Makes 4

INGREDIENTS
100 gr cake flour
100 gr white sugar
2 eggs
1 teaspoon baking powder
Lemon zest of quarter lemon
Baking sheet covered with baking paper
Preheat oven on 180c.

METHOD
Mix eggs and sugar for couple of minutes. Stop mixing and add lemon zest, baking powder and flour. Very gently mix the ingredients together (folding) till everything is mixed.
Scoop the mixture out on the baking sheet making 4 heaps. Leave enough space between the heaps.
Bake your eierkoeken for 20 minutes or until golden brown.
They should be light and fluffy on the inside and the sides will be yummy crispy after cooling.

SNOEK BILTONG
Neem een gevlekte snoek trek dit mooi oop op n gelyk oppervlakte.
Bedek die hele snoek oral met n lekker dik laag growwe sout en laat lê vir +- 1/2 – 3/4 uur.
Spoel dan al die sout af onder lopende water. Bind n tou aan die stert vas om aan op te hang.
Hang in n plek waar n trek is bv in n garage en probeer dit so plat moonlik hou as dit opgehang word
Laat dit hang tot dit lekker droog is ( hang af van die klimaat vir hoe lank dit moet hang , toets maar gereeld )
Waarskuwing : hou buite bereik van katte !!!!!

BLACKBERRY GLAZED SMOKED RIBS

INGREDIENTS
Primary Ingredients:
One rack of pork ribs
Mesquite wood chips

Rub Ingredients:
2 tsp salt
2 tsp coarse black pepper
3 bay leaves
6 juniper berries
1/2 tsp celery seed
1 tsp dry sage
1 tsp garlic powder
1 tsp all spice
1 1/2 tsp ground coffee

Fresh Blackberry Glaze Ingredients:*
2 pint of fresh blackberries
2 tbsp brown sugar
1 tbsp apple vinegar
1 tsp salt
Large pinch of black pepper
1 cinnamon stick
1 star anise

Blackberry Jam Glaze Ingredients:*
8 oz jar of blackberry jam
2 tbsp of apple vinegar
1 ½ salt
Large pinch of black pepper
*Note: if you’d like extra basting sauce for dipping while eating the ribs, simply double either recipe.

METHOD
Using a small frying pan, toast the juniper berries for about 30 seconds, then add celery seed and crushed bay leaves for another 30 seconds. Remove from heat. Combine toasted spices and rest of ingredients in a mortar and pestal and grind together (you can also use a food processor). Set aside.
Place your substantial rack-o-ribs on a large platter.
Using a blunt knife remove the membrane from the underside of the ribs by slowly slipping the knife under the membrane and lifting up.
Once loosened simply pull the membrane off (if needed use a paper towel for a better grip).
Membrane free, your ribs are ready for the rub.
Generously sprinkle the rub over the ribs
Firmly pat down the rub and repeat process on the opposite side.
Cover the ribs with plastic wrap and place in the refrigerator for 2-4 hours.
When ready to cook, set up your grill for indirect grilling and heat to medium. Presoak your wood chips (if necessary) and remove the ribs from the refrigerator.
Once the grill is ready, lightly oil the grill grate with a paper towel or cloth.
Place the ribs on the cool side of the grill, add your wood chips, and let the heat and smoke do the work.
Continuously add more wood chips as need to keep the flow of smoke constant.
While the ribs are cooking prepare your choice of blackberry basting sauces. If you’re using the fresh blackberry recipe, use a food mill placed over a bowl and grind the blackberries into a thick liquid (if you don’t have a food mill, a food processor will work…just be sure to strain out the seeds).
Transfer the liquid to a medium sized sauce pan, add remaining ingredients, cook over low heat on a stove for around 20 minutes (stirring continuously).
If you’re the blackberry jam recipe, simply add all the ingredients into a medium sized sauce pan, cook over low heat on a stove for around 20 minutes (stirring continuously). Set aside.
Cooking times will vary depending on your grill and meat, but the ribs are ready when the meat is pulling away from the bone (around 2 hours for on my grill).
About 20-30 minutes prior to pulling your ribs off the grill, bast both sides with the blackberry sauce. (You don’t need cut the ribs in half as pictured above…I did this to separate the two basting sauces I was experimenting with).
With the blackberry sauce finally on, allow the ribs to finish cooking and make sure to continue the flow of smoke.
When ready remove the ribs from the grill and allow them to rest for 5-10 minutes before serving.

1 teelepel mosterdpoeier
½ teelepel fyn peper
1 teelepel droë pietersielie of gemengde kruie
½ pak rou macaroni
½ ui fyn gesny
Rooiworsie of tuna ekt Rooiworsie gebruik
2-4 koppies kaas
Smeer binnekant van die prutpot met botter . Klits melk, eiers en geurmiddels saam. Roer by kaas en macaroni en Rooiworsie in.
Bedek die prutpot en sit op “high” vir 3 ure!

