DIABETES-FRIENDLY MALVA PUDDING

This low-carb variation uses alternative ingredients to keep blood sugar spikes to a minimum.
Ingredients for the Pudding:
2 large eggs
2 tablespoons granulated sweetener (e.g., Erythritol, Stevia, or Xylitol)
1 tablespoon sugar-free apricot jam
1 cup almond flour (ground almonds)
½ cup desiccated coconut
1 teaspoon bicarbonate of soda
2 tablespoons butter, melted
1 tablespoon white or brown vinegar
½ cup unsweetened almond milk or full-cream milk
Ingredients for the Sauce:
½ cup heavy cream
¼ cup butter
2 tablespoons granulated sweetener
¼ cup water

Preheat your oven to 180°C and grease an ovenproof dish.
In a mixing bowl, beat the eggs, sweetener, and jam together until creamy.
In a separate bowl, combine the almond flour, coconut, and bicarbonate of soda.
Mix the melted butter, vinegar, and milk together. Alternately add the dry mixture and the milk mixture to your beaten eggs, stirring well after each addition.
Pour the batter into your greased dish and bake for 25 to 30 minutes, or until the top is nicely browned and a skewer inserted comes out clean.
While the pudding is baking, combine all the sauce ingredients in a small saucepan over medium heat until melted and thoroughly combined. As soon as the pudding comes out of the oven, prick holes all over the top with a fork or skewer. Pour the warm sauce evenly over the pudding, letting it soak completely.

1 teelepel gelatien
1 eetlepel kouewater
¾ koppie kookwater
½ koppie versoeter
1 teelepel vanilla geursel
Week die gelatien in die 1 eetlepel kouewater tot sag en voeg dit by die kookwater.
Klits die ingedampte melk in ‘n mengbak en voeg die water- en gelatienmengsel by terwyl aanhoudend klits.
Voeg versoeter, lepelsgewys by die melk terwyl aanhoudend klits.
Voeg die vanilla geursel by en klits goed deur.
Skep die mengsel in ‘n plastiekbak met ‘n deksel en plaas in die vrieskas.
Klits die mengsel na 45 minute weer deur en vries vir 2 ure, klits weer goed deur.
Laat die mengsel in die vrieskas tot hard gevries.
Jy kan ook vars vrugte, soos enige bessies byklits.

Banting/Keto/Paleo/Low Carb en DIABEET VRIENDELIK.
Ek het die beslag dubbel aangemaak, en 8 middelslag pannekoeke uitgekry. Sommer gevul met zylitol kaneelsuiker, Bessiestroop gemaak van xylitol en bietjie fyn gaar hoender.
Wenke:
Bak teen ‘n lae hitte pan gespuit met kossproei.
Moenie die pannekoek te dun maak, en te gou probeer omkeer nie.
Indien jou deeg baie dun is, sit so 20 ml koekmeel, of meel van jou keuse by.
2 eggs
75 g cream cheese, softened
⅓ teaspoon baking powder
⅓ teaspoon vanilla
3 drops liquid sweetener OR what you have to taste

Add some butter or coconut oil to a nonstick pan and put it on medium heat. Use a silicone brush to coat the entire pan surface with it. Place the cream cheese, eggs and rest of ingredients into a bowl or blender and beat until creamy.
Allow the batter to sit for a minute or two to settle so that it cooks better.
Pour into pan, spreading it evenly.
Cover with a lid, a minute or 2 till bottom is set and the top not watery.
Carefully flip over and cook other side till freckled.
Makes one big pancake or two medium sized ones.
Serve with berries, plain double cream yoghurt, whipped cream, low carb ice cream, cinnamon or xylitol.

(Ps. If your batter needs thickening, add a teaspoon or 2 of coconut flour).

LOW CARB MALVA PUDDING


LOW CARB MALVA PUDDING
2 tablespoons xylitol
1 tablespoon apricot diabetic jam, optional
2 free range eggs
1 cup ground almond flour
½ cup fine desiccated coconut
1 teaspoon bicarbonate of soda
pinch salt
2 tablespoons butter
1 tablespoon brown vinegar
½ cup full cream milk

SAUCE:
1 cup fresh cream
½ cup butter
2 tablespoons xylitol
4 tablespoons water

Preheat the oven to 190 °C.
For the pudding, beat the xylitol, jam and eggs together until fluffy and creamy. Mix the dry ingredients in a separate bowl. Melt the butter in a small saucepan on medium heat. Add the vinegar and milk and stir. Remove from heat and add the milk mixture to the dry ingredients. Mix well. Next, add the egg mixture and mix well using a whisk or wooden spoon. Pour into an ovenproof dish and bake for 25–30 minutes or until firm but spongy and nicely browned.
For the sauce, melt all the ingredients together in a small saucepan on medium to high heat. Allow to simmer for 2 minutes, stirring constantly so that it does not boil over. Pour the sauce over the pudding as soon as it comes out of the oven. Serve with whipped cream.

