10 hoenderboudjies
sout en peper
koekmeel om hoender in rol

Rol die hoender in meel skud af en pak in oondpan. Maak dan ‘n sousie met die volgende:
125 ml heuning
125 ml suurlemoensap
30 ml soyasous

Gooi oor hoender en bak teen 180°C vir 1 uur. Drup van die sous in die pan oor hoender elke nou en dan terwyl dit in die oond is, dit is awesome, hoor my lied.

If you like curry, try this recipe! The flavours are fresh and “clean” and has loads of flavour. Adjust the amount of chilli to your spice preference. We usually double the recipe because it tastes even better the next day! And we double up on some of the ingredients like the garram masala, chillies, tumeric, ginger and chopped tomatoes of the recipe below for extra flavour.
1 large onion
50 g ginger roughly chopped
6 garlic gloves roughly chopped
4 tablespoons vegetable oil
2 teaspoons cumin seeds
1 teaspoon fennel seeds
5 cm cinnamon stick (or I tsp ground cinnamon)
1 teaspoon chilli flakes or use fresh birds eye chilli’s (we use 4 for lekker spicy!)
1 teaspoon garam masala
1 teaspoon turmeric
1 teaspoon white sugar
400 g can chopped tomatoes
8 chicken thighs (skinned, boneless) or breast (about 800 g)
250 ml hot chicken stock
salt and pepper to taste
small bunch chopped coriander (a few tablespoons)
cream or yogurt to taste

Roughly chop the onion, transfer to a small food processor, and add 3 tablespoons of water – process to a slack paste. You could use a stick blender for this or coarsely grate the onion into a bowl – there’s no need to add any water if you are grating the onion. Tip into a small bowl and leave on one side.
Put the chopped garlic cloves and ginger into the same food processor and add 4 tablespoons water – process until smooth and spoon into another small bowl. Alternatively, crush the garlic to a paste with a knife or garlic press and finely grate the ginger.
Heat the vegetable oil in a wok or large pot/pan set over a medium heat.
Combine the cumin and fennel seeds with the cinnamon stick and chilli flakes and add to the pan in one go. Swirl everything around for about 30 secs until the spices release a fragrant aroma.
Add the onion paste – it will splutter in the beginning. Fry until the water evaporates and the onions turn a lovely dark golden – this should take about 7-8 mins.
Add the garlic and ginger paste and cook for another 2 mins – stirring all the time.

Stir in the garam masala, turmeric, and sugar and continue cooking for 20 secs before tipping in the can chopped tomatoes.
Season with salt and pepper.
Continue cooking on a medium heat for about 10 mins without a lid until the tomatoes reduce and darken.
Cut the chicken thighs or breast into 3 cm chunks and add to the pan once the tomatoes have thickened to a paste.
Cook for 5 mins to coat the chicken in the masala and seal in the juices, and then pour over the hot chicken stock.
Simmer for 8 – 10 mins without a lid until the chicken is tender and the masala lightly thickened – you might need to add an extra ladleful of stock or water if the curry needs it.
Sprinkle with the chopped coriander and serve with Indian flatbreads or fluffy basmati rice and a pot of yogurt on the side.
We stir in copious amounts of the plain yogurt and sprinkle with loads of coriander!

TROPICAL CHICKEN WITH LIME AND CORIANDER COUSCOUS
1 whole chicken (or pieces on the bone)
2 onions, chopped
½ pineapple chopped up in chunks
2 cm piece fresh ginger grated (approx 10ml)
250 ml Pina Colada (pineapple and coconut flavoured) wine cooler
10 ml Chinese 5 spice mix
5 ml turmeric
big pinch of dried chilli flakes
2,5 ml sumac
30 ml red wine vinegar
oil
250 ml chicken stock
20 ml corn starch mixed in about 50 ml water

250 ml dry flavoured couscous made as per packet instructions with hot chicken stock instead of hot water

Fry onions in oil in pressure cooker for a few minutes. Add the chicken and fry all over. Add the pineapple, ginger, spices and the Pina Colada. Allow for cook on high heat for a few minutes to reduce the liquid a bit. Add the red wine vinegar and chicken stock and steam under pressure for 25 minutes. Allow the pressure to be released. Remove the chicken carefully and place in a plate to be cut into pieces. Stir the corn starch into the liquid in the pot and allow to thicken up a bit. Serve with the flavoured couscous.

