Stuffed calamari tubes
2 groot calamari tubes
200 gram gebraaide stukkies bacon
3 klein uitjies fyn gesny
3 knoffel tone
4 takkies thyme
2 stukke ronde feta
1 blikkie fyn tamaties
1 blikkie tamatie puree

Bak die bacon saam met die uitjies en knoffel en sit by die thyme. As die mengsel afgekoel is krummel jy die fete deur die mengsel en vul nou die 2 groot calamari tubes met dit. Maak die bo kant toe met 3 tande stokkies. In dieselfde pan waar jy dit alles in gebak het sit jy nou die blikkie tamaties en die puree. Deglaze jou pan met die sous en sit sout en peper na smaak by. Jy kan nog thyme by sit as jy wil of knoffel. Sit die sous in ‘n pan of oond bak en sit bonop die sous die calamari tubes bak in die oond vir so 30 a 40 minute op 180 grade. Ek gaan dit bedien saam met cous cous en geroosterde groente. (butternut, rooi uie, knoffel en red pepper). Ek sal as alles klaar is ‘n foto op sit.
Maar hy moet definitief 35 minute in die oond bak. Perfek gebak en lekker sag

Naand almal. Vanaand het ek nou geleer Nacho’s maak. Die foto is dalk bietjie donker. Ek het darem die Spicy mince met chilli gemaak. Die res is malklik. My dogter het dit gemaak

Pak n lekker laag Nacho’s onder in n bak.
Gooi die chilli spicy mince oor die Nachos.
Gerasperde kaas bo op alles en bak in die oond tot die kaas lekker gesmelt het.
Maak apart n tamatie en uie slaai
Feta kaas blokkiese gesny
Maak so 3 Advokado’s fyn vir Advokado Pasta.

Skep nou jou bord.
Nacho’s, Mince en Kaas
Pak die tamatie en uie slaai bo gevolg met Advokado Pasta

15 ml olyf olie
250 g sampioene
300 g spinasie
4 eiers
30 ml room
100 g mozzarella
sout en peper na smaak

Voorverhit die oond tot 190°C. Spuit of smeer ‘n muffinpan met 12 holtes goed. Verhit die olie in ‘n groot braaipan. Sny die sampioene in skyfies en soteer tot die sampioene sag is, ongeveer 5 minute. Skep met ‘n gaatjieslepel uit die pan en laat eenkant. Plaas die spinasie in dieselfde pan en gooi klein bietjie water by. Bedek en stoom die spinasie tot dit net begin verwelk. Gooi die spinasie uit in ‘n vergiettes en druk dit met ‘n lepel sodat die meeste van die water kan uitloop. Kap dit fyn. Klits die eiers en room saam, voeg die sampioene, spinasie en kaas by en meng goed. Geur na smaak met sout en peper. Verdeel die mengsel tussen die muffinkoppies en bak vir 20-25 minute tot goudbruin en gaar.

Nota:   Ek sal volgende keer knoffel bysit,dalk n knippie rooipeper ook, of tiemie, hy kort defnitief n dieper smaak. Maar hy is lekker.

1.5 kg rib
1 pakkie bruin uie sop (aangemaak met 1 koppie kookwater)
½ koppie suurlemoensap
Sous:
30 ml Worcestersous
30 ml blatjang
2 eetlepels heuning
1 teelepel aromat
½ koppie port
1 teelepel growwe sout
1 teelepel growwe swart peper
1 teelepel braai speserye

Kook ribbetjie in stoompot vir 20 min met angemaakte uiesop en suurlemoensap.
Braai dan vir uur aan weerskante in oond op 170°C, smeer gemengde sous oor in intervalle.

Nog ‘n resep waarin mens die ‘whey’ van die feta kaas resep kan gebruik.

100 g vars bloubessies
100 g bruinsuiker
100 g wit koekmeel
100 g bokwiet meel (buckwheat)
5 g sout
5 g bakpoeier
100 ml whey
ekstra water indien nodig

Meng al die droe bestandele saam, en meng san sie bloubessies met dit sodat hulle goed bedek is met die meel. Dit verhoed dat hulle afsink in die mengsel. Meng dan die whey in – die deeg moet stywerig wees. Skep eetlepels vol in gesmeerde kolwyntjie panne, en bak vir 20 minute in ;n 180 grade Celsius oond.
Sprinkel met versiersuiker wanneer koud.

500 ml karringmelk
250 ml olyfolie
15 ml gekneusde knoffel of na smaak
25 ml Worcestersous
15 ml geur-opwekker
10 ml mosterdpoeier
10 ml grofgemaalde swartpeper
25 ml suurlemoensap

Verwyder die vel en alle senings.
Meng al die bestanddele goed saam.
Marineer die vleis ten minste 24 uur lank – draai dit gereeld om. Verwyder die vleis uit die marinade en dreineer.
Rooster vir 30 minute oor matige kole en bedruip gereeld met marinade.
Sny vleis in skywe van sowat 10mm en bedien met ’n pepersous.

