KOEKSISTERS MET KAMER TEMPERATUUR STROOP
380 ml koekmeel
22 ml bakpoeier
1 ml sout
25 ml margarine
150 ml melk
olie om in te bak

Stroop:
600 ml witsuiker
250 ml water
30 ml suurlemoensap

Stroop:
Verhit suiker en water tot op kookpunt tot suiker opgelos is, haal stroop af en roer suurlemoensap in. Laat afkoel tot kamer temperatuur.
Deeg:
Sif droë bestanddele saam, vryf margarine met vingerpunte in.
Gooi melk by en knie stadig in. Rol deeg dun uit sny in repies en begin vleg.
Bak tot goudbruin  in warm olie en druk in stroop terwyl warm is. Laat koeksister dreineer op rakkie.

THAI CURRY CHICKEN WINGS
(Low Carb and Gluten-Free)
Crispy baked chicken wings marinated in coconut milk and brushed with spicy hot homemade Thai curry paste. The perfect appetizer!
1 can coconut milk
2 tbsp plus 2 tsp homemade Thai Curry Paste divided (recipe below)
1 kg chicken wings
1 tbsp fish sauce
Salt and pepper to taste

In a large bowl, whisk together coconut milk and 2 tbsp of the Thai curry paste.
Remove 1/3 cup of the mixture to a small bowl and set aside.
Add wings to the large bowl and toss to coat evenly. Refrigerate for at least 3 hours.
Preheat oven to 200ºC.
Stir fish sauce and 2 tsp curry paste into reserved coconut mixture to make a basting sauce.
Remove wings from marinade and shake off excess (marinade will be very thick).
Place on a pan with a grid.
Brush with half of basting sauce and sprinkle with salt and pepper.
Bake 12 minutes, then flip wings, brush with remaining sauce and sprinkle with salt and pepper.
Bake another 12 to 15 minutes or until golden brown.
Turn off oven and leave wings inside for another 20 minutes or so, to crisp.

ROOM AARTAPPELS 3 BESTANDDELE
5 medium groot aartappels, geskil en in ringe gesny
250 ml room
gerasperde kaas
In 2 liter bak het ek laag aartappels gepak, en sout oorgestrooi , dan laag kaas en herhaal tot bak vol is.
Gooi room oor en ek gooi so 20 ml water in room bottel om alle room uit te kry, spoel bottel en gooi ook oor die aartappels.
Mikrogolf op high  vir 20 min. indien aartappels nog nie sag is nie, mikrogolf ‘n verdere 10 min. of tot aartappels sag is.

Kors:
¾ van n 200 g-pakkie Mariebeskuitjies, gekrummel
80 g botter gesmelt
Vulsel:
385 g kondensmelk
125 ml (½ koppie) suurlemoensap
5 ml (1 teelepel) suurlemoenskil, fyn gerasper
3 eiergele
115 g granadillapulp
Meringue:
3 eierwitte
125 ml (½ koppie) strooisuiker
5 ml (1 teelepel) druiweasyn
15 ml (1 eetlepel) mielieblom

Voorverhit die oond tot 180°C en spuit tertbak.
Kors – Meng die koekies en botter en druk op die bodem van die bak vas.
Vulsel – Klits die kondensmelk, suurlemoensap, -skil, eiergele en granadillapulp saam en giet die mengsel op die kors.
Meringue – Klits die eierwitte styf en voeg die strooisuiker geleidelik by.
Voeg die asyn by en sif die mielieblom oor die eierwitte en vou in, dit sal die skuim stabiliseer.
Sif bietjie mielieblom oor die vulsel, plaas die meringue bo-op die tert en bak die tert in die voorverhitte oond vir 10 min of tot die merinque ligbruin is bo-op.
Nota:  Ek sal eierwit minder maak, 3 eierwitte is te veel vir my.




