BLACK VELVET CUPCAKES-CAKE
2 ½ cups all-purpose flour
1 ½ cups sugar
2 tablespoons unsweetened regular or dark baking cocoa
1 teaspoon baking soda
1 teaspoon salt
1 ½ cups vegetable oil
1 cup buttermilk
2 eggs
1 bottle (1 oz) black food color
1 teaspoon white vinegar
1 teaspoon vanilla
3 containers (12 oz each) cream cheese whipped ready-to-spread
frosting
Black string licorice, if desired
Black jelly beans, if desired
Heat oven to 350°F (325°F for dark or nonstick pans). Grease 3 (8- or 9-inch) round cake pans with shortening; lightly flour.
In large bowl, mix flour, sugar, cocoa, baking soda and salt. In another large bowl, beat oil, buttermilk, eggs, food color, vinegar and vanilla with electric mixer on low speed just until blended. Gradually add flour mixture; beat 2 minutes on medium speed, scraping bowl occasionally. Pour into pans.
Bake 23 to 25 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour.
Brush off all loose crumbs from cake layers. Place 1 cake layer, rounded side down, on serving plate; spread with 1 cup frosting. Top with second cake layer, rounded side up. Spread with 1 cup frosting. Top with third cake layer. Spread very thin layer of frosting on side to seal in crumbs. Spread remaining frosting on side and top of cake. Cut licorice into pieces. Pile licorice on top of cake. Decorate bottom edge of cake with jelly beans.

Hier is die een wat ek vandag gebak het. Dit lewer 24 kolwyntjies:
Koek:
Sif 1 box vanilla koek mengsel (Ina Paarman s’n werk goed)
Klits die volgende saam:
1/3 koppie olie
1 koppie karringmelk
½ koppie suurroom
¼ koppie mayonnaise
4 eierwitte
15 ml vanilla geursel
Voeg die megnsel by die box-mengsel en meng goed.
Bak vir 16-20min by 180ºC. Toets vanaf 15 min. Dit moet net gaar wees.

Versiersel:
Puree aarbeie om 80 ml puree te kry.
Maak 1 koppie botter/margarien sag en voeg 4 koppies versiersuiker + puree by. Meng goed. Voeg nog tot 1 koppie versiersuiker by (hang af hoe styf jy dit wil he)

Versier! Dis heerlik. As jy dit tuis bedien, versier met ‘n mooi aarbei. Myne moes skool toe, en toe het ek bietjie glitter goedjies gebruik. Ek het ook ‘n bietjie rooi jelkleursel by die deeg gegooi

KLAM SJOKOLADE KOLWYNTJIES-
250 ml kookwater
180 ml kakao, gesif
125 ml melk
5 ml vanilla
500 ml koekmeelblom
7 ml koeksoda
2,5 ml sout
250 g botter, kamertemperatuur
315 ml sagte donkerbruin suiker
180 ml suiker
4 eiers

Verhit oond tot 180°C.
Plaas papiervormpies in ‘n muffinpan.
Klits kookwater en gesifte kakao tot glad.
Klits melk en vanilla by.
Sif koekmeel, koeksoda en sout in ander mengbak.
Klits botter, bruinsuiker en suiker tot lig van kleur en donsig in derde bak.
Voeg eiers een-een by en klits deeglik na elke byvoeging.
Voeg kakao mengsel en meel beurtelings by en klits na elke byvoeging.
Begin en eindig met meel.
Moenie bekommer as beslag geskif voorkom nie.
Skep beslag in kolwyntjievorms – ek doen dit met outydse roomyslepel – en maak bokante gelyk.
Bak vir 20 minute of tot gaar en uitgerys.
Versier met sjokolade-suurroomversiersel.

Sjokolade-suurroomversiersel:
300 g goeie gehalte melksjokolade, in blokkies gebreek
250 ml suurroom
5 ml vanilla

Smelt sjokolade in dubbelkoker of in glasbak oor pot kookwater.
Roer tot gesmelt is.
Voeg suurroom en vanilla by en roer oor lae hitte tot glad.
Verwyder van hitte en laat staan tot dik en smeerbaar.
Smeer oor kolwyntjies voordat versiersel te dik is.

Ek bak die resep ook in ‘n gatpan as grootkoek – dan so 40+ minute in die oond.

MAKING THE CUPCAKE LINER STICK TO THE CUPCAKE
What to do when cupcake liners start to come off?

One thing I stumbled upon when I first embarked on my cupcake-making-journey is that of cupcake liners not sticking to the cupcake. Cupcake liners can really add to the cupcake as a whole. So it’s definitely a problem when you have invested in some pretty cupcake liners and they just start coming off!
I decided that wouldn’t do and started doing some research on the net and trying some things out. Here are my tips on preventing it from happening.

Always immediately turn the cupcakes out of the pan after getting them out of the oven. Don’t pull them out with your hands, but really just turn the pan around and let the cupcakes fall out of the pan onto the counter. (Make sure your cupcakes are entirely done, because if they are still ‘raw’ so to speak, they will splatter. )
Why do this? If you leave them in the pan to cool, condensation will occur between the cupcake and the pan, resulting in the liner getting moist, thus causing it to peel off.