Bestanddele – marinade:
1 k bruin asyn
1 k vleisaftreksel (sien bladsy 2 vir resep)
1 k rooiwyn
1 ui met 12 naeltjies daarin gedruk
8 wonderpeperkorrels
½ k geskroeide koljander
10 swartpeperkorrels
¼ t fyn witpeper
4 E bruinsuiker
4 lourierblare
250 g varkspek in repe gesny

Metode:
Gooi die asyn, vleisaftreksel, rooiwyn, uit met naeltjies, wonderpeperkorrels, koljander, swartpeperkorrels, witpeper, bruinsuiker en lourierblare in ‘n houer.
Laat lê die repe varkspek daarin.
Sny diep kepe in die springbokboud en druk die varkspek daarin.

Speserye en netvet:
2 E growwe sout
1 t fyn swartpeper
2 E geskroeide gemaalde koljander
1 skaap netvet
1 k marinade (soos hierbo)
1 k vleisaftreksel

Metode:
Laat lê die vleis vir agt uur in die marinade en draai dit om.
Na ‘n verdere agt uur, word die boud uitgelig en ingesmeer met growwe sout, swartpeper en geskroeide koljander.
Draai die boud toe in netvet, sit in ‘n oondskottel en bedruip met 1 koppie marinade en 1 koppie aftreksel.
Sit die deksel op.
Bak in die oond teen 150º vir ongeveer 5 uur.

Bestanddele – vleisaftreksel (vir springbokboud marinade):
5 k water
1 murgbeen, middeldeur gekap, met vleisstukkies aan.
2 uie, elk met 12 kruinaeltjies
1 wortel, in dik ringe gesny
1 selderystingel met blare
½ t swart peperkorrels
1 E growwe sout

Metode – vleisaftreksel:
Verhit die vleisaftreksel stadig tot kookpunt en laat prut vir omtrent 5 ure.
Gooi deur ‘n sif en laat afkoel.

1 koppie volroommelk
15 ml maizena
knippie sout
50 ml botter
15 ml strooisuiker
2 ml vanilla

Plaas al die melk behalwe 30 ml melk in ‘n swaarboom pot en bring tot kookpunt.
Meng die maizena en sout goed met die 30 ml melk en voeg by die kokende melk.
Kook 3 minute, roer, laat afkoel.
Klits botter, suiker en vanilla tot room.
Haal velletjie van die koue melkmengsel af en voeg ‘n teelepel op ‘n keer van die bottermengsel by.
Klits goed totdat alles ingeklits is en die mengsel soos geklopte room is. Maak 750 ml.

CORNED BEEF OR PASTRAMI
Worth the wait! After 5 days what begun as a cheap cut of beef, brisket…..the end result.. half made into pastrami and the other half into corned beef. Delicious, will definitely make it again. Try it with Horseradish (as we did), so good.

Recipe
The general procedure is to first wet-cure the brisket for several days (at least five), soak it in water overnight the day before cooking, and then to boil it very slowly. So, you need to start curing the brisket at least six days before you intend to serve it. On serving day, you will probably need a free afternoon as you will need to keep on eye on the brisket as it boils.
PHASE I – Curing
Ingedients:
For a 2 kg beef brisket you will need:
3/4 cup coarse salt
1/3 cup of brown sugar
4-8 cloves crushed garlic (depending on size)
2 teaspoons cracked black peppercorns
1 teaspoon crushed allspice
1 teaspoon mustard seeds
1 teaspoon crushed coriander pods
1 teaspoon chili flakes
3-4 crumbled bay leaves
2 teaspoons of pink salt or Prague powder #1 (optional)

Note that pink salt or Prague powder #1 are common replacements for real saltpetre (potassium nitrate), which is a controlled substance because it is used for making gunpowder. Pink salt and Prague powder #1 contain 6.25% sodium nitrite, which has the same effect on the meat as saltpetre. The main difference between pink salt and Prague powder #1 is that the former is dyed pink to help prevent confusion with regular salt.
As you will be keeping your brisket in the fridge while it cures, you do not really need pink salt or Prague powder for antibacterial protection. However, using either one of these substances will give the brisket that characteristic “deli” taste and prevent it from turning grayish-brown during cooking. Instead, the brisket will take on a rather attractive, dark pink or burgundy colour when cooked.
The main reason for not using saltpetre or pink salt/Prague powder is that nitrates and nitrites are potentially carcinogenic if consumed in large quantities. However, unless you eat deli meats every single day, I would not worry about this too much. The other reason not to use these substances is that they can be hard to obtain. Ask a butcher about it or look it up on the Internet.

