GROOT ROG HAWERMOUTBROOD
So hier is die resep vir ‘n groot (2 lb/900 g) brood. Vars uit die broodmasjien eet ons dit sommer maklik in een sitting op. Op die oomblik is dit die brood wat ons die meeste bak.
400 ml water
2 eetlepel olie
1 groot eier
1 1/2 teelepel sout
2 eetlepels suiker
150 g growwe rogmeel
150 g fyn rogmeel
150 g hawermout (fyn gemaal in die voedselverwerker)
45 g Maizena (mielieblom)
7 g kits gis (vir broodmasjiene)

Plaas alles in die volgorde die broodmasjien en meng eers self.
Kies dan die ‘whole wheat’ siklus vir ‘n 2 pond broodjie.
As die siklus klaar is bak die brood vir ‘n verdere 30 minute op die ‘extra bake’ funksie. (En toets dat dit deur gaar is voor jy die siklus stop)

En vir variasie:
Die 150 g fyn en growwe rogmeel kan vervang word met 300 g fyn rogmeel, maar dan benodig jy 430 ml water.
Week 2 opgehoopte eetlepels linsaad (flaxseed) in ‘n bietjie water vir ten minste ‘n uur (of sommer oornag) en voeg dit by die brood
Voeg 2 opgehoopte eetlepels anys saad by. Dit gee dit ‘n heerlike anys geur, sonder dat dit ‘n sterk anys smaak het.
Voeg 2 eetlepels kakao by vir ‘n donkerder brood.

Russell Hobbs bread machine (1 kg bread)
300 ml water
75 ml canola oil
4 tablespoons
condensmilk
75 g raisins
100 g sugar
½ teaspoon salt
475 g cake flour
4 level teaspoon dried active yeast

Weigh the flour and set aside. Soak raisins in a cup of boiling water for 30min. Drain excess water
Measure the water into a measuring jug. Have all other ingredients to hand.
Starting always with the liquid, add the ingredients into the pan in the order set out in the recipe.
Set the program to Dough
Press Start
When the cycle has finished, remove the dough, make even size balls, pack into the pan. Allow to rise until double in volume.
Bake for 1 hour at 180°C. Cut and dry out in oven.

ALTERNATIVE
Set the program on White
Set loaf size on 1.125 kg
Set desired crust on ‘medium’
Press start
When the cycle has finished, remove from the tin and allow to cool.
Slice the gigantic rusk as you would with a normal bread, halve the slices again, dry like normal rusks.

HOMEMADE HAMBURGER BUNS (BREAD MACHINE)
You will never want to buy hamburger buns again after trying this recipe. Easy to do using a bread machine and so awesome! You can also!
Servings: 12
Units: US | Metric
1¼ cups milk, slightly warmed
1 beaten egg
2 tablespoons butter
¼ cup white sugar
¾ teaspoon salt
3 ¾ cups bread flour
1¼ teaspoons active dry yeast

Place all ingredients in pan of bread machine according to manufacturer’s directions.
Select dough setting.
When cycle is complete, turn out onto floured surface.
Cut dough in half and roll each half out to a 1″ thick circle.
Cut each half into six 3 1/2″ rounds with inverted glass as a cutter.
Place on greased baking sheet far apart and brush with melted butter.
Cover and let rise until doubled, about one hour.
Bake at 180ºC for 9 minutes.
Note:
Oven temperatures vary so check after 9 minutes to see if done. Some reviewers baked these anywhere from 12 to 30 minutes.Nota: Het vanaand toe hamburger rolletjies gemaak. Heerlik uitgekom, maar sal volgende keer net die metode van rolletjies maak, verander. Ek sal my eie rolletjies met die hand maak ipv met ‘n cutter of glas (soos die resep sê) sny. Smaak heerlik!

JAM IN THE BREAD MACHINE
Use apricots, peaches or strawberries
6 fresh apricots de-stoned and chopped
60 ml water
20 g jam sugar
1 tablespoon fresh lemon juice.

Roughly chop or mash the fruit and place into the bread maker pan with the other ingredients. Set program on Jam and press start.
Once the cycle has ended, open the lid and remove the pan BE CAREFUL THE PAN IS VERY, VERY HOT AND A LOT OF STEAM WILL BE EMITTED.
Very carefully ladle the jam into clean, dry jars, cover and allow to cool before storing.

TAKE NOTE
Never be tempted to double or increase the quantities given in the recipe, the sugar and fruit get extremely hot, large quantities may lead to bubbling up and cause the jam to spill over onto the element causing damage.
Jam sugar is widely available. Ordinary sugar can be used in the recipe but some liquid pectin will have to be added to ensure the jam to set. Use approx 1 tablesp. of pectin to every 500 g of sugar.

