BASIC CHOCOLATE CAKE


BASIC CHOCOLATE CAKE
2 cups flour
¾ cups cocoa powder
1 ½ tsp baking powder
2 tsp baking soda
pinch of salt
1 cup milk
1 tsp vanilla essence
2 cups sugar
½ cup oil
1 cup boiling water or hot coffee
2 eggs

Preheat the oven to 180°C. Line two 23 cm round cake pans, or one 23 x 33 cm rectangular baking pan, with wax paper.
Grease the paper and the sides of the pan well.
In a large bowl, sift the dry ingredients together.
Add the eggs, milk, oil and vanilla essence and beat with an electric mixer for about two minutes.
Add the boiling water or coffee and mix until combined.
Pour the batter evenly into the prepared pans and bake for 30-40 minutes.
To test if the cake is ready, insert a toothpick into the middle of the pan. If it comes out clean, the cake is ready. A single rectangular cake will take slightly longer to bake than two round layers.
Slide a knife around the edge of each cake to loosen it from the pan, turn the pan over onto a metal rack and peel off the paper.
Let the cake cool completely before covering with icing.

GEBOTTELDE PERSKES
Ek het bietjie perskes verwerk na daai amazing winskopie nou die dag. Geelperskes is iets wat skaars en duur is hier. Ek het nie resepte gebruik nie, net gemaak soos my ma my geleer het.

Ek het die perskes geskil en in water laat lê tot ek die laaste gedoen het. Toe vat ek daai lekker perskewater en witsuiker en maak stroop 1:1, en kook die perskehelftes vir so 10-15 minute in die res van die perskewater.

Toe sit ek dit in die strooppot en skep van daar af in warm gesteriliseerde bottels met stroop. Toe in waterbad (kokende pot) gekook vir 15 minute vir elke pot met bottels. Toe vat ek die stroop wat oor is, kook dit tot baie dik en los eenkant, en kook die konfyt perskes in suiker (750g suiker vir elke 1 kg vrugte) en WAS AF die suikerkorrels op die kante van die pot (verhoed dat dit sandsuiker word). Toe dit amper sag was, het ek die stroop wat oor was bygesit met ‘n sakkie pektien, deurgekook en gebottel in gesteriliseerde flesse.

Kors
Smelt 125 g margarien en voeg 1 pak marshmallows by. Roer tot alles gemeng en gesmelt is. Voeg dan ongeveer 4 koppies Rice Crispies by tot ditnie meer so taai is nie en gemaklik kan deursny.
Voer dan jou bak uit met die Rice Crispie mengsel tot dit vir jou dik genoeg is en maak van die orige kors net sommer blokkies of voer ‘n groot tertbord uit daarmee en maak dan die res van die bestanddele dubbel aan indien jy ‘n oondpan wil gebruik.
Smeer nou blik karamel kondensmelk oor die kors

Pak ‘n laag gesnyde piesangs so 2 tot 3 piesangs, bo op die karamel.
Klits 1 bakkie room styf en sit bo-op die piesanglaag.
Breek en strooi ‘n Flake bo-oor.
Sit in die yskas.
Nota: As jy jou oondbak groote pan gebruik, dan moet jy 2 blikkies kondensmelk, 6 piesangs, 2 bakkies room en 2 Flakes gebruik.

ULTRA FLUFFY MILK BREAD ROLLS
For the tangzhang (starter):
3 tablespoons (43 g) water
3 tablespoons (43 g) whole milk
2 tablespoons (14 g) flour

For the dough:
2 ½ cups (298 g) flour
2 tablespoons (14 g) dry milk powder (not Cremora)
¼ cup (50 g) sugar
1 teaspoon salt
1 tablespoon instant yeast
½ cup (113 g) full cream milk, slightly warmed
1 large egg
¼ cup / 4 tablespoons (57 g) melted unsalted butter
for the egg wash
1 egg
1 tablespoon heavy whipping cream or milk

