FUSILI PASTA WITH BROCCOLI AND BACON

INGREDIENTS
Olive oil
Crushed Garlic (I use 2 tablespoons full)
Fusili pasta 1 pack
White pepper
Salt
1 packet Bacon (any type, I use streaky)
Knorr cheese mushroom garlic sauce (optional)

METHOD
Boil pasta and add tablespoon garlic to water. Cut broccoli in little roses.
Bake the bacon in a pan and sprinkle white pepper on it while baking. Make it crispy but don’t dry it out. When done cut bacon in little pieces.
In same pan as where you baked the bacon in (don’t clean it) throw in the broccoli roses. Add some salt, white pepper to taste, tablespoon of garlic and some olive oil. Keep broccoli moist and don’t bake it brown. When your broccoli has softened a bit you add the bacon pieces.
Drain pasta, add knorr sauce if you want and a bit of olive oil. Add the broccoli mixture to the pasta and stir a bit. Bon appetite!
(You don’t need to add the Knorr sauce, the olive oil should keep the pasta moist enough and the garlic, pepper and salt give enough flavour. Just sprinkle a bit of parmesan cheese over it)

HULETTES MALVA PUDDING
Pudding:
30 ml (2 tablespoons) butter
125 ml white sugar
1 extra large egg
15 ml (1 tablespoon) apricot jam
5 ml (1 teaspoon) bicarbonate of soda
125 ml (½ cup) milk
250 ml (1 cup) cake flour
pinch of salt
15 ml vinegar
Sauce:
125 g butter
185 ml (¾ cup) white sugar
65 ml (¼ cup) cream
5 ml (1 teaspoon) vanilla essence
65 ml water
Pudding:
Cream butter and sugar together, beat in the egg until light and fluffy.
Beat in the apricot jam.
Dissolve the bicarb in the milk.
Sift the flour and salt together and add to the creamed mixture alternatively with the milk.
Lastly stir in the vinegar.
Pour into a deep round dish about 19cm diameter.
Cover the dish with a lid or fill and then bake for 1 hour at 180ºC.

Sauce:
Bring the butter, sugar and water to the boil and simmer, stirring all the time for 2 minutes.
Remove from the stove and then add the cream and vanilla. Pour over the hot baked pudding.

Braai 2 opgekapte uie met suiker, voeg bietjie opgekapte groen soetrissie en knoffel by en 1 teelepel kerriepoeier, 1 teelepel sout en 2 opgekapte tamaties.
Laat bietjie prut.
Voeg 1 blikkie tamatie en uie by (all gold), so bietjie tamatiesous en ‘n bietjie risssie worcestershire sous . Kook net deur.
Baie lekker op hot dogs of pap saam braai vleis.

BROOD OF VETKOEK DEEG

Hier is die resep vir een groot brood of vetkoek wat ek vanmiddag gemaak het. Lees dit eers goed deur. Dit lyk omslagtig, maar is nie – volg maar net die stappe
1 kg meel
1 pakkie korrel suurdeeg – ek gebruik die pers pakkie
1 teel sout
1 desertl botter
2 teel suiker
+- 1 3/4 kop STERK LOU water
Spuit ‘n broodpan goed met Spray&Cook.
Sif meel en meng suurdeeg en sout daarby.
Meng botter en suiker in die STRERK LOU water – nie te warm nie. Dit help die rysproses.
Maak ‘n holte in die meel en gooi 1 1/2 kop water by en werk liggies, maar deeglik, deur met jou vingers, sodat daar nie klonte vorm nie.
Vryf die meel aan die kante van jou skottel ook in, gooi die res van die water by, waar daar nog meel is en meng goed.
Die deeg moet aanvanklik klewerig wees, maar werk dit vir 3 minute goed deur tussen jou vingers – dit lyk of jy met klei speel en lekker mors – en weer ‘n kind is – maar hierdie stap is nodig.
Begin nou ernstig knie vir MINSTENS 8 minute – sterk armspiere nodig – haha.
Gebruik ekstra meel aan jou hande om te help dat die deeg nie so aan jou hande klou nie.
Draai die deeg gedurig om terwyl jy knie, sodat die onderkant en sykante ook geknie kan word.
Die deeg moet elasties wees soos kougom wat uitgekou is!
*NOU!! Ek gebruik nou ‘n kortpad – ek sit die oond aan sodat dit net-net (effens) LOU is en skakel dit af.
Los die deeg in die skottel om te rys.
Bedek die skottel met plastiek, sodat die deeg nie bo-op droog word nie.
Maak die skottel dan goed toe met vadoeke (of handdoek, ens) en laat rys die deeg in die BIETJIE LOU oond – ongeveer 15 min – totdat die deeg net sag gerys is.
Hanteer die deeg nou liggies en vorm met jou hande ‘n langwepige vorm en sit dit egalig in die gesmeerde broodpan.
Spuit Spray&Cook bo-op die brooddeeg – sodat die deeg nie aan die plastiek vasklou nie – en bedek weer met plastiek.
*Volg weer die kortpad van die oond wat effens lou moet wees.
Laat die deeg rys tot die broodpan amper vol is.
Verwyder die plastiek en bak vir 3/4 uur by 180 grade C.
Eet warm terwyl die korsie nog bros is – sit BAIE botter op en wat jy daarmee saam verkies!
Of maak lekker vetkoeke van die deeg.