KIP KERRIE


KIP KERRIE
(4 tot 5 porties)
150 gram diepvries doperwten
600 gram kipfilet, gesneden
2 uien
2 teentjes knoflook
potje champignon schrijfjed
500 ml bouillon kip (van tablet)
100 gram creme fraiche
4 el bloem
5 volle tl kerrie
1,5 tl kurkuma
chilivlokken
zout
75 tp 100 gram basmati rijst per person
olijfolie

Pel de uien en knoflook en snijd deze klein. Was de paprika en snijd ook deze klein. Doe de bevroren dorperwten in een pan, vul deze met water en laat deze koken totdat ze beetgaar zijn, voeg eventueel wat zout toe. Laat in een andere pan 500 ml water met 1 bouillonblokje koken totdat het blokje is opgelost. Verhit olijfolie in een wokpan en braad de kipfilet totdat deze gaar is. Voeg de uien samen met de knoflook toe en bak deze mee totdat ze glazig kleuren. Maak een droog mengsel van 4 el bloem samen met de kerrie, kurkuma en chilivlokken, voeg deze toe aan de kip. Laat het bloemmengsel even garen. Blus af met de bouillon, roer alles goed door zodat de bloem gaat binden met de bouillon. Voeg dan de creme fraiche toe en roer alles goed door totdat alles vermengt is. Voeg nu de doperwten, champignon toe, laat de saus nog even 10 minuten pruttelen tot het de gewenste dikte heeft, voeg eventueel wat zout toe. Breng ondertussen water aan de kook, voeg de rijst toe. Bereid zoals op de verpakking staat aangegeven. Serveer de saus samen met de rijst.

CHICKEN CURRY
4 to 5 portions
150 grams of frozen peas
600 grams of chicken fillet, cut
2 onions
2 cloves of garlic
jar of mushroom
500 ml chicken broth (from tablet)
100 grams creme fraiche
4 teaspoons flour
5 full teaspoons curry
1.5 tsp of turmeric
chili flakes
salt
75 to 100 grams of basmati rice per person
olive oil

Peel the onions and garlic and cut them small. Wash the bell pepper and cut it too small. Put the frozen threshing peas in a pan, fill with water and let it cook until they are al dente, add some salt if necessary. In another pan, let 500 ml water with 1 stock cube until the cube is dissolved. Heat olive oil in a wok pan and fry the chicken until it is done. Add the onions together with the garlic and fry them until they turn glassy. Make a dry mixture of 4 tbsp flour together with the curry, turmeric and chilli flakes, add it to the chicken. Let the flour mixture evenly. Deglaze with the stock, stir everything well so that the flour will bind with the stock. Then add the creme fraiche and stir well until everything is mixed. Now add the peas, mushroom, let the sauce simmer for a further 10 minutes until it has the desired thickness, add some salt if necessary. Meanwhile, bring water to the boil, add the rice. Prepare as indicated on the package. Serve the sauce together with the rice. Enjoy!

HOENDERVLERKIES OP ‘N STOKKIE EN MANGO SLAAI


HOENDERVLERKIES OP ‘N STOKKIE
Ek het gister die hoendervlerkies op ‘n stokkie gesteek en ‘n sous gemaak wat bestaan het uit
3 eetlepels mayonnaise
3 eetlepel romerige bloukaas slaaisous
1 teelepel aromat
1 teelepel knoffelflokkies
1 teelepel italian herbs
1 teelepel droë pietersielie

Meng alles saam en smeer die vlerkies daarmee en laat staan vir vier ure.
Braai dit op stadige kole tot gaar, sodat die sous nie brand nie.
Dit is baaaie lekker!

SLAAI:
Die slaai het vroulief gemaak met gekerfde rooi ui en stukkies spanspek en stukkies mango en stukkies avokadepeer.
Dan is n bietjie sweetchillie sous bygevoeg saam met ‘n paar roketblare.
Hmmmm daar was ook ‘n stukkie gegeurde gekoopte brood wat oppie kole warm gemaak is en ‘n stukkie gebraaide wors.

PORTUGESE HOENDER


PORTUGESE HOENDER
1 heel hoender
15 ml Portugese hoender spesery mengsel
7 ml gerookte gedroogde rissie vlokkies
10 ml gerookte paprika
1 ui, gekap
handvol klein tamaties
200 ml droë wit wyn
50 ml olyfolie
½ suurlemoen

Meng die olyf olie en die speserye en vryf oor die hele hoender. Gooi bietjie olie in swaarboom pot en braai die uie, tamaties en hoender regom tot liggies goudbruin. Druk die halwe suurlemoen in die hoender se binneste. Gooi die wyn by en sodra die vloeistof feitlik weggekook het, gooi bietjie kookwater by en laat die hoender prut tot gaar. Hou dop sodra die vloeistof min word, gooi bietjie kookwater by. Bedien sodra die hoender gaar is.