For brushing the baked rolls (optional):
½ tablespoon melted butter
For the whipped honey butter: (optional condiment for the rolls)
½ cup (113 g / 4 oz) unsalted butter, softened to room temperature
¼ cup honey
¼ teaspoon cinnamon (optional)

To make the tangzhong (starter):
Combine the water, milk and flour in a small saucepan, and whisk together until no lumps remain.
Place the saucepan over low heat, and cook the mixture, stirring constantly using a heat-proof rubber spatula or whisk, until thickened to the consistency of loose roux and the spatula/whisk leaves lines in the bottom of the pan when dragged through; about 3 to 5 minutes.
Transfer the tangzhong to a small bowl, cover with plastic wrap directly on its surface and let it cool to room temperature. (To quicken the cooling process, I put it in the fridge while preparing the other steps)
To make the dough.
In the bowl of a stand mixer (or any large bowl or bread machine) whisk together the flour, milk powder, sugar, salt and yeast to combine.
In a 2-cup measuring cup (or medium bowl) whisk together the milk, egg, melted butter and cooled tangzhong until well combined.
Pour the milk mixture over the flour mixture and with the mixer on low speed, knead together using the dough hook (or by hand or bread machine) until a dough forms. The dough will be very sticky when mixing begins, but resist the urge to add more flour; the dough will absorb the excess moisture and come together nicely as the mixing progresses.
Increase the speed to medium low and continue kneading until a smooth, elastic dough forms and is no longer sticky; 15 to 20 minutes. Set the timer! (It takes me exactly 20 minutes until its not sticky enough to handle) At this point, the dough should feel tacky (slightly sticky but not messy) and should easily come together in a taut ball when handled with lightly oiled hands. If this is not the case, then knead in a little more flour, one tablespoon at a time. A good indication of telling when the dough is ready, is being able to stretch between your hands into a thin film without it breaking right away. When it starts tearing, it will tear in a circular fashion.
Using lightly oiled hands, shape the dough into a ball, and transfer to a lightly greased large bowl. Cover tightly with plastic wrap and allow to rise in a warm place, until almost doubled in volume, 60 to 90 minutes.
Turn out the dough onto a work surface (you shouldn’t need to dust it with flour). Pat the dough gently into an 8-inch square of even thickness. Using a bench knife or chef’s knife, cut the dough into 9 pieces (3 rows by 3 rows). Separate pieces and cover loosely with plastic.
Spray (or grease) an 8 or 9-inch square pan with non-stick cooking spray. Working with 1 piece of dough at a time and keeping remaining pieces covered, form dough pieces into smooth, taut rounds. To round, set piece of dough on unfloured work surface. Loosely cup hand around dough and, without applying pressure to dough, move hand in small circular motions. Place the rolls into the prepared pan. Cover the pan loosely with plastic wrap and allow the rolls to rise for 40 to 50 minutes, until puffy. In the last 10 minutes of rising, preheat the oven to 350°F/180°C. If you want to ensure browned bottoms on your rolls, place a pizza stone or baking sheet in the oven to heat.
Prepare egg wash by whisking together the egg and heavy cream. When ready to bake, remove the plastic wrap from the pan, then gently brush the rolls with the egg wash. Bake the rolls (on top of the pizza stone/baking sheet, if using) for 20 to 25 minutes, until golden brown on top; a digital thermometer inserted into the center of the middle roll should register at least 190°F. (If the rolls tops are browning too quickly, loosely place a piece of foil on top of the rolls to prevent further browning).
Remove the rolls from the oven, then immediately brush with the 1/2 tablespoon melted butter. Allow them to cool in the pan for 10 minutes, then gently flip them onto a large plate then onto a wire rack. Serve warm or at room temperature with anything you please or slather with honey butter (recipe below). Store leftovers in an airtight container or freeze in freezer bags.

