lank anders word hulle pap. Pak peppadews in mayonnaise grootte bottel en gooi die warm stroop bo- oor.
