1½ kg gemaalde beesvleis
1½ kg gemaalde varkvleis
500 g varkspek, grof gemaal of in klein blokkies gesny
50 ml geskroei en gemaalde koljander
25 ml sout
5 ml peper
2 ml fyn naeltjies
2 ml fyn neutmuskaat (nutmeg)
150 ml goeie asyn
150 ml Worsectersous
50 ml wonderpeper (allspice)
Derms.
Sny vleis en spek in blokkies, Meng vleise en spek. Meng al die bestanddele saam en meng goed in saam met die vleis.
Laat staan vir ten minste 1 uur, Stop die wors.

Deeg:
500 g koekmeel
175 g versiersuiker
250 g botterblokkies, by kamertemperatuur
skil van een suurlemoensap, gerasper
2 klein of 1 groot eier
vanilla geursel
Vulsel:
9 eiers
400 g strooisuiker
5 suurlemoene, skil van twee (gerasper)
250 ml dik room
sap van 5 suurlemoene

Sif meel en versiersuiker. Vryf botter in. Maak dammetjie in meel en voeg suurlemoenskil en vanilla geursel by. Klits eiers en giet in dammetjie. Maak deeg aan met vingers. Draai toe in plastiek en laat rus 30 minute lank in koelkas.
Maak intussen die vulsel.
Klop eiers, suiker, sap en skil tot goed gemeng. Vou room in. Haal deeg uit koelkas, laat staan 10 minute lank en rol uit. Voer losboom-koekpan met deeg uit. Laat 1 cm oor rand hang. Voer uit met foelie en pak goed met bakkersboontjies. Bak 10 minute lank by 100ºC. Verwyder foelie en bak nog 10 minute lank. Skep die koue vulsel in doe warm tertdop en bak 30 minute lank by 120 ºC.
Voor opdiening:
Stel oond op rooster. Sif 50 g versiersuiker bo-oor tert sodra dit uit oond kom. Sit terug onder die rooster vir suiker om te karamelliseer. Sit warm voor met room.

1 liter medium tot dikkerige vla
1 blik kondensmelk
sowat 125 ml suurlemoensap

Plaas een ry beskuitjies in ‘n reghoekige tert bak.
Giet helfte van die vla oor.
Pak weer ‘n laag beskuitjies.
Giet ander helfte vla oor.
Verdik kondensmelk met suurlemoensap en smeer oor vla laag.
Krummel 1 beskuitjie bo-oor.
Plaas oornag in yskas.
Regtig vinnig en baie lekker.

BAR ONE CHOCOLATE CAKE


BAR ONE CHOCOLATE CAKE
225 g butter
125 ml cocoa
5 ml coffee powder
250 ml water
2 eggs
300 ml sugar
10 ml vanilla essence
450 ml self-raising flour
190 ml cream
Topping:
2 x 58 g Bar One chocolates, cut up
50 g dark chocolate
100 ml cream
5 ml butter

Combine the butter, cocoa, coffee and water in a pot and heat gently until melted. Cool slightly and set aside.
Beat eggs and sugar, adding vanilla until light and fluffy. Add sifted flour and cream and mix well. While beating gradually add the cocoa mixture. Mix well.
Pour into a greased and lined 20cm-deep cake tin and bake at 180°C for 50-60 minutes.
For topping: combine all ingredients in a pot and heat gently until melted and smooth.
Cool until thickened. Pour over cooled cake. Leave to set.

CHOCOLATE MOUSSE CUPS
For the White Chocolate Mousse (Makes about 3 cups ):
230 g white chocolate, chopped
2 tablespoons unsalted butter
1¼ cups milk
3 large egg yolks
3 tablespoons sugar
2 tablespoons cornflour
2 teaspoons gelatine powder, softened in 3 tabelspoons cold water
1 cup whipping cream