To make the whipped honey butter (if using):
Add the butter, honey and cinnamon in a bowl and whip with the whisk attachment of an electric mixer until light and fluffy; 3 to 5 minutes.
Serve at room temperature but store in airtight container in the fridge.

DENZY’S CRAYFISH NOODLE SALAD


DENZY’S CRAYFISH NOODLE SALAD
1 pkt shell noodles
20 crayfish tails
1 onion, chopped
1 red peppers, chopped
1 green pepper, chopped
1 yellow pepper, chopped
1 tomato, chopped
2 teaspoons thyme
1 cup mayonnaise
2 table spoons sugar
1 cup Knorr 1000 islands salad dressing
1 cup whole kernel corn
salt and pepper

Boil water in pot with salt, add noodles and cook till soft, strain and let cool.
Clean crayfish tails, cook in salt water for 10 to 15 mins, cool and take out of shell, leave aside to cool. Add peppers, onion, tomato, thyme, whole kernel, noodles and crayfish to a bowl. Mix together mayonnaise, 1000 islands dressing and sugar, then add to noodles, then mix together, salt and pepper.

SOSATIES
500 g uie, in kwarte gesny of heel klein uitjies
2 eetlepeles kerrie
2 teelepels gemmer, fyn
4 eetlepels borrie
1 teelepels komyn (jeera)
2 eetlepels vinkel of steranys
5 eetlepels bruinsuiker
2 eetlepels mielieblom (maizena)
750 ml bruin druiweseyn (nie balsamiese asyn nie)
1 koppie water
1 koppie appelkooskonfyt
8 gekneusde suurlemoenblare

Kook al die marinade bestanddele in ‘n groot kastrol vir 5 minute of tot dit begin verdik. (Moenie dat uie pap kook nie). Laat afkoel.

Vleis
1.5 kg beesfillet en skaapboud (50/50)
500 g varkfilet of varkboud
250 g skaapstertvet of varkspek

Sny vleis in netjiese 3 cm blokkies – dit hanteer beter as dit effens gevries is. Sny vet in 3 x 1 cm stukkies. Marineer die vleis en uie in afgekoelde kerriesous vir 2 dae. Roer kort-kort om seker te maak die sous bedek alles.
Ryg vleis, ui en spek op geweekte sosatiestokkies. Maak seker dat die vleise van beide soorte eweveel geryg word.
Kook oorblywende sous en sit saam met sosaties voor.

CREAMY AND COLORFUL COLESLAW
250 ml (1 cup) red cabbage, shredded
250 ml (1 cup) green cabbage, shredded
250 ml (1 cup) green apple, coarsely grated
¼ red onion, coarsely grated
60 ml (¼ cup) seedless raisin
60 ml (¼ cup) mayonnaise
5 ml (1 teaspoon) wholegrain mustard
5 ml (1 teaspoon) lemon juice

Combine all the salad ingredients in a large bowl.
Mix the mayonnaise, wholegrain mustard and lemon juice in a small bowl.
Pour the salad dressing over the salad ingredients.
Toss well and serve.
Serve as a side dish with braai or barbecued meat, with grilled chicken breasts or fish, or as a topping on burgers, tacos and pulled-pork sandwiches

HOT CROSS BUNS WITH VITAMIN C TABLET
Sponge:
310 ml flour
25 ml instant yeast
17.2 ml sugar
250 ml water
125 ml milk
1 vitamin C tablet dissolved in 100 ml milk

Dough:
500 g flour
5 ml mixed spice
5 ml cinnamon
5 ml allspice
3 ml salt
(Sieve together)
120 g stork
125 ml sugar
2 eggs
100 g raisins
30 g sultanas
20 g mixed peel

Preheat oven to 220°C.
Blend ingredients for yeast sponge together in bowl til smooth. Stand in warm place until it froths to double its size.
Meanwhile rub the stork into the sieved ingredients. Stir in the sugar, add the yeast mixture, and eggs and beat well until mixture comes away from the sides.
Turn onto floured board and knead well adding the fruit at the same time.
Place dough in a floured bowl, cover with a damp cloth and leave in a warm place to rise (about 30 minutes).
When risen, turn out of bowl and knead again until smooth.
Form small balls (24) and place on greased baking sheet.