CARAMEL CREAM MALVA PUDDING
50 ml butter, soft
400 g white sugar
2 eggs
2 teaspoons (10ml) bicarbonate of soda
500 ml full cream UHT milk
525 ml cake flower, sifted
2 tablespoons (30 ml) apricot jam
2 teaspoons (30 ml) white spirit vinegar

Sauce:
1 cup (250 ml) long life cream (full cream)
200 g brown sugar
1/2 cup (125 g) butter
250 ml full cream UHT Milk
1 teaspoon (5 ml) vanilla essence
pinch of salt
Pre-heat the oven to 180°C.
Cream the butter and the sugar together until rich and creamy, add the eggs and beat through.
Dissolve the bicarbonate of soda in die full cream milk. Add this with the remaining ingredients, to the egg and butter mixture and beat until it becomes a smooth batter without any lumps.
Pour into a large greased baking dish and bake for about 35 – 40 minutes until brown and cooked.
While your pudding is baking, boil the sauce ingredients together for about 5 minutes until the sugar has melted.
Stir often to prevent burning.
Once the pudding is baked, simply pour the hot sauce over and allow to soak in.
Serve hot or cold with or without custard.

7 koppies koekmeel
knippie sout
1 pakkie kits suurdeeg
1 pakkie spek gesnipper
Feta kaas in stukkies geknip
Olywe in stukkies geknip
Knippie gedroogted herbs
Sesame sade vir bo op strooi

Meng met lou warm water knie tot sagte deeg . Maak warm toe vir 1 uur knie weer en bak. Nadat dit vir ‘n uur in die son was,  het ek ‘n pakkie spek en feta kaas in stukkies geknip en olywe. Toe meng ek dit met die deeg en gooi droë kruie by. Heel laaste het ek sesame seeds bo op gesit en toe gebak vir ‘n uur of tot pen skoon uit kom op 180ºC. Tip moenie die grill aansit nie lol

Heel Hoender gekook en ontbeen met speserye van jou keuse.
1 houer sampioene gesnipper of blikkie, maar ek verkies die pakkies.
125 ml gerasperde cheddar kaas
1 eetlepel botter
500 ml dik witsous
1 koppie melk
2 eiers

Sny hoender in stukkies, voeg witsous, botter en sampioene wat gebraai is met bietjie peper by die hoender. Skep in bak.
Klits 2 eiers met 1 koppie melk en gooi oor pastei.
Strooi die kaas oor en bak by 180 ºC vir 30 tot 40 minute.

2 koppies koekmeel
2 teelepels bakpoeier
1 teelepel koeksoda
Halwe t sout
1 teelepel vanilla
3 kwart koppie melk
6 piesangs (klein) Anders 4 groot piesangs fyn gedruk

Sif droe bestanddele, voeg eiers en melk by, meng deur sen voeg die piesang by.
Meng goed. Skep in muffin pan, maak die bakkies so 3 kwart vol.
Ek sit cupcake papiertjie in, dan haal dit maklik uit en bedien lekker.
Bak in oond van 160ºC vir 30 min

WHY DOES HONEY CRYSTALLIZE

Almost all unheated, unfiltered honey crystallizes; some just crystallize sooner than others. I say that a lot at farmer’s markets, after all some of our honey is crystallized some of it is runny honey.

Crystallized honey is preferred over runny honey by my family and many other people. You can cook with crystallized honey (my husband, the woodworker at Brookfield Farm, bakes with crystallized honey all the time). It works in tea; in stir-fry; and as an easily

spread glaze on fish, meat and fowl. It doesn’t drip off the bread or off your spoon (or fork). And, to others, and me crystallized honey simply tastes better.

