CLASSIC COQ AU VIN
Yield: 4 to 5 portions
Time: +/- 1 hour 30 minutes
Ingredients
• 1 tbsp (15 ml) Olive Oil
• 120 g Pancetta or Bacon (cubed)
• 8-10 pieces Chicken thighs and legs
• 1 large Onion – chopped
• 2 medium Carrots – chopped
• 3 to 4 sticks of Celery – chopped
• 1-2 cloves Garlic (chopped)
• ¼ cup (60 ml) Brandy or Whiskey
• 1/2 bottle (375 ml) Red Wine (your choice)
• 1 ½ cup (375 ml) Chicken Stock
• 8-10 springs Thyme or 1 tsp (5 ml) dried Thyme
• 1 tbsp (15 ml) Butter
• 1½ tbsp (25 ml) Flour- for thickening (could substitute for corn starch for gluten-free version)
• 250 g Mushrooms
• Salt and Pepper to taste
Instructions
1. Preheat oven to 180C.
2. Heat a tablespoon of olive oil in a heavy pot with a oven proof lid (flat cast iron pot it’s perfect for it – No 2 or 3). Fry your bacon cubes for 8-10 minutes until browned and remove them to a plate.
3. Season your chicken pieces with salt and pepper and brown them in the same pot in batches to avoid overcrowding. Remove to the same plate as bacon. You are not cooking your chicken all the way through, just browning on both sides.
4. Slice your onions, celery and carrots in medium sized chunks and add them to the pot with salt and pepper, cook over medium heat for 10 minutes, add the garlic and cook for 1 minute longer stirring the whole time not allowing it to burn. Add your brandy and scrape all the burned bits to incorporate them into your sauce, now add bacon and chicken with all the juices they collected, pour in your wine, chicken stock and thyme sprigs and bring to a boil. Once boiling, cover with a lid and put it in the oven for 40 minutes.
5. When chicken is no longer pink mix melted butter with flour and stir in the sauce. Slice mushrooms thickly and add to the pot, taste and adjust the seasoning if needed. Put back in the oven with the lid off for 10-15 minutes to allow the sauce to thicken.
To serve
Serve with mashed potatoes or chunky pieces of french loaf bread

Bestanddele
• 1 eetlp (15 ml) Olyf olie
• 120 g Pancetta of Bacon (in blokkies gesny)
• 8-10 stukkies Hoender (boudjies en dytjies)
• 1 groot ui – grof gekap
• 2 medium Wortels – grof gekap
• 3 tot 4 stokkies Selary – grof gekap
• 1-2 huisies Knoffel – gekap
• ¼ koppie (60 ml) Brandewyn of Whiskey
• 1/2 bottel (375 ml) Rooi Wyn (jou keuse)
• 1 ½ koppie (375 ml) Hoender aftreksel
• 8-10 takkies Tiemie of 1 teelp (5 ml) gedroogde Tiemie
• 1 eetlp (15 ml) Botter
• 1½ eetlp (25 ml) meel – om sous meet te verdik (kan vervang word met mielieblom vir ‘n gluten-vrye weergawe)
• 250 g Sampioene
• Sout en Peper na smaak
So maak mens
1. Voorverhit die oond tot 180C
2. Verhit die eetlp olyf olie in ‘n swaar pot met ‘n oondvaste deksel (platboom gietyster pot no 2 of 3is perfek). Braai jou bacon blokkies tot mooi verbruin (8 – 10 minute), haal uit en plaas op ‘n bord..
3. Springkel jou hoender stukkies met sout en peper en braai tot bruin. Moenie te veel op ‘n slag in die pot sit nie, braai liewer in een of twee sarsies. Sodra mooi bruin, verwyder van die pan en plaas op die bord saam met die bacon blokkies.
4. Kap jou ui, wortels en salary mediun grof en plaas hulle in die pot met sout en peper, braai oor matige hitte vir +/- 10 minute, voeg die knoffel by en braai vir ‘n verdere minuut. Roer aanhoudend en moenie laat brand nie. Voeg nou die brandewyn/whiskey en wyn by. Roer deeglik om die stukkies van die bodem los te maak. Voeg nou die hoender en bacon in met al die sappe wat in die bord versamel het. Voeg ook jou hoender aftreksel en Tiemie by. Bring tot kookpunt, plaas deksel op en plaas in die oond vir 40 minute.
5. Na 40 minute, kyk of die hoender goed gaar is, indien nie, plaas terug in die oond vir ‘n verdure 5 tot 10 minute. Sodra die hoender gaan is, meng die botter en meel tot ‘n deegie form. Roer by die sous in, Sny die sapioene grof of en voeg by, roer deur en plaas terug in die oond, sonder die deksel, en bak vir ‘n verdure 15 minute.
Om te bedien
Bedien met kapok aartappel of grof gebreekte stukke franse brood.