BASIC WHITE BREAD FOR BREAD MACHINE
(This recipe is for a big bread machine (2 pound) and will rise to the rim of the pan. Do measure ingredients accurately (especially yeast) as too much yeast will make the bread rise too high or to fall in). Yeast must be fresh.
400 ml water (14 oz) room temp or a little warmer – (not too hot or too cold as this affects the growth of the yeast organisms).
1 ¾ teaspoons salt
2 tablespoons brick margarine or sunflower oil
5 cups bread flour
2 teaspoons active yeast
2 tablespoons sugar
2 tablespoons milk powder (I use coffee creamer)
Pour water, sugar and yeast in bread machine pan and stir to dissolve. Add salt, marg/oil and milk powder/creamer. Add flour. Bake at large/dark setting.
For brown bread use 3 cups white flour and 2 cups whole wheat flour’

I have done some research and speak of own experience.
Mixing the warm water with the yeast and sugar before hand and letting it stand for 10 minutes makes all the difference.
Your bread will always be a success if you do this with any bread machine recipe.
Most recipes tell you to add the flour and other ingredients and mix together but the yeast needs to be activated to ensure a successful bread.

Gebruik enige kitsmeel wat beskikbaar op die oomblik as ek in die winkel is.

Ek het gister die pers Anchors kitsgis gebruik, en vandag weer die NCP rooi pakkie. Altwee met ewe sukses.

Die groot geheim is dat al die bestanddele in die volgorde in die masjien moet beland, volgens die resep wat in die boekie is.

Die water moet net mooi lou wees. As dit te koud of te warm is, sal dit flop.

Ek het netnou op ‘n ander groep die volgende raakgelees. Het dit nog nie probeer nie, maar wil nog:
Die vroutjie raai aan om die gis, suiker en lou warm water eers te meng, en 10 minute te laat staan.

Makes a 1 ½-pound loaf  (750g)
1 package yeast
3 cups bread flour
¼ cup instant nonfat dry milk
1 tablespoon soft butter
1 teaspoon salt
2 tablespoons granulated sugar
1 ¼ cups warm water
1 ½ cups (6 ounces) sharp Cheddar cheese, grated

Add ingredients to pan as per manufacturer’s instructions, select white bread and push start.

YUMMY PEANUT BUTTER BREAD
1 cup warm water — (110ºC)
1 tablespoon white sugar
1 tablespoon brown sugar
2 tablespoons honey
1 teaspoon salt
3 tablespoons crunchy peanut butter
1 tablespoon vegetable oil
1 egg
3 cups bread flour
1 ½ teaspoons active dry yeast

Place ingredients in bread machine pan in the order suggested by the
machine’s manufacturer. Select white bread setting. Start. To bake bread in oven, select dough or manual cycle. Once cycle is complete, shape dough and place in a greased loaf pan. Allow to rise in a warm spot until doubled in size. Bake in a preheated 180ºC oven for 35 to 45 minutes or until a thermometer inserted in the center of the loaf reads 200ºC.

KAHLUA CREAM BREAD

KAHLUA CREAM BREAD IN THE BREAD MACHINE
1/8 cup Kahlua (you can use more)
¼ cup water
1 can nonfat evaporated milk
1 teaspoon salt
1½ tespoon canola oil
3 cups bread flour
2 tablespoons brown sugar
1 tespoon yeast

FILLING: Miniature chocolate chips

Place all ingredients, except for filling, into bread machine in the proper order for your machine. Use dough cycle. At end of dough cycle, remove dough and place on lightly-floured bread board. Cover and let rest for 10 minutes. Roll out dough into a rectangle, sprinkle with lots of miniature chocolate chips, and roll up into a loaf. Place in greased bread pan, cover and let rise for 45 minutes. Slash loaf with a lame or razor blade. Brush with milk. Bake in preheated 180ºC oven for 25 – 30 minutes. Remove loaf onto a cake rack and let cool.

TOMATO BASIL SHERRY BREAD (BREAD MACHINE)
1 ¼ cups tomato paste
½ cup sherry
1 teaspoon salt
3 cups bread flour
1 tablespoon vegetable oil
1 tablespoon dried basil
2 teaspoons active dry yeast
2/3 cup diced sun dried tomatoes

Place all ingredients in the bread machine in order suggested by your
machine’s manufacturer (except for the sun dried tomatoes). Select
regular setting, medium crust. At the beep or according to your manufacturer’s suggestion add the sun dried tomatoes. Remove immediately at end of baking cycle. Let cool and slice; spread with your favorite topping.
