WATERMELON LIME JELLO SHOTS

watermelon jello shots
WATERMELON LIME JELLO SHOTS
10 limes, pulp removed
1 box red Jello (I used strawberry because my grocery store didn’t carry watermelon flavored, but obviously if yours has watermelon – grab it!)
1 cup boiling water
1 cup cold vodka (Again, if you have melon flavored, go for it)
Mini chocolate chipsHalve limes and use a paring knife around the edges of the halves to loosen the pulp from the rind. My technique was to do this, and then juice them with my Kitchen Aid attachment, which helped remove the loosened pulp. Plus, then I got a cup of freshly squeezed lime juice! I also used my (clean) fingers to finally help scrape out the resilient pulp under a running faucet. Set lime halves aside, empty side up.

Add 1 cup of boiling water to the Jello powder, and stir for 2 minutes until fully dissolved.
Stir in cup of cold vodka.
Pour mixture into lime halves, filling all the way to the top.
Chill Jello-limes in the fridge for at least 2 hours.
Using a sharp knife, carefully cut each lime half in half again, making wedges.
Stick in chocolate chips, if desired.

Gebak vir amper 2 ure op 160ºC in my Argilla bak.

WENKE VIR FLATERVRYE GELATIEN GEREGTE

 gelatien

WENKE VIR FLATERVRYE GELATIEN GEREGTE
1. Week die gelatienpoeier of – velle eers ‘n paar minute in koue water.

CHICKEN PARMESAN CASSEROLE

CHICKEN PARMESAN CASSEROLE
Recipe tested: Willemien Windell
FOOD LOVERS RECIPES
Would like to share this recipe with you. I made this for lunch today and it was a WINNER! My husband absolutely loved it. Usually I’m not one to just make a recipe from the internet, but something just tickled me and so I gave it a try. And am I not glad!
This casserole is amazing. I don’t know how else to describe it. No seriously. It is good. Ridiculously good.
6 chicken breasts (however many you want/need)
olive oil (just one dollop)
minced garlic (a smattering or a little more than a smattering if you really like garlic)
red pepper flakes (leave these out if you don’t like any heat)
marinara sauce (probably won’t need more than one jar unless you are a marinara friend)
Parmesan cheese
mozzarella cheese (you will need twice as much mozzarella as Parmesan)
croutons (garlic or Italian-seasoned)

Cubed the chicken instead of leaving it whole pieces.
Into the bottom of a casserole dish goes some olive oil, some minced garlic and some red pepper flakes. And yes, those are the technical measurements. Use exactly “some.” No more, no less.
Cover the chicken with as much marinara sauce as you deem necessary.
Cover the marinara sauce with a 2 to 1 mozzarella to Parmesan ratio and cover the layer of cheese with a layer of croutons. Add another layer of 2 to 1 mozzarella to Parmesan on top of that. (We love cheese. Therefore, we love this part of the recipe.)
Bake the dish for about 35 minutes at 180°C.
Note:
I pre-cooked the chicken, boned it and cut it into bite-sized pieces, otherwise the 35 min is not enough to get the chicken cooked properly.

‘n paar chillies, baie fyn gesny

Nota: Leanne Thurston Coetzer

HERB JELLIES-APPLE

apple jelly

HERB JELLIES-APPLE

Piquant herb jellies are versatile accompaniment to roast meats, poultry and game, cold cuts, and raised pork or game pies.
BASIC APPLE JUICE STOCK – BASIS TO MOST JELLIES
25 large cooking apples (about 5kg) washed and roughly cut up incl. peel and cores
10 cups water
10 cups distilled white vinegar.
METHOD:
To make the basic apple juice stock, put the prepared apples and water in a stainless-steel or enamel preserving pan. Simmer for 45min, or until soft and pulpy. Add the vinegar and cook for 5min. Meanwhile line two large nylon sieves or colanders with several layers of scalded muslin or scalded tea towels and place them over two large bowls. Pour the apples and the liquid into the lined sieves and allow to drain overnight undisturbed. Do not press the fruit or squeeze as this will make the jelly cloudy.
FOR MINT OR SAGE JELLY ( about 4 jars of 250ml each) (70)
3 tablespoons fresh mint or sage leaves
4 cups basic apple juice stock
3 cups sugar
Natural green food colouring (Optional)
Dip the mint or sage in boiling water for 2-3 seconds, then rinse them under cold water. Pat the leave dry with paper towel and chop them finely. – there should be about a tablespoon. Pour the apple juice stock into a large heavy-based saucepan, add the sugar and stir over low heat until all the sugar has dissolved. Bring the mixture to a full rolling boil and boil for 5-10min. Remove the pan from the heat and test if the setting point has been reached.. When the jelly will set, quickly skim the scum from the surface, stir in the chopped mint or sage and a few drops of green colouring, if used. Pour into clean, warm jars and cover immediately with waxed paper discs. When the jelly is cold, label and date the jars and store them in a cool, dark airy cupboard.

FOR ROSEMARY OR THYME JELLY
8-10 small fresh rosemary or thyme springs do not chop, keep in sprigs, rest same as for mint or sage jelly. Do not use the green colouring.
