6 Porsies
100 ml olyfolie
250 g spek
1 kg bees maalvleis
5 ml naeltjies
5 ml rooipeper
5 ml swartpeper
4 knoffelhuisies
20 ml vars tiemie
20 vars koljander
20 ml vars basilliekruid
8 saggekookte eiers
375 ml gerasperde mozzarella

Voorverhit oond tot 180ºC
Meng al die droë bestanddele en voeg by die maalvleis. Sny die ui en knoffel op in klein blokkies en meng dit ook met die vleis.
Voer ‘n broodpannetjie uit met tinfoelie, en voer dan ook uit met die spek.
Meng die olyfolie met die maalvleis en pak ‘n dun lagie vleis bo-op die spek.
Kook die eiers net vir drie minute en gooi dit dan in yskoue water en laat staan vir 5 minute. Dop dit af en plaas dit bo-op die maalvleis in die middel van die pannetjie. Plaas die res van die maalvleis bo-op die eiers.
Bak vir 30 minute en gooi dan die mozzarellakaas oor die broodjie en bak vir ‘n verdere 10 minute

1 groot ui gerasper
2 groot wortels gerasper
2 aartappels grof gerasper
2 chicken stock blokkies en +- 6 liter water
1 lekker opgehoopte teelepel kerriepoeier
3 knoffelhuisies gerasper
¼ koppie hawemout (oats)

500 g macaroni
2 pakkies mutton and vegetable soppoeier
½ pakkie tamato curry paste
oreganum en swartpeper na smaak
Plaas alles in die slow cooker en kook in slow cooker vir ongeveer 6-8 ure of tot alles sag en gaar is. EN DAN – sprinkle bietjie witasyn oor en meng deur.
Ek moes gister nog water byvoeg, met die staan raak dit mos dikker.
Vanaand was dit nog lekkerder.

HOW TO MAKE SUSHI MAKI

Things you’ll need:
A bamboo mat, nori (seeweed)

sushi rice and fillings (fish, chicken, seafood and or vegetables to your liking).
Feel the nori sheet from both sides and you will find one side to be a bit smooth and the other a little rough. The nori should lay on the rolling mat with the rough side facing upwards.
Get your hands wet, and make about a handful of rice to a ball of rice. It’s important to keep your hands wet while working with sushi rice because it is sticky. When you work with the nori though, you should keep them as dry as you can. That is why you should have a bowl of water (with a bit of rice vinegar added to it) and a dry dishcloth or towel nearby when making sushi.
Gently put the rice ball in the middle of the nori sheet, and start spreading it equally on the nori, creating a layer of rice covering almost the entire sheet except the upper margin of about 2 cm that should be kept uncovered. Later on, the margins need to be empty of rice in order to close to sushi roll properly. Be careful not to compress the rice, but merely spread it over the nori.
Now it’s time to place a slice of fish, chicken or seafood e.g. crabstick or salmon (preferably no more than one) on the edge of the nori, along with pre-cut slices of vegetables (carrot, cucumber and so on). Remember the thinly sliced avocado as well.
Using the closer edge of the rolling mat, close on the filling with the nori making a rectangular shaped hill and tighten it from above.
Move forward, continue rolling in the rectangular hill steps, keeping it tight with every move until you reach the end of the nori. Put pressure on the roll from all three sides at all time, especially on stops to allow it to roll tightly.
Use a wet, sharp knife to cut the roll in to little sushi units. 6-8 units per roll – first cut the roll once in the middle, put the 2 sides together and then cut both at the same time into 3 or 4 slices, depending on how think you want it.

Wasabi poeier, gemeng met ‘n bietjie water. Hoe langer dit staan, hoe sterker word dit.

Nog vulsels…. dit hoef nie net rou vis te wees nie. Ons gebruik gewoonlik hoender fillette in repies gesny, crabsticks middeldeur gesny, gerookte salm en as daar kinders by is, sommer viennas ook. Komkommer, Wortels, Slaaiuie, net waarvoor hul lus het.