Be sure to fill the liners enough. The liner should be filled between ½ – 2/3 full. Why? If there is not enough batter, it will not stick to the top. If there is too much batter it will spill over. (Although better overfilled than underfilled.) It also matters in what way you fill the liners.
Personally, I use an ice cream scooper and that always works for me, but some people prefer using a piping bag. Anyway, make sure the batter is on the bottom of the liner and to the sides of the liner. So the batter shouldn’t just be a blob in the middle, but spread out so that it can stick to the liner better. Or try tapping the cupcake pan on the counter to let the batter settle in any spaces that aren’t filled yet.

Also make sure the cupcake liner fits the pan! If the cupcake liner is too big for the pan and it kind of wrinkles up when you put it inside the pan, it is more likely that it will peel off later. I have two different pans for that reason. I know, annoying. Liners/pans should be universal. But alas, they’re not.

Look at your recipe to see if it is not too greasy. Cut down on the amount of butter. Butter gets greasy and when the liner gets greasy it won’t stick. You could also switch to oil but that does affect taste, obviously. Or at least cream the butter enough with the sugar, then add the rest of the ingredients so that it is mixed well and you end up with less greasy liners.

It seems baking temperature could also matter, which could depend on your oven specifically. I’ve read someone saying to bake it on 160 ºC (and not higher because then the cupcakes won’t rise too fast (but you would have to keep them in the oven longer). Someone else said, on the contrary, to bake them on 200 ºC but for a shorter time. Personally, I usually bake cupcakes on 180 ºC for 20-25 minutes unless the recipe really tells me otherwise. There doesn’t seem to be a definite answer on this one so if you’re having this problem I would mess around with your heat and baking time a bit.

The way you store them may affect the liner peeling off as well. An airtight container is not recommended. Put them in a cake box or invest in a special cupcake storage box, for example like this one here.

I’ve also heard people say it can depend on the brand of the liner, but I don’t think it can depend entirely on that. Maybe the brand plus other factors such as the above, who knows? Some liners might work better with specific recipes, I don’t know. If you’re interested, the liners I’ve used so far are from Wilton, House of Marie, Dille & Kamille*, Xenos*, Hema*, Albert Heijn* , Culpitt and PME. In my experience, these are all fine as long as you make sure they fit the pan, fill them up correctly, and turn the cupcakes out immediately.

I have a few more tips to share for you though:

If it happens to you anyway, you can try to fix the cupcake by making some sugar glue (water + sugar, confectioners or regular) and ‘gluing’ the cupcake to the liner. If fixing it with sugar glue is not an option, use decorative cupcake wrappers instead of liners.

If you want to make really sure it doesn’t happen, you can try to put TWO liners in the pan. First time I’ve done this, it was on accident, but I found that while the second falls off, the first one tends to stick better. It is quite wasteful though and I wouldn’t recommend doing it with more expensive liners.

FYI, you do NOT ever have to spray or grease the pan when using cupcake liners. They should come out off the pan on their own.

For me personally, just turning the cupcakes out immediately and using well-fitted liners has always worked for me and I didn’t need to mess with recipe/oven, but you will have to find out what works for you specifically

Cake Batter:
1 ½ cups chopped pecans
3 cups all-purpose flour
2 cups sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
3 large eggs, lightly beaten
1 ¾ cups mashed ripe bananas (about 4 large)
1 (8-oz.) can crushed pineapple (do not drain)
¾ cup canola oil
1 ½ teaspoons vanilla extract
Glaze:
4 ounces cream cheese, cubed and softened
2 cups sifted powdered sugar
1 teaspoon vanilla extract
1 to 2 tablespoons milk

Prepare Cake Batter: Preheat oven to 350° (180°C). Bake pecans in a single layer in a shallow pan 8 to 10 minutes or until toasted and fragrant, stirring halfway through.
Stir together flour and next 4 ingredients in a large bowl; stir in eggs and next 4 ingredients, stirring just until dry ingredients are moistened. Sprinkle 1 cup toasted pecans into a greased and floured 14-cup Bundt pan. Spoon batter over pecans.
Bake at 350°F (180°C) for 1 hour to 1 hour and 10 minutes or until a long wooden pick inserted in center comes out clean. Cool cake in pan on a wire rack 15 minutes; remove from pan to wire rack, and cool completely (about 2 hours).
Prepare Glaze: Process cream cheese, powdered sugar, vanilla, and 1 tablespoon milk in a food processor until well blended. Add remaining 1 tablespoon milk, 1 teaspoon at a time, processing until smooth. Immediately pour glaze over cooled cake, and sprinkle with remaining 1/2 cup toasted pecans.

Nota:  Hummingbirdkoek muffins gebak. Roomkaasversiersel met papawersaad pampoenpitte en cranberries. (Koekresep gevat, 30 – 35 min gebak. 40 muffins gekry en dit vries goed)
Ek vat roomkaas, bietjie kaneel, bietjie versiersuiker en ‘n proppie vanilla. Ek maak dit nie so soet nie.