SODAWATER KORS


SODAWATER KORS
4 ½ koppies koekmeel
1 teelepel sout
1 ½ teelepel kremetart
280 ml sodawater
geel van 2 eiers
2 eetlepels wit asyn
500 g botter

Rasper botter in meel, sout en kremetart in, vryf met vingers in tot dit soos krummels lyk.
Meng geklitste eiergele by sodawater in, meng goed en roer asyn laaste in by sodawater.

Meng sodawatermengsel in by meelmengsel en meng om ‘n lekker deeg te vorm.
Maak deeg toe in kleefplastiek.
Laat rus in yskas 8 ure en gaan geniet ‘n teetjie of wyntjie.
Gebruik oor hoendervulsel vir pasteie.
Ek het die hoender sag gekook met naeltjies en fyn gemaak, my man love naetjies(hoeveelheid na keuse)
Kook fyn hoender deur met 1 pakkie soppoeier, en laaste voeg 250 ml room in.
Ek het uie en sampioene apart gebraai, meng alles saam en laat hul ‘n wyle met mekaar gesels op die stoof.
Sit in oondbak en as afgekoel het, trek sy lekker deeg kombers aan. Rol die deeg uit, en sit oor die hele vulsel, seël die kante goed. Sprinkel paprika bo-op en bak 180ºC vir so 30 min.
Nota:  Hierdie deeg en pastei vries fantasties, vries die rou pastei, en bak wanneer nodig.

FALAFEL


FALAFEL
400 gram tin chick peas, drained and placed on paper towel to dry
1 small onion, finely chopped
1 clove garlic finely chopped
1 handful of fresh parsley, chopped
½ tsp salt
1 red chilli chopped (optional)
½ tsp cumin powder
1 tsp tumeric
1 Tsp plain flour

In a blender, place all ingredients, except chick peas. Blend until mixed nicely. Scrape the sides. Add chick peas and blend again, scraping the sides. Don’t blend too much. It must be coarse. Heat oil to medium heat. Make small balls and flatten. Cook in oil until brown, turning every now and then. Place on a plate with kitchen towel on it to drain the oil. Eat with a bit of hummus on top (optional).

MARELIZE SE WILDSPASTEI


MARELIZE SE WILDSPASTEI
1-1.5 kg wildsvleis
1 – 2 pakkies spek 250g elk
500 g – 1 kg bees chuck
1 ui, baie fyn gekap
2 blokkies hoenderaftreksel (opgelos in so ‘n koppie water)
60 ml koekmeel
10 ml (of na smaak) heelkorrelmosterd
250 ml melk
sout en peper

Kors:
125 ml melk
125 ml olie
200 ml koekmeel
1 eier
10 ml bakpoeier

Ek het oornag die wildsvleis in ‘n slowcooker op High (8 ure) gesit. (Asseblief week joune oornag in karringmelk as jy nie ‘n sterk maag het nie.)
Ek het toe die spek gaar gemaak en die beesvleis ook in die slowcooker gesit nadat ek die wildsvleis uit gehaal het. Dit het vir so 6 ure op hoog in gegaan.
Ek het toe die bees- en wildsvleis van die bene afgehaal en fyn gemaak, en al die vleis saam gemeng.
Daarna het ek die oorblywende bestanddele saam met die vleis in gegooi en in ‘n pot laat prut sodat meeste van die vloeistof verdwyn het. (Dit hang maar van persoon tot persoon hoe baie vloeistof jy in jou pastei wil hê). Skep die vleismengsel in ‘n groot pan.
Ek het toe die kors aangemaak en oor die vleismengsel in die pan gegooi.
(Dit was ‘n groot pan, maar een keer se aanmaak was genoeg gewees.)
Sit in voor verhitte oond by 180 ºC tot die deeg gaar en mooi bruin is.  Dit was maar so 20 minute in die oond. So dit het nie lank gevat nie. Ons het dit bedien met rys, slaai en olie-gebakte aartappels.

