300 g bruismeel
150 g strooisuiker
knippie sout
6 eetlepels olie
1 groot eier
250 ml karringmelk
1 teelepel vanilla geursel
1 blik halwe appelkose
appelkooskonfyt
2 teelepels botter, gesmelt
kaneelsuiker
Voorverhit die oond tot 180°C en spuit ‘n kolwyntjiepan met kleefwerende sproei of gebruik papierkoppies.
Sif die meel in ‘n mengbak en voeg dan die suiker en sout by.
Klits die olie, eier, karringmelk en vanilla geursel saam.
Voeg die vloeistofmengsel by die droë bestanddele en roer tot die beslag net-net gemeng is.
Skep ‘n lepelvol van die mengsel in die kolwyntjiepannetjie en maak ‘n holte in die middel.
Vul die holte met ‘n teelepel appelkooskonfyt en ‘n halwe appelkoos en bedek met nog beslag.
Bak die kolwyntjies in die voorverhitte oond vir 12 – 15 minute.
Laat effens afkoel, verf met gesmelte botter en sprinkel kaneelsuiker oor. Bedien warm.

1 tin (440g) pineapple pieces
1 packet pineapple jelly
1 tin Evaporated milk, chilled
65 ml caster sugar
Tennis biscuits (about 18 – 20)
125 ml toasted coconut

Heat the syrup of the pineapple pieces. Stir in the jelly and then add the pineapple pieces.
Beat the evaporated milk with the caster sugar until thick and frothy and then add the jelly mixture.
Arrange a layer of tennis biscuits in the bottom of a 20cm dish.
Cover with half the pineapple mixture and top with another layer of biscuits followed by the remaining pineapple mixture.
Sprinkle with the coconut and place in the fridge to set.
I mashed the pineapple pieces lightly and replaced the toasted coconut with crushed biscuit crumbs.

OLD-FASHIONED CURRIED MINCE


OLD-FASHIONED CURRIED MINCE
500 g minced beef
30 ml Clover Ghee
1 onion, chopped
1 red chilli, seeded and chopped (optional)
15 ml mild curry powder
5 ml turmeric
1 ml ground coriander
2 bay leaves
2 star anis seeds
5 ml whole cumin
salt and pepper to taste
2 carrots, grated
2 potatoes, peeled and cubed
30 ml apricot jam
45 ml vinegar
250 ml frozen peas

To serve
traditional vetkoek
250 ml (100 g) Clover Mature Cheddar, grated

Heat the ghee in a heavy-based saucepan.
Add the onion and chilli and sauté until onion is translucent.
Add the spices and fry until fragrant.
Add the minced beef and fry until minced beef turns colour.
Add the remaining ingredients except peas.
Reduce heat, cover and allow to simmer for 30 minutes.
Add the peas and mix through.
Simmer for another 5 minutes.
Meanwhile, cook the vetkoek according to instructions.
Remove the bay leaves and anis seed from mince.
Cut the vetkoek in half, spread with butter and spoon mince on top.
Sprinkle cheese over mince and serve.

Bietjie melk

Voeg vleis, tamaties, uie, spek in pot en kook tot amper sag.
Voeg gemengde groente by.
Kook tot vleis van bene afval.
Pluis die vleis en voeg weer by die gemengde groente.Verhit weer en voeg maizena by prut tot dit verdik.
Laat afkoel. Spuit bak of smeer bak. Verdeel die deeg, rol uit, voer bak uit.
Druk gaatjies met vurk. Skep vleis in die tertdop. Rol oorblywende deeg uit en plaas bo op vleis.
Druk mooi toe langs die kante en druk weer gaatjies op deeg.
Smeer deeg met melk.
Maak blom bo op en smeer ook met melk. Bak in warm oond by 190 ºC tot verbruin

Niekie Bushby – Jy kan dit vries – breek ‘n eier per 1 vakkie van ‘n yskasbakkie. Vries dan so.

Nicolette Walsh – Ek vries myne. Ek sit 2 eiers per sakkie le plat en vries. as ek net eier nodig het sny ek een van die in helfde en onvries vir so 15 minute. Hou so 6 maande sonder probleme.