½ blikkie karamel of meer na smaak
2 eetlepels gelatien, opgelos in bietjie water indien jy wil hê dit moet styf wees
1 slab peppermint
Tennisbeskuitjies

Klits room styf saam met die karamel, rasper sjokolade in beslag
Pak laag koekies, dan laag room mengsel, weer koekies, weer room.
Sprinkel gerasperde peppermint bo.
Sny skywe en skep sjokolade sous oor, ek het sommer die van die roomys gebruik.
Bedien.

4 aartappels, geskil in kwarte gesny en gekook tot net gaar in ‘n pot met water
1 kg wors, in ringe gesny
½ pakkie garlic instant sous, die creamy een
1 eetlepel bruin uie soppoeier
½ koppie mayonnaise
2 groot uie

Braai uie en wors tot lekker bruin.
Voeg die aartappels by.
Meng mayonnaise, soppoeier en garlic sous saam met 1 koppie water en meng by wors.
Laat prut vir 10 min en bedien saam met rys of rolletjies.

BESTANDDELE
15 ml olie
1 ui gekap
300gr maalvleis
15 ml tamatiepasta
1 blik chakalaka
250 ml ertjies
2 groot patats
1 groot aartappel
100 ml volroom melk
‘n klont botter

METODE
Braai ui in olie tot glansend. Voeg maalvleis by en braai bruin.Geur na smaak met sout en peper. Voeg tamatiepasta by en braai nog vir minuut of 2. Voeg chakalaka en ertjies by en laat prut vir 15 min. Voeg bietjie water by as sous te droog lyk……Skil aartappel en patats en sny in blokkies. Kook in soutwater tot sag, dreineer en maak fyn saam met die melk. Geur met sout en peper en neutmuskaat. Skep vleis in oondbak, bedek met patat en aartappelmengsel en stip met botter. Bak in voorverhitte oond vir 25-30 min tot goudbruin.

Hierdie is genoeg deeg vir 2 panne van elk 370 x 270 x 60 mm – binne mate.
Ek sny met ‘n elektriese mes wanneer heeltemal afgekoel, dit maak minder krummels as om met broodmes te sny.
10 koppies koekmeel – kan 2 van hulle vervang met 1 nutty wheat en 1 all bran flakes
½ koppie sonneblom sade – kan weggelaat word indien verkies*
4 koppies karringmelk – ek gebruik 3 koppies melk en 1 koppie witasyn
5 ml sout
8 teelepels bakpoeier
2 koppiies suiker
5 eiers
500 g margarien – ek gebruik stork for baking OF botterVoorverhit oond tot 180 ºC.
Sif koekmeel en bakpoeier saam.
Voeg res van droë bestanddele by en meng goed.
Smelt margarien/botter in mikro.
Voeg margarien, eiers en karringmelk by droë bestandele en meng goed.
Sit deeg in gesmeerde panne en bak vir ‘n uur.
Laat afkoel en sny in vingers.
Droog oornag uit by ongeveer 60 ºC.

*variasies – ek gebruik partykeer muesli (Crunch Nutzy van Bokomo se Nature’s Source is ‘n baie lekker muesli vir eet en gebak) OF All Bran Flakes OF Nutty Wheat and Digestive Bran gemeng OF sit choc chips in, jy kan werklik enigiets bysit. Vir die beskuit op die foto gister het ek ‘n 500 g pakkie 4 Seeds van Dischem bygegooi en dis heerlik bros en kan net so of met koffie geniet word

EASY MINCE STEW
1 med onion
1 tablespoon olive oil
1 tablespoon crushed garlic
500 g mince
¼ cup tomato sauce
¼ cup chutney
1 tablespoon Nandos chilli sauce
1 tablespoon Worstershire sauce
½ cup water
1 teaspoon mixed herbs
1 teaspoon salt
1 teaspoon pepper
1 tin of sweetcornChop onions and fry in oil with garlic. Add mince and brown. Mix sauces, water and spices together and add to the mince. Simmer for about 10 minutes. Add sweetcorn and simmer for a further 10 minutes.
Serve with rice/ pasta

INGREDIENTS
1 pound firm ripe apricots, halved, pitted
2 tablespoons fresh lime juice
2-3 tablespoons sugar
Greek-style yogurt or vanilla ice cream
Fresh tarragon leaves (optional)

METHOD
Combine apricots, lime juice, and sugar in a large skillet.Cook over medium heat, turning occasionally, until apricots are glazed and syrupy, 7-8 minutes. Transfer to a small bowl and chill. DO AHEAD: Can be made 1 day ahead. Cover and keep chilled. Serve with yogurt or ice cream and garnish with tarragon leaves, if desired.