Pak die rys, strooi sesame saad oor, en dan ‘n paar vulsels. Nie te veel op een slaag. Hier het ons n hele nori vel gebruik, maar sedert dan het ons geleer om dit te halveer.

Vat die punt van die nori, en begin rol soos hierbo verduidelik.

Klaar gerol, druk die kante mooi gelyk

Vir die kinders, ‘n lekker vienna en tamatie sous maki. Dit is hoe my seun sushi leer eet het, maar nou eet hy al die ander ook

Ons nooi gewoonlik vriende om, en terwyl daar lekker gekuier word, kry almal ‘n takie om te verrig. Die een rol, ander pak, ander sny ens. Groot pret

Mooi gesny, voorbereiding word nou gedoen met die soya sous, gemmer, wasabi ens

Hier is als nou in plek, en na ‘n gebedjie, val ons weg aan hierdie skinkborder vol maki sushi

Dit is seker nou nie so fancy soos in die restaurante nie, maar ons vorder en elke keer lyk dit beter. Die pret is in die maak daarvan met vriende wat sushi ook geniet. Ons doen dit amper maandeliks. Vriende wat nog nooit sushi ge-eet het nie, is nou gretige sushi eters.

SKUIMPIES (WENNER)
1 eierwit van ‘n ekstra-groot-eieir
250 ml strooisuiker
30 ml kookwater
15 ml asyn
2 ml bakpoeier
druppel voedselkleursel

Gooi die eierwit, strooisuiker, kookwater en asyn in ‘n mengbak en klits dit vinnig totdat die meringue stywe puntjies vorm as jy die klitser optel (±13min lank).
Vou die bakpoeier liggies in die meringue in.
Skep dit in versierbuis en spuit uit op gesmeerde pan of skep teelepels vol op pan.
Versier met 100 & 1000 as jy wil.

Voorverhit die oond tot 100°C.

Bak skuimpies 1 en half uur. Bak ongeveer net 1 uur as dit klein skuimpies is soos P&P sin en as dit bv nessie groote is kan jy dit 1 en halfuur bak. Wanneer skuimpies klein is en dit bak te lank word hulle bruinerig. As dit groot skuimpies is, bak 2 ure, hou maar dop.

Skakel die oond af, los in die oond en HAAL UIT WANNEER OOND KOUD IS.

Moenie oond oopmaak voor oond heeltemal koud is nie dit veroorsaak kraakies op skiumpies.
Bewaar in ‘n lugdigte houer. Die resep lewer een groot pan vol klein skuimpies. Die resep kan met groot sukses verdubbel word.

Gooi 1 teelepel koffie by kookwater vir cuppachino geur skuimpies.

SWEETIE PIE CUPCAKES
(Engelse resep hieronder)
180 g botter
230 g bruinsuiker
2 groot eiers
160 g koekmeel
7 ml bakpoeier
40 g kakao
120 ml melk
300 g donkersjokolade

MERIGUE-BOLAAG :
2 groot eierwitte
180 g strooisuiker
40 ml heuning
45 ml water
‘n knippie kremetart

Voorverhit jou oond 180ºC.
Klits botter en suiker tot lig en donsig.
Voeg eiers een vir een by en klits goed na elke eier.
Sif die meel, bakpoeier en kakao saam.
Vou dit om die beurt met die melk in die mengsel.
Skep in kollewyntjiepapiertjies en bak vir 15 – 20 min. Laat afkoel.

DIE BOLAAG:
Klits al die bestandele saam in ‘n groot mengbak oor ‘n kastrol met bietjie kookwater – water moet nie aan bak raak nie. Klits tot die sagtepunt stadium. Spuit op afgekoelde koekie en plaas in yskas vir so 30 min om nog verder af te koel. Smelt sjokolade en skep bo-op!!!