Here’s my recipe. Let me know how you like the end product:-) It is very delicious and the cupcakes are light and airy.
2 cups white sugar
1 ¾ cup cake flour
¾ cup cocoa
7½ ml baking powder
7½ ml baking soda
5 ml salt
1 cup milk
½ cup oil
2 eggs
10 ml vanilla essence
1 cup hot water
Sieve all the dry ingredients in a bowl.
Mix all the liquid ingredients and eggs except the hot water.
Add the liquid mixture to the dry ingredients & mix with electric mixer for about 4 minutes.
Add the hot water and use a metal spoon to fold into batter.
Mixture is very runny. Use to make cupcakes or a layer cake.
Double the mixture for a sheet cake.
Makes 24 cupcakes.

90 g margarine, gesmelt nie warm
2 ½ teelepel bakpoeier
1 eier
¾ koppie melk
knypie sout
5ml Vanilla geursel
1 koppie gemengde droëvrugte(cake mix)
Sif droe bestanddele saam en voeg vrugte by. Voeg eier, melk en vanilla geursel by margarine en meng effens. Voeg by droë bestanddele. Bak tussen 200ºC en 180ºC vir 12 min in patty pans.
Maak so 24 uit een beslag

Ingredients
2 cups all purpose flour
1 teaspoon of baking soda
1 teaspoon of baking powder
1 teaspoon of salt
2 Tablespoons unsweetened, cocoa powder
2 cups sugar
1 cup vegetable oil
2 eggs
1 cup buttermilk
2 teaspoon of vanilla extract
1-2 oz. red food coloring (ons het n botteltjie ingegooi)
1 teaspoon of white distilled vinegar
½ cup of prepared plain hot coffee (don’t skip this ingredient)

Preheat oven to 325.
In a medium bowl, whisk together flour, baking soda, baking powder, cocoa powder and salt. Set aside.
In a large bowl, combine the sugar and vegetable oil.
Mix in the eggs, buttermilk, vanilla and red food coloring until combined.
Stir in the coffee and white vinegar.
Combine the wet ingredients with the dry ingredients a little at time, mixing after each addition, just until combined.
Generously grease and flour two round cake pans or 24 cup cake pan with shortening and flour.
Pour the batter evenly into each pan.
Bake in the middle rack for 30-40 minutes, or until a toothpick comes out clean. Do not over bake as cake will continue to cook as it cools.
Let cool on a cooling rack until the pans are warm to the touch.
Slide a knife or offset spatula around the inside of the pans to loosen the cake from the pan.
Remove the cakes from the pan and let them cool.
Frost the cake with cream cheese frosting when the cakes have cooled completely.

~TIPS~
Be sure to not overbake! Check the cake at 30 minutes as some ovens run really hot.

To bake cupcakes, bake for 18-20 minutes, checking at the 18 minute mark.

Voorverhit oond by 180 ºC.
Voer 2 muffin pannetjies met papiertjies.
Room botter en suiker tot lig en donsig. Klits eiers by en meng goed. Meng koeksoda met karringmelk en meng by bottermengsel. Sif meel, bakpoeier en sout saam. Meng melk en vanilla. Meng meel en melk beurtelings by tot beslag mooi gevorm is. Maak die papiertjies ¾ vol en bak vir 20 min lank.

Makes 12
100 g butter, softened
1 cup (200 g) caster sugar
2 teaspoons finely grated lemon rind
2 eggs
1 ½ cups (225 g) self-raising flour
½ cup (125 ml) milk
Lemon curd:
1 egg, lightly whisked
50 g butter
2 teaspoons lemon rind
¼ cup (60 ml) lemon juice
½ cup (100 g) caster sugar

Meringue:
3 egg whites
¾ cup (155 g) caster sugar

Preheat oven to 180°C. Line twelve 1/3-cup (80 ml) muffin pans with paper cases.
Use an electric mixer to beat the butter, sugar and lemon rind until pale and creamy. Add eggs, one at a time, beating well between each addition. Add the flour and milk, in alternate batches, and stir with a wooden spoon until just combined.
Spoon mixture evenly among the lined pans and smooth the surface. Bake in preheated oven for 15-20 minutes or until cooked through. Remove from oven and transfer to a wire rack to cool completely.
Meanwhile, to make the lemon curd, combine the egg, butter, lemon rind and juice and sugar in a small saucepan over low heat. Cook, stirring, for 5 minutes or until mixture boils and thickens. Remove from heat. Strain through a fine sieve into a clean bowl. Cover with plastic wrap and place in the fridge to cool and thicken.
Use a small knife to cut a V-shaped piece out of the top of each cake, about 1.5cm deep, leaving a 2cm-wide edge. Spoon the lemon curd evenly among cupcakes.
Place egg whites in a clean, dry bowl. Use an electric mixer to whisk until firm peaks form.
Gradually add the sugar, beating well between each addition. Continue beating for 2-3 minutes or until sugar completely dissolves. Spoon meringue on top of each cake, using a round-bladed knife to shape in peaks over the cake and enclosing the filling. Transfer cupcakes to an oven tray; place under a preheated grill until lightly golden
