CREAM FILLED HORNS WITH CHOCOLATE

2 packs of good quality ready made puff pastry
A little butter to grease your metal horns
1 egg to egg wash pastry
250 ml fresh whipping cream, a teaspoon of vanilla essence and 1 tablespoon of icing sugar all whipped together until stiff peaks .
Some melted chocolate to dip the edges of the horns in or use a butter knife and spread the melted chocolate around the edges .
Some chopped glazed cherries

Take out your pastry and roll it out on a floured surface just to thin it out a bit . Next cut 1 cm wide strips . Next take the pastry strip and spread a tiny bit of egg wash on it and wrap it around the greased metal horns making sure they overlap to form the horn shape . For small horns make thin pastry strips .. For the bigger horns simply cut the strips wider .

Next place a the horns on a baking sheet lined with baking paper and then egg wash the pastry .. Bake in a preheated oven on 200 def c until golden , about 15-20 minutes .

Next remove the metal horns .. If you struggle just ease it out with a knife . Allow to cool completely .

Next spread melted chocolate around the edges and allow chocolate to set . Next pipe in the whipped cream and place a small piece of cherry on top of piped cream , dust with icing sugar . And its that easy.

You can fill with caramel etc. Also you can make this a savoury treat by piping cream cheese into the baked pastry horn and add a piece of smoked salmon and dill . ( I used homemade flaky puff pastry , recipe can be found in the photo albums , which is optional ) .

STEAK MINCE PASTA BAKE
1 kg of steak mince
1 onion peeled and finely chopped
5 cloves of garlic peeled and finely chopped
1½ teaspoons of salt
3 tablespoons of tomato paste
1 tablespoon of freshly ground black pepper
1 chopped chili
1- 2 tablespoons of sugar
2 tablespoons of oil for frying onions
2 cups of grated cheddar cheese
1 pack of elbow or macaroni or shell pasta cooked per packet instructions.

White Sauce
Fry your onions in the oil on medium to high heat until golden brown , next add your steak mince, black pepper , garlic, chili and salt. Cook for 10-15 minutes stirring when needed. Next add your tomato paste and sugar and cook for a few minutes. Add some hot water and cook on medium heat for 35 minutes until all water is cooked away and make sure you stir to prevent mince from sticking to pot.

Next mix the cooked pasta, half of your white sauce with the mince mixture and add 1 cup of cheddar cheese and stir – Pour this in a large baking tray or dish and pour over remaining white sauce and cheese. Bake in a preheated oven on 200 ºC for 30 minutes . Serve with a green salad .

The most delicious white sauce / Cheese Sauce
150 grams of butter
¾ cup of cake flour
1 teaspoon of salt
1 teaspoon of fine black pepper
½ a teaspoon of nutmeg
1 tablespoon of mustard powder
1 liter of warm to hot milk
1 cup of grated cheese if you making a cheese sauce

Add butter to a medium sized pot and allow to melt on medium to high heat, now add the flour, salt and spices and stir into butter with a hand whisk for a minute or two to allow the flour to cook through. Now add your milk a cup at a time stirring with your whisk until the sauce thickens. Repeat this process with adding the warm milk and stirring continuously until all the milk has been used and your sauce is silky and a bit thick.
For cheese sauce add you grated cheese at this point and stir till all cheese has melted

Add this sauce to your Macaroni and Cheese, Chicken pasta dishes and lasagna dishes.

Baked Beans with a Twist
Ingredients:
2 tins baked beans
1 large tomato (finely chopped)
2 tablespoons oil
1 teaspoon crushed garlic
3 green chillies slit
1 tablespoon chilli powder
½ teaspoon turmeric powder
½ teaspoon salt
4 tablespoons mango pickle masala (from mango pickle – must include at least a tablespoon of pickle oil)
1 sprig curry leaves
Chopped dhunia for garnish
METHOD:
Heat oil, add tomatoes, garlic and spices. Simmer until tomatoes softened and it starts to catch at the bottom of the pot. Add baked beans and pickle masala. Simmer on very low heat for a further 10 to 12 minutes. When it is thick and saucy, turn off heat and garnish with greens.
Delicious on toast or as a side dish to any roast. Grill or braai… Love it in omelettes as well…Eshana Suleman

CHOCOLATE ECLAIRS ALA FERIEL

INGREDIENTS

1 cup water
½ cup oil
1 cup cake flour
3 eggs
Drop vanilla essence

METHOD
Allow water, oil & vanilla essence to boil in a saucepan.
Remove from heat add the cake flour and mix.
Carry on mixing over a very low heat until paste forms a ball and the sides of the saucepan are clean.
Place ball in a mixing bowl and allow to cool.
Once cool beat in the eggs one at a time, blending well after each addition.
Pipe or spoon mixture onto a greased baking tray and bake in a pre heated oven at 180 c for 45 minutes.
Serve with whipped cream or caramel
Whipped cream and strawberries
Whipped cream and bananas and chocolate on the top.

PINK COCONUT CHOCOLATES

PINK COCONUT CHOCOLATES
400 grams of dessicated coconut
1 tin of condensed milk
1 drop of vanilla essence
1 drop of pink food colouring

To dip
2 big slabs of chocolate melted in a heat proof bowl placed over a small pot with hot simmering water.

In a large bowl mix all your ingredients together with a spoon. Next, with clean hands shape into small balls and place on a baking sheet or foil, cover and allow to harden in fridge for a few hours.

Next take your pink coconut balls and dip in the melted chocolate using a fork and use this fork to gently shake off any access chocolate. With the help of another fork or spoon gently push off the chocolate covered coconut ball and place on a piece of baking paper or foil and allow to set. You may place in the fridge as well.

Tip

You may use white or dark chocolate, you can colour your coconut mix any colour you like and you can also flavour it with any essence you like. I make these chocolate treats as a gift to loved ones, you can wrap it up or place in a tiny cupcake holder and gift wrap.

SWISS JAM ROLL
250 ml castor sugar
5 eggs seperated
pinch salt
15 ml oil
5 ml vanilla essence
250 ml Selfraising Flour
5 ml baking powder

Beat egg whites to soft peak .
Cream eggs and castor sugar
Add oil and vanilla essence
Sift flour, baking powder and salt.
Beat dry ingred well to egg mixture.
And fold in soft peak egg whites well in batter with spoon.
Grease and lined (waxpaper) on swiss roll pan
Bake in middle shelf for 8 – 10 minute on 200C
Dust castor sugar on a strong sheet apgreaseproof paper and remove cake from oven.. Remove the waxpaper… Spread smoothen jam of your choice on cake and quickly use the greaseproof paper as a guide to roll up swiss roll.Cut in thick slices and serve with whipped fresh cream..

FOOD LOVERS RECIPES
250 g fresh smoke fish de boned
1 onion
I fresh lemon squeezed
1 teaspoon Fisherman Spice
1 teaspoon dried Parsley or fresh parsley
¼ teaspoon Peri Peri Spice
2 ½ tablespoon Mayonnaise

Add all above in food processor till a smooth paste serve on whole wheat bread or Crackers Enjoy