English Recipe:

SWEETIE PIE CUPCAKES
Baking time : 20 minutes
Oven : 180ºC
180 g butter
239 g brown sugar
2 large eggs
160 g flour , sifted
7 ml baking powder
40 g cocoa
120 ml milk
300 g dark chocolate

MERINGUE
2 large egg white
180 g castor sugar
40 ml honey
45 ml water
pinch of creme of tartar

Preheat the oven . Beat the butter and sugar until light and fluffy . Add the eggs one by one , beating well after each addition . Sift the flour , baking powder and cocoa together . Then fold it into the butter mixture followed by the milk . Spoon the mixture into cupcakes cups that have been prepared with a non stick spray and bake for about 15-20 minutes or until cooked through. Set aside to cool .
Make the topping
Beat all the ingredients together in a mixing bowl over a pot with a little boiling water in it – it’s important that the mixing bowl does not touch the water . NOTE The steam will heat the bowl , so keep a cloth at hand to prevent yourself burning . Now place the pot on the stove over low heat , beating the mixture continuously with an electric beater ( maak maar seker die draad is lank genoeg van die beater ) until soft peaks form ( it will take about 10 minutes ) , then remove the mixture from the heat .
Spoon the mixture into a piping bag with a 1 cm round nozzle . Pipe a small spiral on each cupcake and refrigerate for about 30 minutes .
Melt the chocolate . Place the cupcakes on a wire rack and carefully cover the meringues with chocoles ; leave to harden

GOOD SUSHI MESHI (RICE)

• It has to be (very) sticky.
• It mustn’t be too soft. (We don’t want rice mush. The single rice corns should be identifiable.)
• It mustn’t be too hard. (We don’t want to hear or feel a “Crunch” while eating.)
1. Use short grained sushi rice. (Long grained rice won’t work, because it doesn’t get sticky enough.)
2. Wash the rice until the washing water starts to get clean. Massage the rice in some water and then rinse, repeat this until the water is no longer milky.
3. To cook the rice use about 15% more water than sushi rice measured in volume. (So if you use 1 cup of sushi rice, use a little bit more than 1 cup of water. 4 cups of rice approx 1.1 litre of water)
4. Bring the water to boiling point without the rice. (You can add some salt if you want – this depends on your personal taste. Not necessary if you are using soya sauce which is salty enough)
5. Put the rice into the boiling water and continue to boil on the highest heat level of your stove. To prevent the rice from sticking to the bottom of your pot, stir the rice several times while it boils. (This is important! Otherwise a thick layer of rice will stick at the bottom of your pot.)
6. After 2-3 minutes turn the heat down to lowest level. (The water should barely continue to boil.)
7. Put a lid on the pot and let the rice simmer for about 10-15 Minutes. (There mustn’t be too much heat! Otherwise the lowest layer of rice will stick to the bottom of the pot.)
8. As soon as the rice has absorbed the water, put it away from the stove and let it rest within the pot covered by the lid. Wait for about 15-20 minutes. (This also seems important! If you don’t wait, your rice probably will be too crunchy.) After that you can add sushi vinegar (see below) and fold into the rice. Be careful not to break the rice grains.
Usually you put the rice in a special wood bowl and mix it there with the vinegar, to avoid chemical reactions with your metal pot. Another solution is to put the rice into a ceramic baking pan or Tupperware dish.
9. Spread the rice in the baking pan (or somewhere else) so that the rice cools down quickly. I use a fan to fan it. Cover the tray with a wet dish cloth to prevent the rice




ONION MARMALADE


JUST LOVE IT EASY & QUICK….
60 ml butter
2 onions, cut into thin wedges
salt and fresh ground black pepper
60 ml brown sugar
60 ml balsamic vinegar
Heat the butter and fry the onion until soft.
Season with salt and pepper.
Add sugar and balsamic vinegar, stirring until the sugar has dissolved.
Simmer for 20 minutes over very low heat.
Can keep in fridge for couple of weeks.

INSIDE-OUT CARROT CUPCAKES
Yield: 12 cupcakes
Preheat oven to 400°F.
Spray a 12-cup muffin tin with nonstick cooking spray.
Prepare the filling:
Microwave 8-ounce package cream cheese on low for 40 sec. to melt.
Mix in a few drops of flavour (½ vanilla and ½ orange) and ¼ cup granulated sugar. Beat until smooth.