For the Chocolate Cups :
8-10 mini balloons
115 g dark chocolate, chopped
1 recipe White Chocolate Mouse, chilled
Raspberries or chocolate shavings, for garnish
How to make Chocolate Mousse Cups
For the white chocolate mousse, place the white chocolate and butter in a medium bowl, with a strainer placed over it. Heat the milk to just below a simmer. In a separate bowl, whisk the yolks, sugar and cornflour together. whisk the hot milk into the egg mixture gradually, whisking while adding. Return this to the pot and continue to whisk over medium heat until glossy and thickened, about 4 minutes then stir in the softened gelatin. Pour this through the strainer and stir until the chocolate and butter has melted. Cool the chocolate mixture to room temperature.
Whip the cream until it holds a soft peak and fold this into the chocolate mixture. Chill the mousse until set slightly but still soft, about 90 minutes.For the Chocolate cups
For the chocolate cups , inflate and tie the mini balloons. Give them a little wipe with a damp cloth and allow them to dry. Have ready a parchment-lined baking tray.
Melt the chocolate in a metal bowl, placed over a pot of barely simmering water, stirring gently until melted. Remove the chocolate from the heat.
Dip the balloons halfway into the chocolate on a angle, and lift and rotate as dipping repeatedly, creating a tulip shape. Shake off excess chocolate and place each balloon onto the parchment-lined tray. Chill the balloons until the chocolate has set.
Use a pin to gently pop the balloon and let the air out slowly. Lift the balloon out of the cup and discard. Pipe the white chocolate mousse into the cups and top with raspberries or chocolate shavings. Chill until ready to serve.

Laat lê die netvet in sterk warm water voor jy die lewer daarin sit, anders kraak dit.
Vir elke 1 skaaplewer benodig mens omtrent 1½ netvet as jy dit in klein porsies gaan oprol om oor die kole te braai.
Maal die lewer met die ui, ‘n sny brood, speserye, sout en peper. Sny die netvet in 6 cm stukkies.
Skep dessertlepelsvol van die gegeurde lewer daarop. Vou die netvet toe om die lewer.
Meeste van die vet braai weg en net die lekkerte bly oor. Braai oor ‘n stadige vuur.

Hierdie is my eie resep. Die mates is by benadering want ongelukkig hou ek nie altyd rekord van hoeveelhede nie, jammer.
1 groot skaaplewer (of bees/wild), skoongemaak en velletjie afgetrek
250 g spek
2 groot uie
3 groot eiers
2 snye brood
1 blikkie geroomde sampioene
Bogenoemde sit ek alles deur die vleismeule.
Voeg by:
sout en peper na smaak
1 groot handvol gekapte pietersielie
5 ml oreganum
2,5 ml komyn
knoffelspeserye na smaak

Laastens sif bruismeel by om ‘n nie te slap degie te vorm, vorm die koekies en braai in vlak olie tot goudbruin en gaar.
My mense lief dit.

Dieselfde gepluisde hoendervleis kan ook in sult omgetower word.
Al is die versoeking hoe groot, moenie die sult dadelik eet nie.
Na ‘n dag in die yskas smaak dit prima!

1 mediumgrootte hoender, gekook en ontbeen
250 – 300 ml hoenderaftreksel (van die gekookte hoender)
2 mediumgrootte uie
kookolie om in te braai
10 ml kerriepoeier
1 wortel, gerasper
25 ml gelatien
30 ml kookwater
20 ml appelkooskonfytasyn
sout en peper na smaak

Braai ui in kookolie tot sag en deurskynend.
Voeg kerriepoeier en wortel by. Verwyder vet van hoenderaftreksel en voeg die vloeistof by.
Prut vir nie langer as tien minute nie.Los gelatien in kookwater op en voeg dit by.
Meng appelkooskonfyt met asyn, voeg by die kerriemengsel en kook 10 minute.
Roer af en toe.
Voeg nou die vleis by kerriesous en kook tot deurwarm.
Roer, proe en voeg nog asyn by indien nodig.
Geur met sout en peper.
Indien nodig, kan meer sous by mengsel gevoeg word.
Skep hoendermengsel in ‘n geskikte broodpannetjie of vorm en bedek met kleefplastiek.
Plaas in yskas om te stol.
Sit voor met varsgebakte brood en slaai.

MAKING HAM AT HOME
Ham is one of the easiest of preserved meats to make.
There are as many ways to make ham as there are people who make it but I will present what seems to me the easiest and most foolproof method to produce ham at home.
SYNOPSIS
Ham is made by soaking a piece of pork in a salt brine for a period of time depending on it’sweight and then cooking and/or smoking it. Depending on the process, it can be ready to eat or cured for months and cooked as eaten or various combinations in between. The process I will describe is commonly known as “boiled ham” in spite of the fact that it is never boiled. I will also show a variation on the theme to produce a great smoked ham for folks with the equipment for smoking.