Petré Van Jaarsveld – Neem 1 pond ongebluste kalk, meng met 6 bottels water en sit die eiers daarin. Neem 4 pond gebluste kalk, 2 teelepels kremetart, 2 teelepels sout en 8 bottels water, giet oor 9 dosyn eiers, maak goed toe, en bere in ‘n koel plek.

Vries die eiers sommer dop en al. Ontdooi dan die eiers in ‘n houer buite die yskas. Was die eiers eers met lopende water voordat jy vries. Al kraak die eiers wanneer hulle vries, dit sal steeds goed wees as dit ontdooi.

Keep it Fresh: How to Store Eggs

Always Keep Eggs in their Carton
We know a lot of people like to throw away the egg carton when they get home and store their eggs in the little egg caddy that comes with your fridge or in a separate bowl. This may look pretty, but we recommend always storing your eggs in their original carton. Why? Firstly, the carton protects the eggs and prevents them from absorbing strong odours and flavours of other foods in your fridge through the thousands of tiny pores in the egg shell. Secondly, the Best Before Date is always visible to you so you can guarantee freshness. Lastly, eggs should always be stored with the large end up, the same way they are packaged in the carton. This helps the yolk remain centered.

Other tips for storing raw and cooked eggs:

Eggs should not be stored on the refrigerator door, but in the main body of the refrigerator to ensure that they keep a consistent and cool temperature.
Leftover raw egg whites and yolks should be put in airtight containers and stored in the refrigerator immediately. To prevent yolks from drying out, cover them with a little cold water. Drain the water before using.
When storing hard-cooked eggs, you may notice a “gassy” odour in your refrigerator. The odour is caused by hydrogen sulphide, which forms when eggs are cooked. It’s harmless and usually dissipates in a few hours.

How to Freeze Eggs

Did you know that you can freeze eggs? Certain kinds of raw and prepared eggs (not in their shells) can easily be frozen following these simple instructions:

Whole eggs: Beat eggs just until blended, pour into freezer containers and seal tightly. Label the container with the number of eggs and the date, and freeze.
Whites: Break and separate the eggs one at a time, making sure that no yolk is mixed in with the whites. Pour them into freezer containers, seal tightly, label with the number of egg whites and the date, and freeze. For faster thawing and easier measuring, first freeze each white in an ice cube tray and then transfer to a freezer container.
Yolks: Egg yolks require special treatment. The gelation property of yolk causes it to thicken or gel when frozen. If frozen as-is, egg yolks eventually become so gelatinous they are almost impossible to use in a recipe. To help slow this process, beat in either ⅛ tsp (0.5 mL) salt or 1½ tsp (7mL) sugar or corn syrup per ¼ cup (50 mL) egg yolks (4 yolks). Label the container with the number of yolks, the date, and whether you’ve added salt (for main dishes) or sweetener (for baking or desserts)
Hard-cooked: Hard-cooked yolks can be frozen to use later for toppings or garnishes. Carefully place the yolks in a single layer in a saucepan and add enough water to come at least 1 inch above the yolks. Cover and quickly bring just to boil. Remove from heat and let stand, covered, in the hot water for about 15 minutes. Remove with a slotted spoon, drain well and package for freezing. Hard-cooked whole eggs and whites become tough and watery when frozen, so don’t freeze them.
Cooking with Frozen Eggs
To use frozen eggs for cooking or baking simply thaw them overnight in the refrigerator or under running cold water. Use the eggs as soon as they’re thawed and only in dishes that will be thoroughly cooked. The following is a list of the recommended substitutions for raw egg.

Substitute 2 tbsp (30 mL) thawed egg white for 1 large fresh white.
Substitute 1 tbsp (15 mL) thawed egg yolk for 1 large fresh yolk.
Substitute 3 tbsp (45 mL) thawed whole egg for 1 large fresh egg
Cooking Food Safely

When preparing perishable foods, including eggs, follow these four simple steps to make sure food is prepared safely:

Clean – Wash hands and surfaces often. Proper hand washing may eliminate nearly half of all cases of food-borne illness.
Chill – Refrigerate/freeze food promptly. Cold temperatures can prevent the growth of most types of harmful bacteria.
Separate – Don’t cross-contaminate. Keep raw meat/poultry/seafood and their juices separate from one another and other food during storage and preparation.
Cook – Cook meat, poultry and eggs to proper temperatures.