Muffin dough:
Mix the dry ingredients in a bowl:
2 ¼ cups cake flour
½ cup granulated sugar
¼ cup light brown sugar, firmly packed
1 ½ teaspoons baking powder
¼ teaspoon baking soda
1 ½ teaspoons ground cinnamon
¾ teaspoon ground ginger
¾ teaspoon salt
In another bowl, whisk until well combined:
2 large eggs
¾ cup water
⅓ cup vegetable oil

Mix the wet ingredients with the dry. Add 1 cup grated carrots.
Stir. Note the word “stir;” beating isn’t necessary, and will toughen your muffins.
Pour 2 tablespoons of dough in each muffin cup. Put a tablespoon of filling on top.
Fill the rest space with dough about 3/8 inches of the top. You can bake the rest of the dough if you wish.
Sprinkle with sugar.
Bake for 20 min.
Remove from oven and transfer to their cups. Let cool for half an hour.

SOET SUUR VARKBLOKKIES
Hierdie resep proe soos na aan die ware jakob soos kan kom.
Genoeg vir 2 porsies
Sous:
1 klein ui, grof gekap
½ rooi soetrissie, in blokkies gesny
½ blik (200 g) pynappelstukke, gedreineer (check hoeveelhede)
1 bottel of pakkie gekoopte sweet and sour sous
Beslag:
250 ml koekmeel
2 ml mosterdpoeier
3 ml sout
250 ml sodawater

Varkvleis
350 g varkvleis (filette) in blokkies gesny
Sowat 80 ml mielieblom
Sout en varsgemaalde swartpeper
250 g noedels, gaar
koljanderblare

Soet-suursous:
Verhit die olie en braai die ui en soetrissie vir ‘n minuut, geur met sout en varsgemaalde swartpeper.
Roer die pynappelstukke en die sous by en bring tot kookpunt. Verlaag die hitte en prut vir ‘n paar minute, geur na smaak en hou warm.
Beslag:
Meng die koekmeel, mosterdpoeier en sout saam in ‘n mengbak. Giet die sodatwater by en klits totdat ‘n gladde beslag vorm.
Verhit die kookolie in ‘n diep kastrol. Geur die varkvleisblokkies met sout en peper en rol dit in mielieblom. Skuk die oortollige mielieblom af en doop die blokkies in die beslag.
Skep die blokkies versigtig in die verhitte olie (slegs ‘n paar op ‘n slag) en braai vir ‘n minuut of twee of tot goudbruin.
Dreineer op ‘n stukkie kombuispapier en herhaal met die res van die beslag. Sodra al die blokkies gediepvetbraai is, dreineer en skep by sous.
Kook intussen die noedels tot gaar en sit voor saam met die soetsuurvark.

Chinese rys met eier – Petre se foto:
Basmati rys gaar gekook
½ ui fy gekap
gemengde groente (pakkie of n blikkie)
gekapte sprietuie
2 eiers
1 eetlepel soja sous
1 eetlepel rys asyn
Sout en peper na smaak
Maak roereiers en laat afkoel.
Braai uie in ‘n bietjie grondboontjie/gewone kookolie.
Voeg rys by. Meng goed met uie.
Voeg blikkie gemengde groente, gekapte spriet uie, 1 eetlepel soja sous, sout en peper na smaak asook 1 eetlepel rys asyn by.
Meng goed oor lae hitte. Voeg roer eier by en meng.

200 ml botter
250 ml stroop
5 k koekmeel
20 ml koeksoda
20 ml kremetart
5 ml sout
50 ml gemmerpoeier
625 ml bruinsuiker
3 eiers


Smelt botter en stroop saam op lae hitte in ‘n groterige kastrol (laat afloel dit dit so louerig is).
Sif meel, koeksoda, kremetart, sout en gemmer saam.
Voeg eiers by stroop en botter mengsel en roer goed.
Voeg die bruinsuiker by mengsel en roer tot die al die suiker nat is.
Voeg nou die gesifte bestanddele by en meng dit deeglik saam.
Laat staan vir plus minus 2 ure.
Rol klein balletjies uit en druk dit plat met ‘n vurk.
Bak op plaat by 180 ºC vir 10 tot 12 minute