LIMONCELLO


LIMONCELLO
15 lemons
2 (750 ml) bottles of good quality vodka
4 cups of sugar
5 cups of water

Wash the lemons with a vegetable brush and hot water to remove any reside of pesticides or wax; pat the lemons dry.
Carefully zest the lemons with a zester or vegetable peeler so there is no white pith on the peel.
In a large glass jar (5 l) add vodka.
Add the lemon zest as it is zested.

Cover the jar and let sit at room temperature for at least (10) ten days and up to (40) days in a cool dark place. The longer the mixture rests, the better the end taste will be.
There is no need to stir – all you have to do is wait. As the limoncello sits, the vodka slowly take on the flavor and rich yellow color of the lemon zest.
Make a basic simple syrup using the 4 cups sugar and 5 cups water:
In a large saucepan, combine the sugar and water; bring to a gentle boil and let boil, approximately 5 to 7 minutes. Remove from heat and let the syrup cool before adding it to the Limoncello mixture.
Add cooled sugar mixture to the Limoncello mixture (from Step One). Cover jar and allow to rest for another 10 to 40 days.
After the rest period, strain the Limoncello; discarding the lemon zest.
NOTE: Coffee filters or cheesecloth work great for straining the mixture. Moisten the filters before beginning the straining process. Pour strained Limoncello in bottle/bottles (of your choice) and seal tightly.

CHOCOLATE CAKE WITH COFFEE
2 cups flour
¾ cups cocoa powder
1 ½ tsp baking powder
2 tsp baking soda
pinch of salt
1 cup milk
1 tsp vanilla essence
2 cups sugar
½ cup oil
1 cup boiling water or hot coffee
2 eggs

Preheat the oven to 180°C. Line two 23 cm round cake pans, or one 23 x 33 cm rectangular baking pan, with wax paper. Grease the paper and the sides of the pan well.
In a large bowl, sift the dry ingredients together.
Add the eggs, milk, oil and vanilla essence and beat with an electric mixer for about two minutes. Add the boiling water or coffee and mix until combined.
Pour the batter evenly into the prepared pans and bake for 30-40 minutes.
To test if the cake is ready, insert a toothpick into the middle of the pan. If it comes out clean, the cake is ready. A single rectangular cake will take slightly longer to bake than two round layers.
Slide a knife around the edge of each cake to loosen it from the pan, turn the pan over onto a metal rack and peel off the paper.
Let the cake cool completely before covering with icing.

COFFEE BUTTERCREAM
3 teaspoons instant coffee
1 teaspoons boiling water
250 g unsalted butter (softened)
500 g unrefined Golden icing sugar (We like Billington’s)

This unrefined golden icing sugar gives the most amazing caramel undertone and colour. It is perfect for buttercream, dusting cakes or making delicious macaroons.
Dissolve  instant coffee in  boiling water and leave to one side to cool.

In a seperate bowl beat together the softened butter and icing sugar until smooth then beat in the cooled coffee mixture.
This buttercream should make enough to ice 12 or more cupcakes and a large sponge cake.

Versiering Malteasers en flake gebruik en ook Caramel treat blikkie ek het hom dubbel aangemaak, sodat ek 3 lae uit hom kan kry en dan het ek in die eerste laag karamel ingesit en die tweede laag het ek die buttercream coffee icing gebruik. Geniet dit.

DIE KOEK TANNIE SE “SWISS BUTTERCREAM”
6 groot eierwitte
360 ml (300 g) suiker
460 ml (240 g) versiersuiker
80 ml (1/3 koppie) melk poeier, cremora
5 ml vanilla geursel
500 g botter (moet kamer temperatuur wees)

Roer eierwitte en suiker oor dubbel koker tot suiker kristalle op gelos is.
Klits tot stywe punt en dik en glansend.
Sif versiersuiker in en klits tot styf.
Voeg nou vanilla en melk poeier by en klits weer.
Verdeel botter in 8 dele en voeg een vir een by mengsel. Klop teen hoë spoed.
Moenie skrik as mengsel slap raak na tweede byvoegsel botter, hou net aan met klits, mengsel sal weer dik en glad word.
Skep in versierbuis en versier koek.
