ROOI UIE EN PIENK PEPERKORREL MARMELADE
1 kg rooi uie (in helfte gesny en dan in halwe ringetjies gesny
200 g marmelade (ek het ‘n bottel lemoen & rooibostee marmelade in die yskas gehad)
300 ml rooiwyn (as dit nie goed genoeg is om te drink nie is dit nie goed genoeg vir die kos nie)
100 ml rooiwyn asyn (ek het net druiwe asyn gehad en dit werk)
3 teelepels heel korrel mosterd (of net die korreltjies soos ek gebruik)
30 ml bruin suiker
half koppie sultanas of cranberries (opsioneel)
25 ml olyf olie vir braai.
Jy kan enigiets soos lekker groot knippie gedroogde rissie vlokkies (of vars), peperkorrels ens bysit na smaak.

Braai die uie in die olyf olie tot deurskynend, voeg die sultanas, cranberries, peperkorrels, suiker, rissies, mosterd by en prut stadig totdat die suiker opgelos het (so 10min). Voeg die wyn & asyn mengsel by en prut totdat die uie sag en die sultanas/cranberries uitgeswel is. Skep alles uit met ‘n gaatjie lepel en los die vloeistof in die pot. Voeg die marmelade by en prut totdat die sous lekker dik is. Laat afkoel en skep die rooi uie mengsel terug in die pot. Meng goed en skep in gesteriliseerde glas bottels en seel. Sit in yskas en probeer om nie oop te maak vir ten minste ‘n week sodat die geure & smake goed kan kombineer. Heerlik saam met rooi vleis en veral op toebroodjies met pastrami & ham, lekker skerp kaas en roket. Genoeg vir so 2 x half liter botteltjies.

Gebruik vars,jong boontjies, maak bondeltjies en rol in bacon toe.
Skil tamaties en sny in klein blokkies.
Sit tamaties in n pot op die stoof en plaas boontjiegerfies daar in met sout en growwe swart peper.
Prut stadig in die tamaties tot gaar.
Ek voeg nie water by nie.
Maar jou plaat moet baie stadig gestel wees en dit neem nogal ‘n hele rukkie.

HOE OM KOESKOES GAAR TE MAAK
Dit smaak amper soos krummel pap maar sagter (dit is semolina korreltjies). En dis soo maklik om te maak.
Jy het net ‘n bak, 1t olie of stukkie botter & kookwater nodig (en natuurlik 1t sout maar ek hou van ‘n hoender ekstrak blokkie vir die geur) en ‘n stuk kleefplastiek.
So 15min voor jy wil eet kan jy die koeskoes aanmekaar slaan (of vroeer want dit kan maar staan en net weer in mikrogolf warm gemaak word of koud bedien as dit ‘n slaai is).
Gooi dieselfde hoeveelheid koeskoes & kookwater in ‘n bak (as jy die hoender ekstrak blokkie gebruik gooi dit by die kookwater en los op voor gebruik).
Gooi die olie of botter ook by en roer, maak toe met die kleefplastiek en laat staan terwyl jy die ander kos voorbereid. Wanneer jy reg is om te eet, neem ‘n vurk en krap die koeskoes los totdat dit krummelrig is. Dis lekker saam met iets wat ‘n sousie het soos ‘n bredie of maak geroosterde groentes in die oond en bedien op die koeskoes as ‘n slaai met balsamiese asyn & olyf olie.
1k koeskoes is genoeg vir 4 mense en ‘n ekstra skeppie.
Dit is natuurlik die perfekte kampkos omdat mens dit nie hoef te kook nie.
Geniet dit en laat weet wat jy dink van dit.

2 pakke droë ertjies
½ pak 4 in 1 sopmengsel
1 heel hoender
2 medium uie gekerf
2 medium tamaties gekerf
2 bakkies hoender ekstrak(ek gebruik Knorr se jelly stock)

Plaas hoender, uie tamatie in stoompot, los die ekstrak blokkies op in bietjie kookwater en voeg by hoender, vul op met +- 1 liter kookwater en stoom tot hoender sag is en van karkas afval. Haal hoender uit en laat afkoel, hou “sous” eenkant. Voeg ertjies en sopmengsel in stoompot en stoom tot amper sag, skep oor in prutpot en voeg die “sous” van die hoender by en laat prut vir so 2-3 ure, vlok die hoender en voeg by sop en prut verder tot ertjies sag is, ek meng dan ‘n blikkie ertjiesop of hoendersop by en vul dan op met ‘n blikkie(sopblik) kookwater as dit te dik is! Die hoender “stock” is gewoonlik sout genoeg maar ek voeg bietjie van Ina Paarman se “rosemary en olive en rosemary en lemon” speserye na smaak by die hoender as ek dit kook!