Here are a few more simple guidelines to follow when preparing and serving eggs:

Serve eggs and food prepared using eggs immediately after cooking, or refrigerate and use within three to four days.
For entertaining, serve all egg dishes within two hours. Cold egg dishes and beverages should be kept on ice.
If a recipe calls for eggs at room temperature, immerse them in warm water for a few minutes.
To prevent toughness, always use moderate heat and controlled cooking times for eggs.
Don’t eat cracked eggs or eggs that have been out of the refrigerator for more than two hours.
Use a glass or metal bowl instead of a plastic bowl when making meringue. The greasy film on a plastic bowl can prevent foaming.
The egg yolk and white separate best when they are cold.
Egg whites will beat to a better volume if they’re allowed to stand at room temperature for 20 to 30 minutes before beating.
Unless otherwise specified, most recipes are written based on the use of large eggs. One large egg = ¼ cup or 4 tablespoons or 50 mL.

Sif koekmeel, koeksoda en sout saam.
Meng res van die bestanddele goed saam. Voeg meelmengsel by en meng deur.
Bedek die deeg en laat paar uur rus in die yskas.
Maak balletjies en plaas op voorbereide bakplaat.
Bak 180ºC vir 13 min (resep se 12 min by 200ºC) maar ek het op 180ºC gewerk anders brand hulle onder.
Lekker!! Glad nie brand gemmer nie NET LEKKER! !!

2 tbsp (30 ml) sunflower or canola oil
1 onion, sliced
100 g broccoli, cut in florets
1 tbsp (15 ml) dried mixed herbs
lemon juice and black pepper to taste
6 eggs, beaten
½ tsp (2,5 ml) salt
⅓ cup (80 ml) grated cheddar or mozzarella cheese

1. Heat half the oil in a frying pan over a medium heat and fry onion until soft.
2. Add broccoli and herbs and fry for a few more minutes until broccoli is just cooked, but still crunchy.
3. Season broccoli with a few drops of lemon juice and pepper.
4. Beat eggs and salt together. Add remaining oil to the veggies in the pan and stir through.
5. Pour eggs evenly over veggies, but don’t stir. Reduce heat slightly.
6. Allow egg to set and lift cooked egg around the edges with an egg lifter, to allow raw egg to run in underneath. Continue this process until most of the egg has set, but don’t stir the eggs. Sprinkle with cheese and allow to melt slightly.
7. Cover with a lid for a few minutes or until the egg is just set on top.
8. Serve with salad, slices of tomato or a slice of wholewheat toast. A dollop of chutney or sweet chilli sauce will also be delicious.

TIPS – Any veggies of your choice can be used for this omelette. If the veggies have lots of liquid, like mushrooms or tomatoes, first sauté them for a few minutes, like the broccoli in step 2, otherwise it could draw water once the egg is added.
2. Rocket leaves or spinach is also delicious with this omelette.
3. Substitute cheddar or mozzarella cheese with a slice of feta, if preferred.

Sjoe daars nie ‘n geskrewe resep nie. Het net blikkie tamaties gesmoor saam met ui en knoffel en laastens ‘n handvol basil gebraai.
Die babymarrow het ons julienne strokies gesny en dan kom dit rou by die tamatie sous om net deurwarm te word. Hoenderborsie net gekap met S&P en in die pan gebraai – laastens lekker vars parmesaan kaas bo oor.

I just put the meat,onion ,garlic and biltong spice in a pot.
Add water bit by bit if necescary.
When meat is soft and brown add potatoes and cauliflour.Add chillies.
I dont add more water
I dont add salt.
But you certainly can.
Let it cook until potatoes are soft.
Remove the lid if its watery.
The cauliflour will be soft same time.
My family like the cauliflour with a bit of a crunch still.

200 g donker sjokolade
1 blik kondensmelk
1½ koppies gebreekte koekies
1 koppie okkerneute
½ koppie klapper
¼ koppie kakao poeier

Smelt sjokolade in mikrogolf en voeg die kondensmelk by. Roer goed.
Voeg die koekies, neute, klapper en kakao by en meng goed.
Skep in ‘n bak wat uitgevoer is met bakpapier. Sit in die yskas.
Smelt nog 200 g donker sjokolade met 1 teelepel olie in mikrogolf en giet bo-op. Laat hard word en sny blokkies. Op die foto is my weergawe daarvan
