BESTANDELE/METODE
Verhit 400 ml melk in kastrol , meng nog 100 ml melk met 75 ml vlapoeier en 1.25 ml sout en voeg dit by kookmelk, hou dit op die plaat en roer tot dik en gaar , haal van plaat af en laat heeltemal koud word
Klop 250 ml strooisuiker en 125 g baie sagte botter of bak margarien tot lig en donsig voeg 5 ml vanilje geursel by en meng goed, klop nou sommer en dieselfde klitser die koue vla tot lekker los en voeg dit dan by die botter mengsel en klop tot lekker romerig , gebruik as versiering vir koek en in poffertjies of sommer in n doppie of n horingtjie
Klop so 80 ml kakao by indien verkies om sjokolade versiering te maak.

Kors: 1 pak 200g tennisbeskuitjies en 30ml botter gesmelt
Vulsel: 1 pakkie lemmetjie jellie
200ml kookwater
1 blik karamel kondensmelk
1 houer gladde maaskaas
250ml room styfgeklits
1 plak 100g peppermint sjokolade
1 50g peppermint crisp
(Ek het sommer n groot pep crisp gebruik vir beide)

METODE
Smeer 26cm tertbord, meng krummels en botter en druk in tertbord vas. Verkoel tot benodig
Los jellie poeier in water, laat effens afkoel
Voeg kondensmelk by en meng
Roer maaskaas in
Vou room in
Voeg peppermint choc by
Skep op kors en verkoel
Strooi oorblywende crisp voor bediening op

CHINESE ROOM BROOD
Ek moet net eenvoudig hierdie heerlike brood resep met julle deel. Die brood is soeterig en donsagtig en ‘n kan nie ophou eet brood nie. Die brood se regte naam is Chinese room brood.

Maak eers jou Tangzhong
50 g broodmeel
250 ml water
Meng die meel en water en laat kook tot dik oor lae hitte, laat afkoel tot kamertemperatuur.
540 g broodmeel
86 g strooisuiker
8 g sout
9 g volroom melk poeier
1 pakkie gis (pers een werk lekker)
1 extra groot eier of jumbo
60 ml room (ek het karring melk gebruik)
50 ml melk
tangzhong
50 g gesmelte botter

Gooi droe bestanddele in ‘n kniebak, meng die nat bestanddele en voeg saam die tangzhong by die meel. Knie die deeg ten minste 20 min, die deeg moet sag en elasties wees, laat rys tot dubbel. Gooi deeg uit op ‘n werkblad en druk af. Deel die deeg soos jy verkies, ek het eerste dit in 5 gedeel en toe ek hom weer bak mini loafs gemaak, NB elke stukkie wat jy gedeel het, rol dit uit in ‘n ovaal vorm bring die punte (links en regs in die middel bymekaar en draai die deeg om (soomkant onder) rol die deeg weer +/- 20cm lank uit en rol die deeg op, plaas in jou pan van keuse, herhaal so met elke stuk wat jy verdeel het. Smeer die bokant met geklitste eier en bak teen 180°C vir ongeveer 20-30 min of tot mooi bruin. Wees versigtig as jy die brood uithaal, dit is vreeslik sag. Laat dit afkoel voordat jy dit sny.

LAMB CUTLETS WITH MINT CHILI AND GOLDEN POTATOES
If you put your halved baby potatoes on to steam before you get started on the lamb chops, you can fairly effortlessly rely on a proper meat-and-potato supper in around 20 minutes (plus a little marinading time). Steaming the potatoes is, for me, an important stipulation: a steamed spud is a sweet spud; more than that, cooked this way, rather than by boiling, the potatoes are dry when done, which makes them easy to fry to crisp bronzedness.