ROOM HOENDERPASTA


ROOM HOENDERPASTA
250 g skulp pasta of enige pasta vorm
500 g ontbeende hoenderborsies, opgesny in blokkies
1 groot ui, opgesny in blokkies
½ rooi soetrissie en ½ groen soetrissie, opgesny in blokkies
groot genoeg stuk margarine (ongeveer so min of meer 100 g), om hoender in te braai
250 ml room aangemaak met helfte van een pakkie hoender noedel soppoeier
1 koppie water met ‘n hoenderaftreksel blokkie

Neem botter en sit op stoof, sodra pan warm is met botter, sit die hoender, uie en soetrissies in pan en kook tot gaar. Voeg dan knoffelsout , paprika en peper na smaak by. Neem een koppie water met hoenderaftreksel en bring tot kookpunt. Roer deur hoendermengsel. Kook pasta soos aangedui op pakkie en dreineer, voeg dan by hoendermengsel. Roer pasta en hoendermengsel deur en voeg room by. Roer deur en klaat net vinnig deurkook,  laat rus vir paar minute.

WARM HOENDERSLAAI


WARM HOENDERSLAAI
3 hoenderborsies, ontbeen en in die helfte deurgesny (met ander woorde, dunner gesny)
2 gekleurde soetrissies, ontpit en in stukke gesny
1 klein botterskorsie, afgeskil en in blokkies gesny
1 klein slaaikoppie waarvan die blare geskei is
2 medium grootte tamaties, in klein stukkies gesny
1 kleinerige komkommer, in skywe gesny
6 of meer skoongemaakte knoffeltoontjies
1 eetlepel balsamiese asyn
sap van ‘n halwe suurlemoen
sout en peper na smaak
olyfolie
Fetakaas vir garnering

Plaas die botterskorsie blokkies op ‘n bakplaat saam met die knoffeltoontjies en sprinkel met olyfolie. Bak in die oond by 200ºC vir 20 tot 30 minute, tot die botterskorsies sag is. Geur die hoender stukke aan beide kante met sout en peper. Sprei ‘n groot nie-kleef-pan met ‘n nie-kleef kooksprei en plaas oor hoë hitte. Bak die hoender stukke vir 3 minute aan albei kante of tot ligbruin en deur gaar. Plaas oor op ‘n bord.
Sprei die pan met nog ‘n bietjie kook sprei en braai die soetrissis tot dit begin sag word. Rangskik die slaaiblare, tamaties, komkommer, soetrissies en die botterskorsie en knoffel mengsel in ‘n opdienbak. Sny die hoenderstukke in skywe en rangskik dit bo-oor die slaai. Besprinkel met balsamiese asyn en suurlemoensap, geur met sout en peper indien nodig, krummel ‘n bietjie fetakaas bo-oor en bedien.
Dit is net so lekker om dit koud te bedien.

BRINED ROAST CHICKEN


BRINED ROAST CHICKEN
1 whole chicken or pieces
½ lemon or slices if using chicken pieces
125 ml coarse salt
250 ml brown sugar (I used muscovado)
250 ml malt or balsamic vinegar
30 ml peppercorns
10 ml smoked chilli flakes
1 litre boiling water to dissolve above into (I still boiled in glass dish in microwave for another 2 mins) allow to cool completely before use
Extra cold water to add to the brine solution

Put the chicken into a glass, ceramic or plastic dish. Push the half lemon into the stomach cavity. Pour the cold brine solution over the chicken completely covering it. Put a heavy dish or plate on the chicken to weigh it down. Put in fridge for a good couple of hours or overnight but not longer than 24 hours

Remove the chicken from the brine and roast, smoke or cook as preferred. I roasted mine in the glass convection oven. It can be prepared this way for the Weber too.
If you are using pieces then place each chicken piece on a slice of lemon in oven dish.
The same recipe can be used for turkey.
NOTE:  the result is a juicer chicken than normal and this one really was.

ROMERIGE BASILIEKRUID HOENDER
500 g ontbeende hoender borsies, in blokkies gesny
1 pakkie lang murg pampoentjies, opgesny
1 groot ui, gekap
2 knoffel huisies, gekap
3 eetlepels basil pesto
250 ml room
olie
sout, peper en aromat na smaak

Braai die knoffel en uie in olie tot deurskynend. Voeg die hoender by en braai tot sag. Gooi pampoentjies by en geur met sout, peper en aromat. Braai tot bruin. Voeg die pesto en room in, roer deur en kook tot pampoentjies amper sag is en sous dik. Bedien met spaghetti.