Procedure:
You will wash your brisket under running water and you will pat it dry with paper towel.
You will stab the brisket all over with a fork. You must be sure to stab both sides. This help the brisket absorb the flavours in the cure.
Mix all of the cure ingredients together.
You must rub all of the mix into the brisket. Rub rub rub.
You must place the brisket in a non-metallic container into which it fits snuggly.
You must pour just enough water into the container to cover the brisket. You may wish to weigh it down with a heavy plate or some other non-metallic item to help keep in submerged.
You will now place the brisket in the fridge. From now until when you take it out for soaking, you must turn it over once a day. It will start to feel slippery to touch after a couple of days.

PHASE II – Soaking
Procedure:
The night before you intend to cook the brisket, you will remove the brisket from the wet cure and rinse it with running water. You may now dispose of the cure.
Place the brisket in a large container and fill it with plenty of water. Place in the fridge and leave overnight.
In the morning, you will dump out the water from the container and fill it with fresh water. Change the water again a few hours later.

PHASE III – Cooking Corned Beef
Ingredients:
2 kg cured and soaked brisket (i.e., the product of the above procedures)
2 large carrots
2 large onions, quartered or
2 whole leeks (green and white part), thoroughly cleaned
2 celery ribs
1 or 2 parsnips (optional)
2 bay leaves

Procedure:
You will place the brisket in a large pot along with the other ingredients above. You will add enough water to cover the brisket.
You will the put the covered pot on medium-high heat for 15 minutes or until it begins to steam. You must then turn the heat down to medium-low. You must not let the water boil vigorously. It should be steaming and its surface should be trembling slightly for the entire duration of cooking. If it boils too much, reduce the heat. Obedience will result in a very tender brisket.
After a couple of hours of cooking, you may wish to skim the fat, copious amounts of which should be appearing on the water’s surface.
After four hours, you will check the brisket’s tenderness by stabbing it with a knife. If it is ready, the knife should penetrate effortlessly. If it is not yet tender, cover and continue boiling. Check again every 20 minutes or so.
When the brisket is ready, remove it from the pot and drain thoroughly. Set it down on a large cutting board and cover it with aluminum foil. You must let the brisket rest for 10 minutes before slicing.

PHASE IV – Serving
When the time comes, slice it as thinly as you possible can and serve it. Slice only as much as you need to serve—once sliced, the brisket oxidizes and looses it bright colour.
You may wish to keep the cooking water from the brisket. It is essentially a very flavourful beef stock. Strain out and dispose of the vegetables, which by now are likely to be mush. You may freeze the stock in small batches and use it as needed for soups (it is an excellent base for borscht) or sauces.
Brisket is delicious with brine-fermented pickles, sauerkraut, mustard, as well as freshly grated horseradish. Under no circumstance should you ever consider insulting the brisket with prepared horseradish from a jar. You have just spent a week preparing this thing; don’t get lazy now. Pick up a fresh horseradish root, peel it and grate it. I personally like grating it coarse—it’s faster and it makes for a nice textural counterpoint to the very tender, slow-cooked brisket. I add a little bit of olive oil, white wine vinegar, salt, and sugar to my horseradish, as if I were lightly dressing a salad. You must try this.
For Pastrami I used half the cured meat.
From Phase III continue as follows:
Dry rub the meat with a handful of coarse black pepper and coarse ground roasted coriander. In a foil lined oven pan with grid place meat on grid, slow bake at 120 deg C for about 3 hours to medium rare. When cool place in fridge. Cut in thin slices and serve with Horseradish or mustard. It is easier to achieve thin slices with a meat-slicer.

2 large eggs
680 g smoked haddock fillets
2 fresh bay leaves
1 cup basmati rice cooked as you would normally do
1 knob pure butter
1 thumb-sized piece fresh ginger, peeled and grated
1 medium onion, or 1 bunch of spring onions, finely chopped
1 clove garlic, peeled and finely chopped
1 red chilli chopped
1 tablespoon curry powder
1 tablespoon mustard seeds
2 tomatoes, chopped
juice of 2 lemons,
2 handfuls fresh coriander, leaves picked and chopped
1 fresh red chilli, finely chopped
Salt and pepper to taste
1 small tub natural yoghurt

Boil the eggs for 10 minutes, then hold under cold running water. Put the fish and bay leaves in a shallow pan with enough water to cover. Bring to the boil, cover and simmer for about 5 minutes, until cooked through. Remove from pan and leave to cool. Remove the skin from fish, flake into chunks and set aside.

Cook the rice in salted water for about + – 15 mins minutes and drain. Refresh in cold water, drain again, and leave in the fridge until needed. Melt the butter in a large pan over a low heat. Add the ginger, onion and garlic and chilli. Soften for about 5 minutes, then add the curry powder and mustard seeds. Cook for a further few minutes, then add the chopped tomatoes and lemon juice.

Quarter the eggs. Add the fish and rice to the pan and gently heat through. Add the eggs, most of the coriander and stir gently. Place in a warm serving dish. Mix some coriander into the yoghurt and serve with the kedgeree.