What follows is what I’ve learned about crystallization in unheated, unfiltered honey, which is what we sell. I’m always happy to learn more.

There are a few honeys that are incredibly slow to crystallize (never say “never”). Acacia, sage, tupelo, and black locust (aka false acacia) honeys are some of them. But the majority of honeys will start working their way to crystallization as soon as they leave the nice warm confines of a 95F hive.

Crystallization is the natural state of most honeys after it leaves the hives. It can even

crystallize inside a hive if the bee cluster is not on top of the honey when temperatures stay below 50F for a while.

HOW FAST HONEY CRISTALLIZES involves a number of factors:

1) How much glucose versus fructose was in the nectar (these are only of the sugars that are in honey).

2) If the honey is unfiltered: little bits of things on which those crystals can get started.

3) The temperature where the honey is stored.

4) How the honey is stored (plastic is more porous than glass, thus the air exchange is greater).

1) Glucose the Crystallizer:

There are a variety of sugars in honey including: glucose, fructose, sucrose, and maltose. But the main ones are glucose and fructose, which together can make up nearly 70% of the honey content. Water makes up 18% or less.

The glucose and fructose are the sugars that give honey its “sweetness”. Glucose is the one that influences crystallization. The more glucose in the honey, the sooner your honey will crystallize.

What happens: There is water in all honey (less than 18%). The water binds to the sugars. But water can separate from glucose. When glucose loses water it becomes a crystal. Once a crystal forms it will continue to build more crystals until the entire container is crystallized. Anything like pollen, propolis or wax will get trapped in the crystals.

2) Unfiltered Honey and Crystallization.

The crystals that form from the glucose can build on each other, but they can also build

on any small particle. Unfiltered honey has lots of these in pollen, propolis and wax. Each has handy, jagged bits where a crystal can start to form.

If you and any other particles to the honey, they too will give the crystals a platform on which they can build. Thus our Brookfield Farm Infused Honeys will all crystalize over time, but some sooner than others. Our Rose Infused Honey has tiny bits of rose petals and rose hips. It crystallizes faster than our Ginger Infused Honey. It’s easier to remove ginger bits than rose petal and rose hip bits.

3) Container: How Honey Is Stored and Crystallization

Air has particles in it, and those particles can pass through containers. Plastic is far more porous than glass. Because of this honey stored in a capped, glass jar will take longer to crystallize than if you store it in plastic.

4) Temperature and Crystallization

Crystallization happens much faster at certain temperatures. When honey drops into the fifties (towards 50F), it will start to crystallize much faster. Honey stored between 70 and 95F will stay runny much longer.

BITS AND BOBS ABOUT CRYSTALLIZED HONEY:

Not all crystallized honeys have the same texture. The honeys that are quick to crystallize with have a smoother texture than the honeys that are slow to crystallize.
Quick crystallizers (smooth) include: alfalfa, clover, lavender, dandelion, and star thistle.
Slow crystallizers (less smooth to chunky) include maple, linden, fireweed, blackberry, and black locust.

Why is my honey crystallizing at the bottom?

This is normal. I don’t have a science-backed answer to this,

Crystallizing Infused Honeysbut my guesses are that either 1) it’s just colder on the counter (or market table) than the air around the jar or 2) the crystals are heavier than the surrounding runny honey and drift to the bottom.

How to make honey crystallize:
Store it at lower temperatures (55F or less) but don’t freeze it. I’ve heard frozen honey will not crystallize. This makes sense, as the water cannot precipitate out of the glucose if it’s frozen.
Add a little bit of crystallized honey to your runny honey. If you give the runny honey some crystals, they will start reacting with the glucose in your runny honey and soon it will be crystallized.

How to make crystallized honey runny:

You can gently warm honey by placing its container in a steamer, a water bath (like a water-filled crock pot), a warm sunny window, or a microwave. I would not do this any plastic container. The important thing is that you do not want to heat that honey over 100F if you want the benefits of honey to remain. After 120F you’ve got nice yummy honey, but the pollen, propolis, enzymes, and antioxidants have been rendered useless. Some folks say this happens at 104F. So, stay safe and don’t go over 100F. If you can’t be exact, aim at 95F for some “wiggle room”.
The problem is that once the honey cools, it will start its march back to crystallization. After a few sessions of heating and cooling, the honey will start to lose its consistency and its aroma. Because of this it’s best if you only heat the amount of honey you want runny. Leave the rest in the container.