500 g baby new potatoes, washed and halved but not peeled
3 tbsp olive oil
½ tsp dried chilli flakes
1 tsp dried mint
½ tsp celery salt
8 lamb cutlets, preferably organic, trimmed of fat
100 g rocket
1 tsp sea salt flakes or ½ tsp pouring salt
1 tbsp chopped fresh parsley
1 tbsp chopped fresh mint

Put the halved baby potatoes on to steam.
Get out a large dish – in which the lamb cutlets will fit in a single layer – and first pour into it the olive oil and sprinkle in the chilli flakes, dried mint and celery salt.
Using one lamb cutlet as if it were a wooden spoon, smoosh the oil with its sprinklings around a bit, so that it is rather better mixed, then place the lamb cutlets in a single layer, turn them instantly, and leave to marinate for 10 minutes.
Heat a large, heavy-based, non-stick frying-pan – big enough for all the cutlets to fit in – then duly place them all in it (the oil that clings to them from the marinade is plenty enough for them to fry in) and fry over a medium heat for five minutes. While the cutlets cook, check that the potatoes are tender, which they should be by now; in which case, turn the heat off under your steamer.
Using tongs (for ease), turn the cutlets over and cook for a further three minutes. If you are going to make this an entire one-plate meal, strew the bottom of a large serving platter with rocket, or any other leafage you desire, and when the lamb cutlets are cooked, but still juicily pink, remove them to the salad-lined (or, indeed, naked) plate. Obviously, cook for longer if you like your lamb well done.
Tip the steamed potatoes into the pan and fry for three minutes, then turn them over and fry for another three minutes, shaking the pan every now and again to make them tumble and turn in the hot, spiced fat.
Using a slotted spatula or similar, transfer the potatoes to the plate of cutlets and sprinkle with one teaspoon of sea salt flakes (I like these plenty salty, but if you have more austere tastes or are feeding small children, then decrease the salt or ignore the command altogether) and the chopped parsley and mint.

500 g chicken breasts
salt and pepper
juice and rind of 1 lemon
250 g mushrooms, sliced
oil
200 g spinach, stems removed
3 eggs, beaten
250 gtub cream cheese
250 ml grated Cheddar cheese

Preheat the oven to 180°C. Spray an ovenproof pie dish. Season the chicken with salt, pepper and the lemon juice and rind. Steam in a food steamer until done. (You can also bake it in the oven or steam in saucepan with a bit of water if you do not have a food steamer.) Remove the bones from the chicken and cut in small pieces. Fry the mushrooms in a little bit of oil until just softened. Add the spinach and fry until the spinach welts. Beat the eggs and cream cheese together. Mix the chicken, spinach and cream cheese together and spoon into the prepared dish. Sprinkle the cheese over. Bake for 30-40 minutes or until the egg has set and the cheese are melted and golden.

Broskorsdeeg
2 koppies koekmeel
150 – 200 g goeie botter
1 eiergeel
10 ml wit asyn
30 ml yswater
Klits eier, asyn en yswater saam.
Voeg botter by.
Voeg meel by en meng goed.
Laat rus in yskas vir 30 min.
Rol dun uit en plaas in quiche pannetjies.

Vulsel
250 g sterk Cheddar kaas, gerasper
150 g goeie biltong, baie dun gesny
4 eiers
375 ml room (of laevet maaskaas)
vars gemaalde swart peper na smaak
3 takkies tiemie, afgestroop

Prik die boom van die kors.
Verhit oond tot 200ºC.
Plaas ‘n laag kaas onderin die kors.
Volg met biltong wat jy nog fyner breek.
Klits eiers en room of maaskaas, voeg peper by.
As biltong sout is oppas vir nog sout by eiermengsel.
Giet eiermengsel bo-oor.
Ek het bietjie “Sweet Basil” op elkeen gestrooi.
Strooi klein bietjies kaas bo-op.
Bak in die oond vir 40 min.
Verwyder uit pannetjie deur die pannetjie oor ‘n glas te sit. Die kant gly maklik af.
Gly die quiche vanaf die onderkant op droograk.
Bedien saam met slaai,

8 Eiers
Helfte van groen, geel en rooi peppers elk, fyn blokkies gesny
1 Klein ui, fyn blokkis gesny
250g Spek, fyn blokkies gesny
11/2 Koppie gerasperde cheddar kaas
1/4 koppie room
Gemengde kruie
Sout en peper na smaak

METODE
Braai uie voeg spek by en braai tot gaar. Voeg die peppers by en braai tot redelik gaar. Laat afkoel…Klits die eiers voeg kaas en room by asook die spekmengsel.
Voeg sout en peper by roer liggies. Gooi in gesmeerde bak en bak in oond van 180oC tot gaar. Geniet dit!