¼ cup butter
¼ cup vegetable oil
½ cup granulated sugar
1/3 cup brown sugar
2 large eggs
1 ½ teaspoons baking powder
¼ teaspoon baking soda
¾ to 1 ¼ teaspoons ground nutmeg, to taste (I used ¾)
1 teaspoon cinnamon
¾ teaspoon salt
1 teaspoon vanilla extract
2 2/3 cups all-purpose flour
1 cup milk

For the Glaze
3 tablespoons butter; melted
1 cup confectioners’ sugar; sifted
¾ teaspoon vanilla
2 tablespoons hot water
Preheat the oven to 425°F (220ºC). Lightly grease a standard muffin tin. Or line with 12 paper muffin cups, and grease the cups with non-stick vegetable oil spray; this will ensure that they peel off the muffins nicely.
In a medium-sized mixing bowl, cream together the butter, vegetable oil, and sugars till smooth.
Add the eggs, beating to combine.
Stir in the baking powder, baking soda, nutmeg, cinnamon, salt, and vanilla.
Stir the flour into the butter mixture alternately with the milk, beginning and ending with the flour and making sure everything is thoroughly combined.
Spoon the batter evenly into the prepared pan, filling the cups nearly full.
Bake the muffins for 15 to 17 minutes, or until they’re a pale golden brown and a cake tester inserted into the middle of one of the center muffins comes out clean.
In a medium bowl, prepare the glaze by mixing together the melted butter, confectioners’ sugar, vanilla and water. Whisk until smooth.
When muffins have cooled slightly, dip the muffin crown into the glaze and allow the glaze to harden. At this point, you can leave them as is or go for the double dip. I glazed my muffins twice.
Serve warm, or cool on a rack and wrap airtight. Muffins will keep at room temperature for about a day.

PUMPKIN PIE WITH OATS

1 cup cooked pumpkin
1/2 cup flour
1/2 cup rolled oats
1/2 cup brown sugar
1/2 cup cream
5 ml baking powder
Pinch of salt
Cinnamon
1/4 cup seed and sultana mix to sprinkle on top
Heat the oven to 180*C. Mix all the ingredients, sprinkle with seed and sultana mix.
Bake for 30 to 40 minutes or until golden brown.
Sprinkle with cinnamon and serve.

¼pound hamburger patty
½ ciabata broodjie
Vars spinasie blaartjies
Vars tamatie
Vars uie ringe
Vars avokado

Rooster broodjie op braai, smeer liggies met margarine, indien verkies. Begin pak met dun gesnyde uie ringe, patty wat op braai gemaak is met bietjie sout of aromat, dan spinasie blaartjies, vars tamatie met sout en vars gemaalde peper, en laastens die avo bo-op. As jy kans sien kan jy die ander deel van die broodtjie bo-op sit, maar dit is alreeds so ‘n massiewe burger dat ek nie kans sien daarvoor nie, en dan is dit ook te veel brood vir my. Dit is so so lekker en saam met ‘n glasie koue witwyn op ‘n heerlike warm aand, wat is nou beter! Geen winkel hamburger kom naby nie.

CAPE SEED LOAF

CAPE SEED LOAF
500 g whole wheat bread flour
85 g sunflower seeds
50 g pumpkin seeds
25 g poppy seeds
4.92 ml salt
4.92 ml yeast
14.79 ml sugar
29.58 ml sunflower oil
350 ml lukewarm water
1 egg, beaten
Mix all the dry ingredients in a bowl. Pour the water and oil and knead for about a minute.
Place the dough in an oiled loaf pan ( 8inch x 4 inch) Brush with the egg and decorate with alternate lines of sesame and poppy seeds.
Cover the dough with a tea towel and let it rise for about 30-60 minutes .
Pre heat the oven to 180ºC and bake for 45 to 50 minutes. Cool on rack.

OLD FASHIONED CAPE CHICKEN PIE
1 chicken cut into portions
15 ml butter
15 ml cooking oil
1 large onion chopped
1 clove garlic chopped
10 ml salt
Freshly ground black pepper
1 bay leaf
2 whole cloves
2 ml grated nutmeg
250 ml white wine
125 ml chicken stock
15 ml sago
125 g cooked ham cut julienne
Sour cream pastry or cream cheese pastry
1 egg yolk beaten
Brown chicken in a mixture of butter and cooking oil. Add onion and garlic and sauté. Season chicken with salt, pepper Bayleaf cloves and nutmeg. In separate saucepan heat the wine and chicken stock and add to chicken together with sago. Simmer until the meat falls from bone. Cut the meat from bone and place in pie dish.
Arrange ham on top of chicken and pour over gravy. Place and eggcup in the centre of the pie dish.
Roll out pastry and cover the top of the pie dish. Secure the sides of the pastry by brushing the edges of the dish with egg yolk. Brush the remainder of the beaten egg yolk over the top of pastry. Bake in the oven 200deg until the pie is golden brown and pastry is done.

CHICKEN AND BACON PIE
170g puff pastry
500 g cooked cubed chicken
4 diced bacon
120 g mushroom
5 tbsp flour
5 tbsp butter
300 ml milk
Salt & pepper

1) heat 1/2 butter in pan and saute bacon & mushrooms (3min)
2) heat rest of butter stir in flour till smooth
3) stir in milk & season, bring to boil & cook till thick
4) add chicken, bacon and mushrooms. Let cool!
5) place filling in 200mm pie plate
6) roll pastry out to fit over plate on top of filling
7) brush crust with milk/egg
8) bake at 200’c for 35min