MEAT
Ham is made from pork and just about any piece of pork will produce what tastes more or less like ham.
Traditionally, ham is made from the upper portion of the hindlegs which weigh from 15 to 25 lbs. This is not easy to deal with in the kitchen and I have never made a whole ham for this reason.
I have found the most practical piece of meat for home made ham to be portions of the loin. This is the stuff of rolled roasts and if you can’t find loin, just buy a rolled roast, untie it and use the two pieces to make two hams. I can get my butcher to cut it to any size I want and usually get a six lb piece and cut it in half to make two 3 lb hams.
The experts insist that the meat for ham must not have been frozen and I have no reason to try to prove them wrong. Freezing modifies the cell structure in such a way that it will not absorb the brine properly.

THE BRINE
The meat must be made to take up salt, spices and a cure to provide the characteristics we call ham. Many folks use a dry rubbing method but I find the liquid brine far simpler to deal with and that is what I will describe here.
In addition to the salt, sugar and spices, the brine contains what is known as a cure. Many old timers do not use this but I do not consider it an option, if for no other reason than the fact that gray ham is not very appetizing. The cure is what gives ham it’s pleasing pink color in addition to protection from botulism and other pathogenic organisms.

The brine is mixed in a plastic or stainless bucket large enough to hold the brine and meat. The following one gallon batch will do about 10 lbs of meat.
Brine Recipe
Water……………………………..1 gallon
Pickling Salt…………………..1 cup
Sugar………………………………1/4 cup
Prague #1 (Cure)……………1/3 cup (Salpeter)
Pickling Spice…………………1 tsp
Cloves……………………………..1/2 tsp

The brine should be cooled to around 40F before the meat is placed in it. It should also be kept near that temperature during the brining period so that is another reason to make small hams…. you can find space in the fridge. Do not let it get below about 38 degrees F though because the cure ceases to function around there. Monitor the brine temp with a thermometer and just remove it for a while if it gets too cold.
The brining time is mainly a question of personal taste. The longer it stays in the brine, the saltier it gets. I find 4 days about right for a 3-5 lb piece of loin. You can speed things up by pumping brine into the meat with a syrenge but that is probably overkill for small pieces.
COOKING
For a garden variety “boiled ham”, the meat is removed from the brine, rinsed off and placed in water at 170F. It is held there until the internal temperature reaches 155F on a meat thermometer. This will take about an hour for a 3 lb piece.
After cooking, the ham is chilled in cold water for about 30 minutes and then put in the fridge overnight. Next day you will think you just returned from the deli.
SMOKING
If you have a smoker, there are may options here. If you just want a little smokey flavor, you can smoke it either before or after cooking, for about 5 hours. Smoking before cooking will produce a moister, less salty ham.
If you want a ham more like “country cured”, smoke it for 24 hrs @ 130 degrees F. Then slice a piece and fry it and you will think you died and went to heaven. Make sure it is fully cooked when you fry it as it has not yet been cooked. You can also cook it in the smoker to an internal temp of 155  degrees F but it will be even dryer and harder.
KEEPING
All of these hams must be kept in the fridge and treated like you would any cooked ham. They will keep for a few weeks… not months or years like “country cured” hams.
They can of course be frozen but that presents other problems. Freezing breaks down cell structure and thawing causes great loss of moisture. However, if you are going to fry it up with eggs, it won’t make much difference. I like to take a finished ham and run the whole thing through the meat slicer and freeze in serving portions. They are the perfect size for Egg Von Schmidlings. In fact, when you make ham out of loin, it is commonly known as Canadian bacon.

KOEDOE-SKENKEL SULT
Hier is my sult sonder enige afval:
2 groot uie, gekap
2 knoffelhuisies, gekap
ongeveer 3 kg wildskenkels
½ koppie donker asyn
½ koppie water

Plaas bogenoemdes alles in ‘n slow-cooker. Ek het my wildskenkels sommer gevries ingesit, dit op hoog gekook vir 8 ure, tot die vleis van die bene afgeval het. Laat dit koud word, en ontbeen die vleis heeltemal.
1 eetlepel kerriepoeier
1 eetlepel borrie
1 teelepel koljander, fyn
1 teelepel gemmer, fyn
1 teelepel kaneel, fyn
Braai hierdie speserye in ‘n bietjie olie vir 1 minuut in ‘n groterige kastrol, sit by die vleis in.
Voeg by:
250 ml water
1 suurlemoen se sap
1 teelepel wit peper
6 eetlepels fyn appelkooskonfyt
sout na smaak
Verhit tot kookpunt, roer lekker deur. Haal van stoof af, skep in ‘n gesmeerde vlak pan en laat afkoel. Sit in yskas om te stol.
Dit is lekker om in die yskas te hou vir so tussen-deur pik, of vir ‘n koue vleisbord saam met bietjie soet mosterd.