DIABEET EN BANTING VRIENDELIK
180 g real butter
1 cup Xylitol powder
1 egg + 1 egg yolk
1 cup almond flour
1 cup coconut flour
pinch of salt
¼ tsp Xanthum gum
¼ tsp Phsyllium husks

Cream butter and sugar till creamy and stir through egg and egg yolk. Sift in remaining ingredients and mix well till a dough ball forms. The dough will be quite moist which is absolutely fine. Leave to rest in fridge for 10 minutes. Remove from fridge and roll small pieces of dough into balls, place on a greased baking tray and flatten each ball with the back of a fork. Bake in a pre-heated oven at 180 ºC for 20-25 minutes.

Vye geskil en gesnipper. Voeg dan die xylitol en suurlemoensap by.
Plaas in mikrogolf oond op hoog vir so 15-20 minute.
Skep skuim kort, kort af en kook totdat die stroop die regte dikte is.
Bottel warm.

MIDNIGHT SNACK-IN-A-MUG
Diabeet Vriendelik
Batter:
1 tablespoon fine shredded coconut
1 tablespoon coconut flour
1 tablespoon cocoa
1 tablespoon Xylitol
1 teaspoon baking powder
1 egg
1 tablespoon buttermilk/ milk/ cream
2 tablespoon olive oil

Sauce:
50 ml warm water
1 tablespoon cocoa

Mix batter in a mug. First add dry ingredients then add liquid ingredients. Pour sauce over the back of a spoon onto the batter in the mug. Microwave for about 2—2.5 minutes until cake is spongy and a sauce appears at the bottom of the mug.

Lewer 6 groot plaatkoekies
1 oorryp piesang, fyngedruk (moenie meer as 1 gebruik nie, dan raak die plaatkoekies kluitjierig en rou in die middel)
1 koppie bruismeel
1 teelepel fyn kaneel
1 koppie melk
1 eetlepel olie
2 eetlepel xylitol (of enige versoeter)
5 ml karamel essense

Meng alle bestanddele, maar moenie oorwerk nie.
Spuit n kleefvrye pan met kossproei en verhit oor medium hitte.
Skep lepelsvol deeg in die pan.
Die deeg sal begin set om die kante en bubbels vorm, wat aandui dit kan gedraai word.
Geniet warm saam met heuning!

500 g botter
375 ml suiker of 125 g Xylitol
500 ml karringmelk
1 kg koekmeel
50 ml bakpoeier
3 ml sout
2 koppies Vital muesli (Low GI)
1 koppie sonneblomsaad
geroosterde klapper (opsioneel)
anys (opsioneel)

Voorverhit die oond tot 180°C en spuit of smeer ‘n standaard grootte oondpan.
Smelt die botter en roer die suiker of xylitol en karringmelk by. In ’n ander bak; meng die meel, bakpoeier, sout, muesli, sonneblomsaad en klapper goed. Voeg die karringmelkmengsel by en maak aan tot ’n stywe deeg. Vorm die deeg in bolletjies en pak dit langs mekaar in die oondpan. Bak vir 50-60 minute tot deurgaar en goudbruin. Keer die beskuit uit die panne en laat afkoel. Breek die bolletjies los en sny in kleiner stukkies (indien verkies). Droog die beskuit teen 70 -100°C of in die lou-oond uit tot goed droog. Laat kamertemperatuur bereik en bêre in lugdigte houers. Lewer ongeveer ses dosyn beskuit. Geniet!

125 ml laevet-roomkaas
125 ml laevet-ricottakaas
45 ml suiker of suikerplaasvervanger
skil en sap van ½ lemoen
3 koppies bessies (bv. gesnyde aarbeie, bloubessies, frambose) of bevrore bessies
klapperskaafsels

Meng roomkaas, ricottakaas, suiker of plaasvervanger, skil en sap deeglik in ‘n voedselverwerker. Verdeel die bessies tussen 4 glase. Bedek met kaasmengsel. Plaas in die yskas vir ongeveer 4 uur. Bedien met klapperskaafsels.