CHIFFON CHOCOLATE CAKE

INGREDIENTS
5 extra-large eggs, separated
1 cup white sugar
1 cup self-raising flour
½ cup sunflower oil
2 tsp baking powder
¾ cup hot water (boiled water, slightly cooled)
1/3 cup cocoa powder

METHOD
Preheat your oven to 170C.
Grease a Bundt (ring) tin.
Using a large mixing bowl, cream the egg yolks and sugar until light and fluffy.
Add the oil and stir to combine.
Sift the flour, baking powder and cocoa powder together in a separate bowl.
Add the flour mixture and the hot water to the wet ingredients in stages mixing well after each addition.
Using an electric beater whip the egg whites stiff until they hold their peaks.
Fold the egg whites lightly into cake mixture until just combined. DO NOT OVER STIR as the cake will lose volume and won’t be as light and fluffy.
Pour the mixture into the prepared tin.
Bake at 170C for 35 minutes. Leave the cake to cool in the tin for 5 minutes before turning it out on a cooling rack to cool completely before decorating.

Ganache
200g Cadbury Diary milk chocolate
½ cup fresh cream
Melt together for 60 seconds in the microwave in a suitable container without stirring. Let it rest/stand for 2 minutes and stir to combine the chocolate and cream. Pour this over the cake. Decorate with fresh strawberries and/or chocolate curls.

3 INGREDIENTS SLOW COOKER BBQ PEACH PULLED PORK
2-3 lb. boneless pork loin or pork roast
1 bottle (16 oz.) barbecue sauce
1 jar (16 oz.) peach salsa
Rolls, for serving
Place the pork in a slow cooker. In a small bowl, whisk together the barbecue sauce and peach salsa. Pour over the pork.
Cook on low for 8-10 hours.
Remove the pork to a cutting board and shred using two large forks. Return the shredded pork to the slow cooker and stir to combine with the sauce.
Serve on rolls.

¾ cup vegetable oil
1 ½ (375 ml) cups sugar
1 ½ (7.5 ml) teaspoon vanilla extract
3 eggs
¾ cup (190 ml) self raising flour
½ (125 ml)cup cocoa
¼ tsp ( 1.25 ml) salt
Oreo Cookies

For the frosting
1 cup (250 ml) Icing sugar
3 tablespoons (60 ml) water
1 cup (250 ml) Cooking chocolate chips or flakes

Preheat oven to 180 ºC . Grease a baking pan, or line it with parchment paper.
Mix together the oil, sugar and vanilla extract.
Add eggs and mix until well combined.
Combine flour, cocoa, baking powder and salt.
Slowly add to the egg mixture until well combined.
Pour halve of the batter into the pan and spread evenly.
Place a layer of Oreos onto of the batter.
Pour remaining batter over the Oreos. Gently spread evenly till all are cover.
Bake for 25-30 minutes, or until a toothpick comes out with a few crumbs.

FROSTING METHOD
Mix water and icing sugar until smooth.
Melt chocolate in a bowl over hot water.
Mix Icing sugar mix and melted chocolate until smooth.
Pour over warm and spread evenly over brownies.
Leave to cool cut and serve.

NOTES: You can serve them hot or cold with ice-cream, cream or just plain. I always double this recipe because my family loves it and it freezers very well.
You can also make this recipe using a brownie box mix. Follow the instructions on the box and simply add your layer of Oreos

Lisinda Blaauw –  I some times make it with normal flour and then use baking powder. But when I use the self raising flower I don’t add the baking powder.