Leave to double in size (approximately 15 minutes) then pipe the cross on an bake for 15 minutes. Place dish of water in the base of the oven to give a steamy atmosphere.
This gives a softer finish to the buns. When cooked, brush with a strong solution of boiling water and sugar to glaze.

Batter for Crosses
30 ml stork
240 ml flour
5 ml baking powder
125 ml milk

Rub stork into flour and baking powder. Mix in milk gradually until a smooth batter is obtained. Pipe onto buns just before baking.
NB. The vitamin C tablet is not essential, but speeds up the action of the yeast, cutting down the proving and raising times.

Nota:   Hulle is heerlik sag binne. Nie ‘n baie sterk spesery smaak nie. Die kors was effens crispy, maar nadat ek die glasering oor geverf het, het dit dadelik sag geraak. Die deeg is ‘n baie lekker hanteerbare deeg.

FOOD LOVERS RECIPES
Dis karringmelbeskuit, maar kan aangepas word na enige ander beskuit waarvoor jy lus is.
5 koppies koekmeel
3 koppie “nuttywheat”
2 koppies suiker
1 koppie hawermout / Allbran / neute / bessies / klapper
45 ml bakpoeier
10 ml sout
500 g Woodenspoon margarien wit of geel
2 eiers
Meng die volgende:
15 ml koeksoda
15 ml asyn
500 ml karringmelk, ek gebruik ook die maas
Meng al die droë bestanddele saam in ‘n mengbak, sommer met jou hand.
Smelt die margarien in die mikrogolf, voeg dit by die droë bestanddele en vryf dit in met die hande totdat dit soos krummels lyk.
Maak ‘n holte in die middel van die meelmengsel en breek die eiers daarin.
Voeg die koeksodamengsel by die eiers in die meel en meng goed saam met jou hand. Indien die mengsel te nat is voeg bietjie koekmeel by.
Skep in gespuite of gesmeerde oondpan en maak gelyk. Ek gebruik in oondpan van 45 cm x 40 cm groot.
Bak in ‘n voorverhitte oond teen 180ºC vir 30 – 35 min. Toets met ‘n toetspen, oonde verskil en bak dalk stadiger.
Haal die beskuit uit die oond, keer dit uit op ‘n afkoelrak, bedek met ‘n doek en laat dit afkoel.
Sny die beskuit in stukke soos verkies. Pak die stukke beskuit op ‘n bakplaat en droog dit uit in die oond op 70ºC tot uitgedroog.
Nota:
Indien jy nie van die 1 koppie oats / Allbran ens wil byvoeg nie, gebruik dan 9 koppies koekmeel, dan is die beskuit wit en net gewone karringmelkbeskuit.
Dis vrek lekker en baie bros en sag, al is dit klaar gedroog.
Lekker bak almal.




CHILLI JAM


CHILLI JAM
150 g chilli’s
150 g red pepper
1 kg sugar
600 ml vinegar
2 large granny smith apples

Chop the chillies and pepper fine.
Peel and grate the apples.
Combine all ingredients in a pot and cook over moderate heat till the jam is ready.
Bottle and seal hot.

This is the recipe I started with from Nicolette. However I have used a mix of chilli fruit depending on whatever I have on hand. So cayenne, jalapeño and Serano. Any ratio doesn’t matter. I have also found that I can up the ratio of fruit significantly. For this sugar / vinegar quantity I put in 900 grams of finely chopped fruit.
The other thing worth mentioning is that there is no discernible difference in taste between brown grape vinegar or the much cheaper brown spirit vinegar.
